This is a recipe from a cookbook entitled, "Tapas" by Richard Tapper. It is a very accessible recipe for chicken legs and has simply wonderful flavor due to the sauce. If you are a huge garlic-lover, feel free to add more garlic. You can easily halve or double the recipe. Great served with rice. Enjoy!

16 chicken legs, skin removed
1 cup flour, for dredging
1/2 cup olive oil, for frying
1 onion, finely chopped
1 tablespoon garlic, chopped (or more to taste)
16 ounces canned whole peeled plum tomatoes (Roma)
1 cup chicken stock
salt & freshly ground black pepper, to taste

Steps:

  • Preheat oven to 300 degrees.
  • Dredge chicken legs in the flour.
  • In a frying pan over medium to medium-high heat warm oil and fry the chicken legs, turning as needed, until evenly browned. (A few minutes on each side, depending on your heat.). Make sure the chicken is well browned!
  • Remove from pan.
  • Pour off excess oil (but don't mop out all of the oil).
  • Return pan to medium heat and saute the onion and garlic until the onion is transparent.
  • Add tomatoes and cook for about 15 minutes.
  • Remove this mixture from the heat and add to a blender or food processor.
  • Add the chicken stock to the tomato mixture and puree until you get a sauce consistency.
  • Season with salt and pepper.
  • Arrange chicken legs in a baking dish and cover with tomato sauce.
  • Cover with aluminum foil and bake for 1 hour.
  • Remove foil, turn chicken in sauce, pour off excess liquid and bake until chicken is tender, about 30 minutes.
  • Serve immediately.

12 chicken drumsticks (skin on)
Cooking spray
5 scallions (chopped)
3 cloves garlic
1/2 cup chopped white onion
1/2 cup fresh cilantro
1 tablespoon fresh thyme
1 tablespoon ground cumin
1 tablespoon paprika
Salt and pepper
2 tablespoons white vinegar

Steps:

  • In a food processor, place the scallions, garlic, onion, cilantro, thyme, vinegar, cumin, paprika, salt and pepper. Process to a paste.
  • Place the chicken in a zip -bag and add the marinade. Move around to cover evenly. Refrigerate the chicken overnight.
  • Cover a baking sheet with foil and coat with cooking spray. Position an oven rack in the center of the oven and heat the broiler to high.
  • Place the chicken legs on the baking sheet. Broil for about 10 minutes and turn the legs one time and cook for 12 to 15 minutes more or until the chicken is cooked and the skin is browned. Let it rest for 5 minutes and transfer to a serving plate.

1/2 taza de caldo de pollo sin grasa y reducido en sodio
1/4 taza de aderezo italiano 'de la casa' estilo toscano KRAFT Tuscan House Italian Dressing

Steps:

  • Cocina las pechugas en una sartén antiadherente grande a fuego medio de 6 a 7 min. por cada lado o hasta que se cocinen bien (165ºF). Saca el pollo de la sartén; tapa la sartén para mantenerlo caliente.

½ cup chopped onion
¼ cup olive oil
¼ cup lime juice
2 teaspoons white vinegar
2 teaspoons ground cumin
2 cloves garlic, smashed
2 small dried red peppers
1 teaspoon sea salt
½ teaspoon ground black pepper
4 boneless, skinless chicken breasts

Steps:

  • Place onion, olive oil, lime juice, vinegar, cumin, garlic, red peppers, sea salt, and black pepper in a blender. Blend until smooth. Place chicken in a container or resealable plastic bag and pour marinade on top; toss to coat. Marinate in the refrigerator for 2 to 24 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Grill chicken until no longer pink in the centers, 6 to 7 minutes per side, depending on thickness. An instant-read thermometer inserted into the centers should read at least 165 degrees F (74 degrees C).

1/2 taza de aderezo italiano fuerte KRAFT Zesty Italian Dressing, cantidad dividida
4 pechugas de pollo deshuesadas y sin pellejo de tamaño pequeño (1 lb)
8 tazas de hojas verdes mixtas para ensalada troceadas y bien compactas
1 taza de tomates (jitomates) cereza
1 pimiento (pimentón) verde, en rebanadas finas
1/2 taza de queso mozzarella parcialmente descremado, de baja humedad y desmenuzado KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Calienta la parrilla a fuego medio.
  • Vierte 1/4 taza del aderezo sobre las pechugas en un tazón poco profundo; dales vuelta para recubrirlas de forma pareja por ambos lados. Ponlas en el refrigerador durante 10 min.
  • Retira el pollo del aderezo; deshazte del aderezo. Asa el pollo de 6 a 8 min. por lado o hasta que esté cocido (temperatura interna de 165°F). Corta el pollo en rebanadas.
  • Cubre 4 platos para ensalada con las hojas verdes. Ponles el pollo, los tomates, el pimiento y el queso. Rocíalas con el aderezo restante justo antes de servir.
