UZBEK BEEF PLOV - RICE PILAF
Uzbek Beef Plov - a fluffy rice pilaf with beef, carrots, onions and a unique spice blend - is originally an Uzbek dish that pretty much every Russian family knows and cooks. Traditionally it is cooked outdoors in a large cast iron pot over a fire. This recipe make a large batch which lends itself perfectly for reheating or freezing.

- Trim any excess fat off the beef and cut into bite-sized pieces. Heat a large non-stick pot or dutch oven over high heat. Add the cooking oil. Once oil is hot add the beef and sear uncovered for about 7 minutes until meat is nicely browned. Stir often.
- Turn heat to medium and add chopped onion. Cook for about 5 minutes until onions soften.
- Stir in carrot matchsticks (you could shred the carrots but the matchstick size leaves more bite and texture), 1 tsp salt, 1/2 tsp pepper, 1 tsp paprika, 1 tsp cumin and bay leaves and cook for another 5 minutes until carrots soften.
- Add 1 3/4 cups of boiling water, cover and simmer over medium low heat for 45 minutes until the meat is soft.
- In the meantime using a strainer rinse the rice under cold water until the water runs clear (this is essential for fluffy rice otherwise you risk ending up with sticky rice mush). Spread the rice over the meat, sprinkle with 1 1/2 tsp salt and add 4 cups of boiling water (do NOT stir!). Bring to a boil over high heat.
- Once boiling reduce heat to medium and cook uncovered until most of the water is absorbed (10 minutes).
- Cut the bottom off the garlic head to expose the cloves. Press garlic head into the center of the rice. Sprinkle the rice with 1 tsp coriander. Poke 8-10 holes into the rice to let the steam to escape and cover. Turn heat to low and cook until rice is soft.
- Remove garlic and bay leaves, stir gently to combine everything. Serve (with dill pickles) and enjoy!
BEEF PLOV (BEEF RICE PILAF) RECIPE
This recipe makes a big batch which is great since it reheats really well. That's my favorite way to eat it; crisped over a skillet and served with a pickle.

- Trim beef of excess fat and sinews (aka the chewy stuff), pat the meat dry with a paper towel and chop into 1/2" to 3/4" pieces.
- Preheat your dutch oven (or your large soup pot with a heavy bottom), to high heat. Once it's hot, stir in your 1/3 cup canola oil. Once oil is hot, add chopped meat and saute uncovered 7 min over high heat until meat is browned, stirring every minute or so so it doesn't scorch to the bottom of the pan. Note: it's important to preheat the dutch oven first for the meat to sear over very high heat, otherwise it will juice out and become dry.
- Reduce heat to medium and Add chopped onion, stirring often until onion is softened (5 minutes). Stir in sliced carrots, 1 tsp salt, 1/2 tsp pepper, 1 tsp paprika, 1 tsp cumin, 3-4 bay leaves and continue to cook over medium heat 5 minutes until carrots are softened.
- Add 1 3/4 cups hot water, cover and simmer over medium/low heat 45 min or until meat is tender.
- Meanwhile, rinse rice until water runs clear, then drain and set aside (this gets rid of the starch so you won't end up with a sticky rice).
- Spread rice over the meat and add 4 cups hot water. Sprinkle the rice with 1 1/2 tsp salt (DO NOT STIR), bring to a boil then reduce heat to low and Let cook uncovered until most of the water is absorbed (10 min).
- Cut off the base of your whole garlic head to expose the cloves. Put your head of garlic, cut side down into the center of the rice and sprinkle the top of the rice with 1 tsp ground coriander.
- Poke 7-10 holes through the rice to allow steam to escape to the surface, reduce the heat to low then cover and cook an additional 15 minutes or until rice is cooked through. Remove the garlic head and bay leaves and stir everything gently to combine and you're done.
PILAF WITH MEAT

- Place 1 tablespoon butter or oil in a large, deep skillet over medium heat. Crumble meat and add it to pan, along with a large pinch of salt; cook, stirring occasionally to break up lumps, until meat loses its color. Remove with a slotted spoon.
- Add remaining butter or oil to skillet, followed by onion and a little more salt; cook, stirring occasionally, until onion turns translucent, 5 to 10 minutes. Add bay leaves and rice, and cook, stirring occasionally, until rice is glossy and begins to brown, 3 to 5 minutes. Return meat to pan, stir mixture and sprinkle with salt, pepper and cinnamon.
- Add stock and stir. Raise heat, and bring mixture to a boil; cook for a minute or two, then reduce heat to low, and cover. Cook about 15 minutes, or until most of the liquid is absorbed. Turn heat to absolute minimum, and cook another 15 to 30 minutes; if you have an electric stove, turn heat off and let pan sit on burner for same amount of time. Stir in parsley and lemon juice, and serve.

INSTANT POT BEEF AND RICE PILAF WITH VEGETABLES RECIPE
This Instant Pot Beef and Rice Pilaf with Vegetables has been on repeat at our house this month! It's packed with flavor everyone will love!

- Press the SAUTE button on your Instant Pot. After it heats up, add in the oil. Heat the oil for 1 minute, then add in the onion, carrots, and celery. Sauté for 5 minutes or until the onions become tender.
- Add in the beef pieces, tomato sauce, beef broth, pepper, salt, garlic powder, smoked paprika, and steak seasoning. Stir all together. Place the bay leaf on top.
- Place the lid on the Instant Pot and turn the valve to the SEALING position.
- Press the PRESSURE COOK (or MANUAL) button on the Instant Pot and set the timer for 40 minutes. When the timer is done, switch the valve over to VENTING and do a quick release of the pressure (you can also let it do a natural release if you have time).
- Remove the lid and pull out the bay leaf.
- Pour the rice over the top of everything (don't stir it together) and using the back of a spoon, spread it around evenly. All of the rice should be covered with liquid.
- Press the halves of the garlic down into the rice (cut side down touching the rice). Place the lid back on the Instant Pot. Move the valve back to SEALING. Press the PRESSURE COOK (or MANUAL) button and set the timer for 15 minutes.
- When the cooking time is over, let the Instant Pot do a natural release for 15 minutes (let the pressure release on it's own). When the time is up, move the valve to VENTING and allow the rest of the pressure to leave the pot.
- Open the lid, remove the garlic. Add in the fresh parsley and then fluff the rice with a fork and gently stir all the ingredients together.
- Serve and enjoy!

- Melt butter in a large saucepan over medium heat; cook and stir carrots, celery, red bell pepper, onion, and garlic until the vegetables begin to soften, about 5 minutes.
- Gently stir rice, corn, and peas into vegetables to combine. Pour chicken broth, soy sauce, and Worcestershire sauce into rice mixture. Season with lemon pepper, parsley, thyme, saffron, salt, and black pepper, bring to a boil, and reduce heat to low. Cover and simmer until rice is tender, about 20 minutes. - Preheat an oven to 375 degrees F (190 degrees C). Prepare a 1 quart baking dish with butter.
- Melt the butter in a large skillet over medium-high heat. Fry the onion in the butter until translucent, 3 to 5 minutes. Stir in the rice; cook until the rice is slightly golden. Pour in the chicken broth. Season with the salt. Simmer another 5 minutes. Transfer to the prepared dish.
- Bake in the preheated oven until the broth is completely absorbed, 35 to 40 minutes. Fluff with a fork to serve.

- Put rice in bowl, cover with boiling water and leave for 10 minutes, drain.
- Meanwhile, spray large nonstick skillet with cooking spray and saute walnuts, remove, and set aside.
- Melt butter in same skillet, add onion and garlic; sauté for about 3 minutes,
- Stir in drained rice, and saute for 1 minute, stirring constantly.
- Add olive oil, stock, tomato, salt, black pepper, and cinnamon stick to rice; bring to a boil.
- Cover, reduce heat to low, simmer about 20 minutes or until liquid is mostly absorbed-don�t stir but peek after 15 minutes to see if more stock needs to be added.
- When the rice is tender, stir in chicken and spinach;
- Remove skillet from heat.
- Place a clean kitchen towel between skillet and lid, over the rim of the pot covering the top and put the lid back on.
- Let the pilaf stand for about 5 minutes (Turkish cooks call this the brewing time) before serving.
- Sprinkle evenly with walnuts and dill.
- Discard cinnamon stick and serve.

BULGUR PILAF WITH MEAT
Steps:
- Put 4 tablespoons (1/2 stick) of the butter in a large skillet or flameproof casserole with a lid and turn the heat to medium. When the butter melts, add the onions, a large pinch of salt, and some pepper and cook, stirring occasionally, until the onions are quite soft, about 10 minutes.
- Add the meat, bay leaves, and spices and cook, stirring, until everything is well combined. Add the tomatoes, stock, and (unless your stock is salty) some more salt and pepper. Cover, adjusting the heat so the mixture simmers. Cook for about 30 minutes, until the meat is nearly tender.
- Stir in the bulgur, cover again, and cook until the grain is nearly tender, about 15 minutes. At this point most of the liquid should be absorbed. If the mixture is dry and the grain not fully cooked, add some boiling water and cook for a few minutes more; if it is wet, uncover and raise the heat a bit to boil out the excess. Stir in the remaining butter. Turn off the heat and let sit for 15 minutes more. Taste and adjust the seasoning, garnish, and serve with the lemon if you like.
- Fast Pilaf with Meat
- In step 2, substitute ground lamb (or beef). Add the bulgur along with the tomatoes and stock and finish as in step 3. (You may skip the final resting period.)
- Bulgur Pilaf with Chickpeas
- In step 2, omit the meat and add 1 1/2 to 2 cups cooked chickpeas.
