Unlike American pancakes, the Australian pikelets can be purchased ready-made in grocery stores. You can eat the cold or hot and they are typically topped with cream, jam, fruit or butter and sugar! They are handle for snacks and lunches. I found these on an Australian website. Enjoy!

Number Of Ingredients 8

1 cup self-raising flour
1 pinch salt
1/4 teaspoon baking soda
6 fluid ounces milk
1 egg
2 tablespoons sugar
2 teaspoons butter, melted
1/2 teaspoon vanilla

Steps:

  • Sift together flour, salt and baking soda into a large bowl.
  • Place milk, egg, sugar, butter and vanilla in the center of the flour mixture.
  • Beat until smooth and a thick pouring consistency.
  • Heat greased frying pan over medium high heat. Drop batter by the spoonful into pan.
  • Cook until you see bubbles appear.
  • Turn the pickelets over with a spatula and continue cooking until the underside is light brown.
  • Remove from pan and place on a cloth or between layers of paper towel to cool.

These yummy golden little pancakes are served warm with jam or honey. Every Australian will have made these many times throughout their youth. 1 large egg
1/4 cup sugar (use vanilla sugar if you have it)
1/2 cup milk (one or two extra tbsp may be required for correct consistency)
1 cup self-rising flour

Steps:

  • In a pouring jug, whisk together well the egg, sugar, and half the milk.
  • Add the flour, and mix thoroughly.
  • Then add milk until the batter is the consistency of a thick cream.
  • Beat until smooth.
  • Pour about a soup spoon-sized amount onto a pre-heated, lightly greased frying pan. You will need to start about medium-high heat, but after a few rounds, you will need to drop it back to medium.
  • Flip with a spatula when the top is all bubbly (should be a lovely golden color), and cook the other side.
  • Remove from pan and pile pikelets up on a plate. Cover with a paper towel so they don't go rubbery.
  • Serve with jam, honey, maple syrup, etc.
  • Enjoy.

Number Of Ingredients 4

1 large egg
1/4 cup sugar (use vanilla sugar if you have it, or as some reviewers have suggested ...add 1/2 to 1 teaspoon of va)
1/2 cup milk (1-2 tbsp extra may be required for correct consistency)
1 cup self raising flour

Steps:

  • In a pouring jug, whisk together well the egg, sugar and half of the milk.
  • Add the flour and mix thoroughly.
  • Then add milk until the batter is the consistency of a thick cream.
  • Beat until smooth.
  • Pour about a soup spoon sized amount onto a preheated lightly greased frypan (You will need to start about medium high heat but after a few rounds you will need to drop it back to medium).
  • Flip with a spatula when the top is all bubbly (should be a lovely golden colour), and cook the other side.
  • Remove from pan and pile piklets up on a plate (cover with a paper towel so they don't go rubbery).
  • Serve with jam, honey or maple syrup etc.
  • Enjoy.

3 large eggs
1 tablespoon water
1 tablespoon vanilla extract
2 tablespoons agave nectar
1 1/2 cups blanched almond flour
1/4 teaspoon celtic sea salt
1/4 teaspoon baking soda
grapeseed oil, for cooking

Steps:

  • In a large bowl whisk together eggs, water, vanilla and agave.
  • Add almond flour, salt and baking soda and mix until thoroughly combined.
  • Heat grapeseed oil on skillet over medium low to medium heat.
  • Scoop 1 heaping tablespoon of batter at a time onto the skillet.
  • Pancakes will form little bubbles, when bubbles open, flip pancakes over and cook other side.
  • Remove from heat to a plate.
  • Repeat process with remaining batter, add more oil to skillet as needed.

I have not tried these pancakes. I'm posting this for safe keeping. I found this recipe in Scholastic Parent & Child. Tip: To ensure pancakes that are tender and light, take care not to overmix the batter.

1/4 cup old fashioned oats (not instant)
1 cup whole wheat flour
1/4 cup packed dark brown sugar
1 teaspoon salt
1 teaspoon baking powder
1 1/4 cups milk
2 eggs
4 tablespoons butter, melted
1 teaspoon vanilla

Steps:

  • In a food processor, grind oats until they are the consistency of flour. Transfer to a bowl and whisk in flour, sugar, salt, and baking powder.
  • In a separate bowl, whisk together milk, eggs, butter, and vanilla.
  • Pour liquid ingredients into flour mixture and whisk until just combined--a few lumps are ok.
  • Lightly coat a griddle or nonstick skillet with oil. Heat to medium-high and spoon 2 tablespoons (1/8 cup) batter for each pancake. Cook until bubbles form on top and batter is set about 1-2 minutes. Using a thin, flexible spatula, flip pancakes and cook until golden brown, 1-2 minutes more. If desired, serve with warm pure maple syrup.

1 cup self-rising flour
1 tablespoon castor sugar or superfine sugar
1 egg
1 tablespoon butter, melted
½ cup milk, or as needed

Steps:

  • Sift the flour into a medium bowl, and stir in the sugar. Make a well in the center, and add the egg. Stir with a wooden spoon while gradually pouring in the milk until you reach the consistency that you prefer. Thicker pikelets will need a thick batter, while thin pikelets will need a thin batter. Stir in melted butter last, beating until smooth.
  • Heat a skillet over medium heat. Coat with cooking spray. Drop by large spoonfuls onto the hot skillet. Pikelets should be about 2 inches across. Flip when bubbles appear on the surface, and cook until browned on the other side.

  • sift dry stuff together
  • put vinegar in milk add 2 T melted butter
  • add egg to milk stir up
  • add wet to dry.
  • heat griddle with melt butter
  • spoon 1 tablespoon of batter onto hot skillet
  • repeat
  • flip when bubbly.
  • serve with jam on top.
