QUICK PICKLED SWEET CUCUMBERS

1 hothouse cucumber, finely sliced
1/2 Fresno chile, halved lengthwise, seeded if desired and finely sliced
1 cup white vinegar
3/4 cup sugar
1 teaspoon kosher salt

Steps:

  • Add the cucumber slices and chile slices to a medium bowl and toss to combine.
  • In a medium saucepan, add the vinegar, sugar, 1/2 water and salt. Heat gently, stirring, just until the sugar and salt dissolve. Pour over the cucumbers and chiles in the bowl. Set aside to marinate at least 15 minutes before serving.

2 telegraph cucumbers (about 600 gms)
3 teaspoons cooking salt
1/2 tablespoon caster sugar
1 tablespoon white wine vinegar
1 teaspoon chili oil (to taste)
sesame oil
toasted sesame seeds

Steps:

  • Remove the wax from the cucumber with a soft brush.
  • Halve the cucumbers lengthwise; remove and discard seeds.
  • Cut the flesh into 2 cm chunks, sprinkle with salt and leave for 45 minutes.
  • Transfer to drain in a colander for 10 minutes.
  • Combine the sugar, vinegar and chilli oil and cucumber.
  • Cover and refrigerate.
  • Serve within 2 days as the cucumbers will lose their colour and crispness.
  • When ready to serve, sprinkle with sesame oil and sesame seeds to taste.

  • Place all ingredients for the brine into a medium-sized non-reactive saucepan such as stainless steel, enameled, or glass—not aluminum or copper. Bring to a boil over high heat, stirring constantly until the sugar has completely dissolved. Once the brine reaches a full rolling boil, remove the pan from the heat, then set it aside to reach room temperature.
  • While you are waiting for the brine to cool, prepare the vegetables. First, trim the ends from the cucumbers and discard. Slice the unpeeled cucumbers about ¼" (or slightly thinner) then add them to a large colander. Next, remove the ends from the onion, peel and cut it into quarters. Shave each quarter into paper-thin slices and add them to the colander with the cucumber slices.
  • Sprinkle 2 Tbsp of kosher salt evenly over the cucumbers and onions then toss until the salt has completely coated the vegetables. Place the colander in the sink to drain any water the salt may draw out. Allow the salt to remain on the vegetables for 30–45 minutes.
  • Rinse the cucumbers and onions under cold water to remove all excess salt then drain completely. Place the cucumber and onion mixture into a large mixing bowl, pour the room temperature brine over it and remove the bay leaves—if you’d like, you can strain all of the spices from the brine before adding it to the cucumbers.

  • Using a mandoline or a very sharp knife (be very careful when using the sharp knife!) slice your cucumbers and a shallot or red onion. Push it to the bottom of a clean pickling jar and set aside.
  • In a bowl, mix together rice or apple cider vinegar, white sugar, salt, chilli flakes, and fresh ginger. Stir until all sugar and salt is fully dissolved.
  • Pour the brine over the cucumbers and shallot in the jar. Make sure they are fully covered with the brine.
  • Let it sit for at least 30 minutes before eating. Serve as a side dish or on your burgers, tacos, nachos, pizzas etc.
