Kids love this one. My mom made it for me as did her mom. If making for a small child, cut the hot dogs into fourths length wise. The cheese is always optional.

- Preheat oven to 350 degrees F (175 degrees C).
- Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.
- Bake in preheated oven until biscuits are brown, about 10 to 15 minutes.

PIGS IN BLANKETS MAC & CHEESE

Steps:
- Preheat the oven and cook the pigs in blankets according to the packet instructions.
- Heat the oil in a small saucepan and add the onion. Cook over a low heat for 5-10 minutes until softened but not coloured. Remove from the heat and set aside.
- Cook the macaroni according to the packet instructions. Drain well and set aside while you make the sauce.
- Melt the butter in a medium saucepan. Add the flour and stir with a wooden spoon. Cook the roux for a minute or two, then remove from the heat. Slowly whisk in the milk.
- When all the milk has been added, place back on the hob and cook on a low heat for 10 minutes, stirring often. When the sauce has thickened, add the mustard, salt and pepper. Remove from the heat and add the cheese, stirring quickly until melted and smooth.
- For the breadcrumb topping: Melt the 50g butter and olive oil in a small saucepan. Tip in the breadcrumbs and chopped sage and fry for about 5 minutes, or until golden and crunchy. Remove from the heat and season with a little salt and pepper.
- When everything is ready, combine the sauce with the macaroni and cooked onion and transfer to a heatproof dish. Place the pigs in blankets in the macaroni, letting them peek out a little. Scatter over the crunchy breadcrumbs, top with some grated cheese and brown under a hot grill for about 5 minutes.

I live in Holland, Michigan and these are just a few of the "traditional" recipes I've collected from people I know who probably brought them from "the old country." Enjoy! (Serving size is two pigs, or approx. 15 servings per recipe.)

Steps:
- Divide sausage, forming 30 to 36 "Pigs".
- (About half the length of a hot dog) Do not roll in hands, form carefully with finger tips or fork.
- Sift together flour, baking powder and salt. Cut in margarine as for pie dough.
- Mix in milk, form into smooth ball.
- Roll dough to 1/4 inch thickness, cut into strips about 3 1/2 inches wide. Wrap "pig" loosely in dough, overlapping on the bottom.
- Do not pinch ends shut. Prick top of each "pig" with a fork.
- Place on ungreased cookie sheets, bake 15 minutes at 400 degrees, then 15 minutes at 350 degrees until brown.
- May be frozen up to 4 months.

- Cut hot dogs lengthwise 3/4 of the way through. Insert a piece of cheese or 1/2 teaspoon caramelized onions into each hot dog, if using; set aside. If not using cheese or onions, poke hot dogs several times with the tip of a knife.
- On a lightly floured work surface, working with one sheet of puff pastry at a time, roll into a 14-by-11-inch rectangle. Cut lengthwise into seven 1 1/2-inch wide strips. Cut each strip crosswise into 4 rectangles, each about 3 1/2 inches long.
- In a small bowl, beat together egg and 1 tablespoon water; set aside. Line baking sheets with parchment paper or a nonstick baking mat; set aside. Place a hot dog on the narrow end of one piece of pastry. Roll to enclose, brushing with some of the beaten egg to adhere; transfer to prepared baking sheet. Repeat process with remaining hot dogs and pastry. Brush the tops of puff pastry with egg and sprinkle with seeds, if using. Transfer to refrigerator and let chill for 15 minutes.
- Preheat oven to 450 degrees.
- Transfer baking sheets to oven and bake until puffed and golden, about 20 minutes. Let cool briefly before serving with mustard and ketchup.

CHEESY-MUSTARD PIGS IN A BLANKET
I have been making these for years and usually have them with Recipe #213326 on a Saturday night. They have a little cheese stuffing and are wraped up in a crescent roll. Then I put mustard and relish on them when they are on my plate. The others just eat them with a little mustard. They are so good.

Steps:
- Cut the hotdogs in half crosswise to make 8 pieces and then partially cut each one halfway lengthwise.
- Cut the cheese in half so that there are 8 pieces; fold each piece in half and tuck it into the partially cut hotdog.
- Unroll the crescent roll place a hotdog on each one and roll up.
- Bake at 350 to 375 degrees for about 10 minutes or so till nice and golden.
