HEALTHY CHRISTMAS COOKIES, VEGAN AND GLUTEN FREE
These are a great alternative to fat filled traditional cookies. Only 110 calories in 2 cookies! From Jay Robb, a health nut who makes hormone-free whey protein and other additive-free protein products. Can be made vegan.

Steps:
- In a large bowl, cream butter, egg, and sweetener together until very smooth. Add egg and mix until well combined. Sift the baking soda, cinnamon, salt and Jay Robb Whey Protein into the almond flour. Then slowly add almond flour mixture into butter mixture. Mix until well combined. Form into a tight ball and cool in fridge until chilled.
- Preheat oven to 325 degrees F. Place dough onto non-stick surface (I used parchment paper), then top with another piece of non-stick surface (again, I used parchment paper). Roll dough out to approximately 1/4 inch thickness. Cut dough with Christmas cookie cutters, and place onto baking sheet.
- Bake for 7 minutes, or until lightly browned. Then turn off oven and leave cookies in for an additional 10 minutes. This will create a crispier cookie. Set the cookies out to cool and top with your favorite cream cheese frosting! Makes 2 dozen cutouts.

- Preheat the oven 350 degrees F. Line a baking sheet with a silicone mat or parchment paper. In a blender add the spinach or baby kale, maple syrup, vanilla extract, almond extract, apple sauce and melted coconut oil. Blend until smooth with no visible green leaves. In a mixing bowl add the gluten-free flour, tapioca flour, corn starch, baking powder and salt and mix to combine. Add the blended green mixture to the dry ingredients and mix until it forms a dough. If the dough is too sticky, set it in the refrigerator for 15 minutes before rolling it out.
- Roll out the dough in between two pieces of wax paper until the dough is about ¼ inch thick. Cut out into desired cookie cutter shapes. Place on the prepared baking sheet and bake for 8 minutes. Let cool for 3 minutes before transferring to a cooling rack.
