- Line a 9-in. pie plate with pastry; trim and flute edges. In a large bowl, combine the apples and pineapple. Combine the flour, cinnamon and nutmeg; add to apple mixture and toss to coat. Transfer to pastry., In a small bowl, combine the oats, brown sugar, flour and butter; sprinkle over filling., Bake at 375° for 40-45 minutes or until topping is browned. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack.

- Beat together all ingredients. Pour into unbaked pie. Bake 50 minutes in 350 degree oven or until it sets and is brown. TIPS I test mine by inserting a knife in the center, if it comes out clean then you know the pie is done.
PINEAPPLE GLAZED APPLE PIE
I have had this recipe for years.I have changed the type of apples and made one crust and topped with cool whip instead of whipped cream. Arrange the apples in a circle, it shows through the glaze and place the cool whip in the center.

- In large pot add 1 1/4 cup pineapple juice and sugar. Bring to a low boil, add apples.
- Simmer about 4 minutes, apples should be tender but not soft.
- With slotted spoon take out apples and drain in colandar, have a dish underneath to catch liquid.
- In small bowl, add 1/4 cup pineapple juice and cornstarch. Stir to dissolve.
- Add to hot pineapple mixture, stirring until thickened. Turn the heat down when thickening. Should be clear and not milky.
- Take off the heat. Stir in margarine vanilla and salt. Cool about 30 minutes, do not stir. Take any juice drippings from apples and stir into mixture.
- Pour half of the mixture in the pie shell covering bottom.
- Arrange apples in the circle around the shell. Spoon other half over the applies, smooth with the back of a spoon. Chill.Before serving top with whipped cream or cool whip in the center.
- Optional Serving: Place 8 slices of Kiwi fruit on top of pie for 8 servings.

- Preheat oven to 400 degrees. Prepare pie crust according to package directions. Combine all the topping ingredients except the butter in a medium bowl. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs. Set aside. In a large bowl, combine all the filling ingredients. Pour filling into the pie shell. Sprinkle topping over the filling. Cover the top loosely with some aluminum foil. Bake for 10 minutes. Remove the aluminum foil and reduce the oven temperature to 375 degrees. Continue baking for 40 minutes more or until apples are slightly tender when pierced with a fork. Cool for about 30 minutes and top each slice with a scoop of vanilla ice cream before serving.

- In a large saucepan, combine 312.5g (1 1/4 cups) of the pineapple juice and the sugar. Bring the mixture to a boil.
- Add apple wedges and simmer, covered for 3 - 4 minutes, or until apples are tender. Using a slotted spoon remove the apples from the pineapple liquid and set aside to drain.
- Blend the remaining pineapple juice slowly into the cornstarch and add it to the hot pineapple liquid in the saucepan. Cook and stir until the mixture thickens and bubbles. Cook for 1 more minute.
- Remove from heat and stir in the butter, vanilla, and salt. Cover and cool for 30 minutes without stirring.
- Bake the pie shell until golden brown at 425 degrees and allow to cool, (be sure to prick the bottom and sides to the pie crust with a fork to prevent bubbling). Pour 1/2 of the pineapple mixture into the baked pie shell. Spread the pineapple mixture to cover the bottom of the pie shell.
- Layer the cooked apples on top of the pineapple mixture. Spoon remaining pineapple mixture over the cooked apples. Cover and refrigerate pie until chilled and set.
"21" APPLE PIE

- To prepare the dough by hand, combine the flour and salt in a stainless steel bowl and mix well.
- Add the cold butter cubes and, with a pastry blender, blend in the butter until the mixture begins to resemble a mealy mixture where butter forms peas-size nuggets plainly visible in the flour. Add only enough water to pull the dough together. The water should be added to the flour slowly to ensure that only the minimum amount of water is used. Do not over-mix the dough. When the dough has been mixed just sufficiently to combine the ingredients, form it into a ball and wrap in a piece of plastic wrap and refrigerate for several hours.
- To prepare the filling, melt the butter in a large saute pan until it begins to brown. Add the sliced apples and cook over medium heat until they begin to soften, about 2 to 3 minutes.
- In a bowl, combine the lemon juice, sugars, Southern Comfort, and cinnamon. Add this mixture to the apples and cook 2 to 3 minutes over medium-high heat until the apples are completely caramelized and covered with all the sugar. Remove filling from the heal and allow to cool.
- Preheat the oven to 375 degrees.
- When ready to use, remove the dough from the refrigerator, lightly flour a pastry board and a rolling pin, and unwrap the dough. Divide the dough into 2 equal pieces and begin to roll out
- into a circle by rolling evenly outward from the center and turning the dough in small 1/8th turns to keep the rolling even. When the dough is rolled out to an even thickness and is about 12 inches in diameter and 1/8-inch thick, it is ready to be transferred to a 10-inch pie tin. Lightly butter the tin, partially roll the dough up on the rolling pin, lift the dough and center it in the pie tin and unroll.
- Roll the second half of the pie dough into a round slightly larger than the pie pan. Fill the bottom crust with the cooked apples using a slotted spoon to drain the apples. Reserve juices if desired, for sauce. Brush an egg wash coating over the lip of the dough. This is where it will be sealed to the top crust. Cover the apples with the top half of the pie dough. Trim any excess from the top crust before using both hands to crimp the edges of the two crust together to seal. With a sharp knife, make several crosshatch slits in the top crust. Brush with the egg wash and bake for 35 to 40 minutes. Remove from the oven and cool 20 minutes. Serve with vanilla ice cream.
- Reserved juices can be reduced with heavy cream for a sauce for the pie.

- In a large saucepan combine 1 1/4 cups (reserving 1/4 cup) of the pineapple juice and the sugar. Bring to boiling; add apple wedges. Simmer, covered, 3 to 4 minutes or till apples are tender but not soft.
- With slotted spoon, lift apples from pineapple liquid; set apples aside to drain.

Sprinkle in 4 tablespoons of the ice water and stir with a fork until the dough comes together. If it is too dry and crumbly, add the remaining 1 tablespoon water, 1 teaspoon at a time.
- Halve the dough and pat it into two 7-inch disks. Wrap each disk in wax paper and refrigerate until chilled, about 30 minutes.
- Arrange one rack in the bottom third of the oven and another in the middle; preheat the oven to 450°. On a lightly floured surface, roll out 1 disk of dough into a 10- to 11-inch round. Transfer the dough to an 8-inch pie pan. Do not trim the overhanging pastry. Roll out the second disk of dough into an 11- to 12-inch round and transfer it to a parchment-lined baking sheet. Refrigerate the pastry while you proceed.
- Toss the apples with the pineapple and lemon juice. In a bowl, mix together the sugar, flour, nutmeg and cinnamon. Toss the dry ingredients with the fruit.
