Small bites of pineapple and chicken in a delicious pastry crust!

1 pound skinless, boneless chicken breast halves - cubed
2 (8 ounce) packages refrigerated crescent roll dough
1 (8 ounce) can pineapple chunks, drained with juice reserved
3 tablespoons honey
1 tablespoon ground ginger

Steps:

  • Place chicken in a large, deep skillet with 1 to 2 tablespoons vegetable oil. Cook over medium high heat until no longer pink. Drain and set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Separate crescent roll dough into individual triangles. Place triangles in a single layer on a large baking sheet.
  • In a small bowl, mix 3 teaspoons reserved pineapple juice, honey and ground ginger.
  • Brush each crescent roll dough triangle with the pineapple juice mixture. Place one pineapple chunk and approximately 1 tablespoon chicken meat on each triangle. Roll and seal each triangle individually.
  • Bake in the preheated oven 15 minutes, or until golden brown.

1 (12 ounce) jar strawberry preserves
1 (8 ounce) jar chili sauce
1 (8 ounce) can pineapple chunks
1 dash salt
1 dash ground black pepper
toothpick

Steps:

  • Heat the olive oil in a skillet over medium-high heat, and cook the chicken chunks 5 minutes, until browned on all sides. Reduce heat to medium, and pour in the preserves and chili sauce. Cook, stirring occasionally, 10 minutes.
  • Mix the pineapple chunks into the skillet. Season with salt and pepper. Continue cooking 2 minutes, until heated through. Serve with toothpicks.

2 tablespoons brown sugar
1 tablespoon cornstarch
2 cans (8 ounces each) crushed pineapple, undrained
1/4 cup soy sauce
1/4 teaspoon garlic salt
1/4 teaspoon ground ginger
6 boneless skinless chicken breast halves (4 ounces each)
Minced chives, optional

Steps:

  • In a large saucepan, combine brown sugar and cornstarch. Stir in the pineapple, soy sauce, garlic salt and ginger. Cook and stir over low heat until thickened. , Place chicken in a greased 9-in. square baking dish. Pour half of the sauce over chicken. Bake, uncovered, at 350° for 15 minutes. Bake 10 minutes longer or until a thermometer reads 170°, basting several times with the remaining sauce. Sprinkle with chives if desired.

20 oz can pineapple tidbits in juice undrained
6 oz cream cheese, soften
6 oz Hormel chunk breast of chicken, drained and flaked
1/4 cup chopped green onion
1/2 tsp white pepper
2 -10 oz cans of refrigerated flakey biscuits
Dipping Sauce
1/4 honey
1 T soy sauce
1/2 ground ginger

Steps:

  • Drain pineapple and reserve juice. Combine cream cheese and 2 T of pineapple juice in a small mixing bowl and beat until smooth. Add reserved pineapple, chicken, onions and pepper. Separate each biscuit into two pieces. Press each half into miniature greased muffin tins. Place to heaping tsp of chicken mixture. Bake at 375 F for 15 to 20 minutes until brown . mix remaining ingredients and 2 T pineapple in a small bowl as a dipping sauce.

1/3 cup low-sodium chicken stock
1/3 cup hoisin sauce
1/2 cup brown sugar
1 tablespoon minced fresh garlic
2 teaspoons cornstarch
1 tablespoon olive oil
8 boneless, skinless chicken thighs, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
1 cup diced pineapple
1/2 cup roasted salted cashews, optional
Cooked rice, for serving

Steps:

  • Whisk the pineapple juice, soy sauce, stock, hoisin sauce, brown sugar, garlic and cornstarch together in a medium saucepan. Bring the mixture to a boil and cook until the mixture has reduced to about 1 cup and is the consistency of thick syrup. Set the sauce aside.
  • Add the oil to a large nonstick skillet and place over medium-high heat. Add the chicken and season it with salt and pepper. Cook, stirring, until the chicken is no longer pink, about 5 minutes. Drain off any liquid, then add the sauce to the skillet and stir until combined. Add the pineapple and cashews if using; cook, stirring, for an additional 1 minute. 1 large pineapple
2 tablespoons peanut or vegetable oil
6 boneless chicken thighs, cut into bite-size cubes
1 teaspoon salt
1 teaspoon pepper
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon garlic paste
½ cup chicken stock
cooked rice, for serving
sesame seed, for garnish

Steps:

  • Using a sharp knife, carefully cut the pineapple in half lengthwise. Using the knife tip, cut around the inside edge of the pineapple, being careful not to cut through the skin. Slice down and across the pineapple flesh, then scoop out the pineapple cubes with a spoon. Discard the core and set the flesh aside.
  • In a large pan, heat the oil over medium heat. Add the chicken and season with salt and pepper. Fry for about 10 minutes, until browned and cooked through. Remove the chicken and set aside.
  • Add the cubed pineapple, hoisin sauce, soy sauce, brown sugar, and garlic paste and cook for a few minutes. Stir in the chicken stock, bring to a boil, then simmer, stirring occasionally, until the sauce has reduced and thickened.
  • Add the chicken back to the pan and stir until evenly coated with the sauce. Serve in the empty pineapple halves, along with some rice and sesame seeds.
