Phyllo Rolls with Wild Greens image

Provided by Martha Stewart

Categories     Appetizers

Yield Serves 8

Number Of Ingredients 12

3/4 cup extra-virgin olive oil
1 fennel bulb, trimmed and finely chopped
1 medium bunch scallions, white and most of the greens, thinly sliced (about 1 cup)
1 tablespoon coarsely chopped garlic
1 1/2 cups thinly sliced wild greens, (such as baby spinach, tender Swiss chard leaves, mustard greens, miner's lettuce, dandelion greens, orache, outer leaves of escarole or romaine lettuce, and/or beet greens)
1 teaspoon toasted fennel seeds, freshly ground or crushed in a mortar
Freshly ground pepper
1/4 cup chopped fresh mint
1/2 cup crumbled feta cheese
Vegetable-oil cooking spray
1/2 cup (1 stick) unsalted butter
8 sheets phyllo

Steps:

  • In a large skillet, heat 1/4 cup oil over medium heat. Add fennel bulb; cook, stirring occasionally, until just tender, about 3 minutes. Add scallions and chopped garlic, and cook for 2 minutes. Add greens, and cook, stirring, until wilted, about 2 to 3 minutes. Remove from heat, and season with fennel seeds and pepper to taste. Stir in mint. Transfer to a bowl until cooled completely. Crumble feta cheese over cooled greens; stir to combine. Taste and adjust seasoning. This should yield 2 cups.
  • Preheat oven to 375 degrees. Line a baking sheet with a rack. Spray rack with cooking spray. In a small saucepan, melt together remaining 1/2 cup oil and butter over medium heat. Lay one sheet of phyllo on a clean work surface with the long side parallel to edge of counter. Brush liberally with butter-oil mixture. Top with a second sheet of phyllo. Brush second sheet with butter-oil mixture. Cut in half crosswise. Place about 1/4 cup filling at one end of each half. Fold in sides, and roll up to form an egg-roll shape. Brush with butter-oil mixture, and prick in several spots with a toothpick or the tip of a paring knife. Transfer to prepared baking sheet. Repeat with remaining phyllo and filling.
  • Bake until golden brown and filling is heated through, 20 to 25 minutes. Cool briefly before cutting in half on the diagonal. Serve immediately.

PHYLLO PIE WITH GREENS

Phyllo Pie with Greens image

Noted chef and author Diane Kochilas prepares a delicious Greek Easter feast that includes this phyllo pie. Trahana is a traditional Greek buttermilk pasta; rice can be substituted for it in this recipe.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Number Of Ingredients 15

4 cups all-purpose flour, plus more for dusting
1/2 teaspoon coarse salt, plus more to taste
1 1/2 cups warm water
1/4 cup plus 3 tablespoons extra-virgin olive oil, plus more for brushing
2 tablespoons red-wine vinegar, or freshly squeezed lemon juice
2 scallions, thinly sliced
2 large onions, finely chopped
2 pounds mixed greens, such as sorrel, chard, or dandelion, washed and trimmed
1/2 cup chopped fresh dill
1/2 cup chopped fresh parsley
1/3 cup chopped fresh mint leaves
1 small bunch chervil, chopped
Freshly ground pepper
3 tablespoons trahana
Cornmeal, for dusting

Steps:

  • Make the phyllo: In a large bowl, combine flour and salt. Make a well in the center, and add warm water, 1/4 cup olive oil, and vinegar. Using a fork, work flour into the liquid until incorporated. Knead dough in bowl until it comes together, adding more flour if necessary, about 10 minutes. Cover, and let rest at room temperature for 30 minutes.
  • In a large skillet, heat 2 tablespoons olive oil over medium heat. Add scallions and onions, and saute until wilted, about 10 minutes. Add mixed greens, and saute until wilted, about 2 minutes. Transfer to a large bowl, and add dill, parsley, mint, and chervil. Season with salt and pepper. Sprinkle trahana over filling, and combine.
  • Preheat oven to 350 degrees. Lightly brush a 12 1/2-by-2-inch round cake pan with olive oil. Divide dough into six equal pieces. On a lightly floured surface, roll one piece of dough into a 6-inch round with a rolling pin. Roll dough out and onto itself around a 24-inch dowel, rotating dough frequently. (You should be able to see your hands through the dough.) Transfer dough to a work surface dusted with cornmeal. Repeat rolling-and-rotating process with remaining dough, stacking each on top of the other, dusted with cornmeal.
  • Fit one sheet of phyllo dough into prepared pan. Brush with olive oil, and repeat with two more sheets of phyllo. Place filling on top of phyllo, spreading evenly. Drizzle with remaining 1 tablespoon olive oil. Top with remaining 3 sheets phyllo, brushing between layers with olive oil. Trim top and bottom crusts to create a 2-inch border around the perimeter of the loaf. Using a sharp knife, score pie through top and bottom crust in a diamond pattern.
  • Transfer to oven, and bake until filling is set and crust is golden brown, about 1 hour. Let cool on a wire rack for at least 1 hour before serving.

LEG OF LAMB WITH GREENS

Leg of Lamb with Greens image

This recipe is from chef James Botsacos of Molyvos in New York City. Serve this satisfying and elegant dish with Okra, Onion, and Tomato Stew and Phyllo Rolls with Wild Greens for a classic Greek meal.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Lamb Recipes

Number Of Ingredients 15

1/3 cup extra-virgin olive oil plus 1 tablespoon, for brushing
1 fennel bulb, trimmed and finely chopped
1 medium bunch scallions, white and most of the greens, thinly sliced (about 1 cup)
1 tablespoon coarsely chopped garlic, plus 1 garlic clove, quartered
1 1/2 cups thinly sliced wild greens (such as baby spinach, tender Swiss chard leaves, mustard greens, miner's lettuce, dandelion greens, orache, outer leaves of escarole or romaine lettuce, and/or beet greens)
1 teaspoon toasted fennel seeds, freshly ground or crushed in a mortar
Freshly ground black pepper
1/4 cup chopped fresh mint
1/2 cup crumbled feta cheese
1 half leg of lamb (3 1/2 to 4 pounds), semi-boned and butterflied (with shank bone)
Coarse salt
1 teaspoon dried Greek oregano, crumbled
1/2 cup dry white wine, plus more if needed
Okra, Onion, and Tomato Stew, optional
Phyllo Rolls with Wild Greens, optional

Steps:

  • In a large skillet, heat 1/3 cup olive oil over medium heat. Add fennel bulb, and cook, stirring occasionally, until just tender, about 3 minutes. Add scallions and chopped garlic, and cook for 2 minutes. Add greens, and cook, stirring, until wilted, 2 to 3 minutes. Remove from heat, and season with fennel seeds and pepper to taste. Stir in mint. Transfer to a bowl until cooled completely.
  • Crumble feta cheese over cooled greens; stir to combine. Taste and adjust seasoning.
  • Place lamb on a clean work surface. Season with salt, pepper, and 1/2 teaspoon oregano. Spread greens over lamb in an even layer. Roll lamb, starting at narrow end, to enclose filling. Using kitchen twine, tie lamb lengthwise and crosswise at 1-inch intervals. Rub with remaining tablespoon oil; season with salt, pepper, and remaining 1/2 teaspoon oregano. Cover, and refrigerate for at least 3 hours and up to overnight.
  • Preheat oven to 450 degrees. Make four small slits in lamb, and insert the garlic quarters. Place the lamb in a roasting pan that just holds it comfortably. Roast for 25 minutes.
  • Add wine, and reduce oven temperature to 400 degrees. Continue roasting, basting frequently with pan juices, 45 to 65 minutes (or until an instant-read thermometer inserted in the thickest part of the lamb registers 125 degrees for medium-rare). If the roasting pan becomes dry, add a little water or chicken stock.
  • Remove lamb from oven, and cover with aluminum foil; let rest for 15 minutes. Remove twine from lamb before slicing. Strain pan drippings, skimming fat from the surface; drizzle pan juices over lamb. Serve with okra stew and phyllo rolls, if desired.

12 PHYLLO DOUGH RECIPES THAT ARE EASY AND IMPRESSIVE

From purewow.com
Author Katherine Gillen
Published Oct 11, 2019
  • Spicy Ricotta-stuffed Phyllo Rolls. We’re starting a petition to get these cheese-stuffed phyllo rolls at every cocktail party from now on. They’re just creamy and spicy enough, and best served with a jalapeño jelly dipping sauce.
  • Falafel Pie With Cucumber-tomato Salad. We didn’t think you could improve on falafel, but here we are. This pie is filling, healthy and surprisingly simple to make.
  • Baklava Pie. While it’s totally delicious, baklava is admittedly tedious to make at home. This version eliminates the layers and bakes up as an equally delicious (and effortless) pie instead.
  • Greek Spinach And Feta Pie (spanakopita) The traditional cheese and spinach pie, spanakopita, has a lot going for it, including buttery, cheesy goodness and a crisp phyllo crust.
  • Buffalo Chicken Phyllo Rolls. Buffalo chicken is always a good idea, but it’s even better when wrapped in a flaky, portable package.
  • Phyllo Dough Meat And Feta Rolls. These are kind of like a Mediterranean egg roll but filled with meat and cheese. We’ll have three, please.
  • Spinach Feta Quiche With Flaky Phyllo Crust. The hardest part of making a quiche is working with the crust. The solution? Swap it for store-bought phyllo dough.
  • Easy Pistachio Chocolate Baklava. If you do want to tackle this Greek pastry at home, why not start with this approachable version? It has three big layers instead of many thin ones, which saves a ton of time (and tears).
  • 5-ingredient Caprese Phyllo Cups. Tomatoes, mozzarella and basil are a foolproof combination. FYI, you can make your own phyllo cups (fancy!) but you can also find pre-made ones at the grocery store.
  • Samosas. Sure, traditional samosas aren’t usually made with phyllo. But give us a shatteringly crisp crust and we’re not complaining.
