PIERETH PIE II
Everyone enjoys this pie with its creamy chocolate and vanilla layers. The recipe came from a relative in Minot ND. If preferred, use walnuts instead of almonds. Please note: this recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs

Steps:
- In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.
- In a large bowl, cream together the butter and sugar until light and fluffy. Stir in nuts and melted chocolate. Add the eggs one at a time, beating well with each addition. Pour mixture into baked pastry shell and place in refrigerator.
- Prepare pudding according to package directions. Pour over chocolate layer and return to refrigerator. Chill at least 2 hours. Before serving, spread whipped topping over pudding layer and sprinkle with grated chocolate.

SHEPHERD'S PIE II
I prefer stew meat instead of ground beef, but either could be used. Frozen mixed vegetables can reduce preparation time. I usually make extra mashed potatoes for a meal the day before and save them for this.

Steps:
- Brown meat over medium high heat. Add garlic and saute 30 seconds (if vegetables to be used cook quickly, add onion with garlic and saute until tender). Add broth and spices to meat and simmer covered for 30 min.
- Chop veggies.
- Add onions and veggies (peas, carrots, green beans, celery, corn, your choice), simmer until tender.
- You may have to add vegetables at different times so that they are all done at the same time depending on the vegetables chosen.
- Mix 1/2 cup water and gravy mix in bowl.
- Add to mixture and simmer 5 min.
- Mix chives and taters.
- Place meat mixture in bottom of 2 1/2 quart casserole dish.
- Top with taters.
- Sprinkle with cheese and bake at 375: for 10 min.
- Note: This can be cooked in one dish if you use a cast iron chicken fryer or Dutch oven.
- Also tastes good with elk meat.

PIERETH PIE I
This chocolate and vanilla pudding pie was the highlight of a trip to Minot, ND many years ago. It was served at a restaurant there.

Stir in melted chocolate, then beat in the eggs one at a time. Stir in almonds. Pour mixture into pastry shell and chill in refrigerator.
- Prepare pudding mix according to package directions. Pour pudding over chocolate layer, then spread whipped topping over pudding. Sprinkle with grated chocolate. Chill several hours before serving.
