  • Mix salmon, oats, onion, egg, lemon juice, mustard, salt, and black pepper in a bowl until evenly combined. Divide and shape mixture into four patties.
  • Heat vegetable oil in a large skillet over medium-high heat; pan-fry salmon patties until heated through, about 7 minutes on each side.

1 (16 ounce) can salmon, drained and flaked
2 eggs
¼ cup chopped fresh parsley
2 tablespoons finely chopped onion
¼ cup Italian seasoned dry bread crumbs
2 tablespoons lemon juice
½ teaspoon dried basil
1 pinch red pepper flakes
1 tablespoon vegetable oil
2 tablespoons light mayonnaise
1 tablespoon lemon juice
1 pinch dried basil

Steps:

  • In a medium bowl, mix together the salmon, eggs, parsley, onion, breadcrumbs, 2 tablespoons of lemon juice, 1/2 teaspoon of basil, and red pepper flakes. Form into 6 firmly packed patties, about 1/2 inch thick.
  • Heat the oil in a large skillet over medium heat. When the oil is hot, add the patties, and cook for 4 minutes per side, or until nicely browned.
  • In a small bowl, mix together the mayonnaise, 1 tablespoon of lemon juice and a pinch of basil. Use as a sauce for your patties.

For this recipe, you'll want to grind part of the salmon in a food processor: It'll bind the rest, which can be coarsely chopped to retain moisture during cooking. Some bread crumbs keep the burger from becoming as densely packed as (bad) meatloaf. This approach, along with a few simple seasonings, produces delicious burgers in not much more time than it takes to make one from ground chuck. The only real trick is to avoid overcooking. Whether you sauté, broil or grill this burger, it's best when the center remains the color of ... salmon. Two or three minutes a side usually does the trick.

1 1/2 pounds skinless, boneless salmon
2 teaspoons Dijon mustard
2 shallots, peeled and cut into chunks
1/2 cup coarse bread crumbs
1 tablespoon capers, drained
Salt and black pepper
2 tablespoons butter or olive oil
Lemon wedges
Tabasco sauce

Steps:

  • Cut the salmon into large chunks, and put about a quarter of it into the container of a food processor, along with the mustard. Turn the machine on, and let it run - stopping to scrape down the sides if necessary - until the mixture becomes pasty.
  • Add the shallots and the remaining salmon, and pulse the machine on and off until the fish is chopped and well combined with the puree. No piece should be larger than a 1/4 inch or so; be careful not make the mixture too fine.
  • Scrape the mixture into a bowl, and by hand, stir in the bread crumbs, capers and some salt and pepper. Shape into four burgers. (You can cover and refrigerate the burgers for a few hours at this point.)
  • Place the butter or oil in a 12-inch nonstick skillet, and turn the heat to medium-high. When the butter foam subsides or the oil is hot, cook the burgers for 2 to 3 minutes a side, turning once. Alternatively, you can grill them: Let them firm up on the first side, grilling about 4 minutes, before turning over and finishing for just another minute or two. To check for doneness, make a small cut and peek inside. Be careful not to overcook. Serve on a bed of greens or on buns or by themselves, with lemon wedges and Tabasco or any dressing you like.

Steps:

  • Toss the sliced onion, cabbage, rice vinegar, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Mix the salmon with the diced onion, eggs, panko, 1/4 cup dill, 2 tablespoons crème fraîche, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Form into four 1/2-inch-thick patties. Mix 1/4 cup creme fraiche with the remaining 1 tablespoon dill in a small bowl.
  • Heat 2 tablespoons olive oil in a large nonstick skillet over high heat. Add the salmon patties and cook until browned and firm, 2 to 3 minutes per side.

4 ounces whole onion or 3 ounces chopped, ready-cut (1 cup)
1 teaspoon olive oil
10 ounces fresh skinned salmon fillet
1 cup dry white wine
1 orange
About 2 sprigs dill to yield 1 1/2 tablespoons chopped
2 tablespoons orange juice
1/4 cup fresh bread crumbs
1 1/2 cups frozen corn kernels
2 egg whites
1/8 teaspoon salt
Freshly ground black pepper
Pan spray
2 Poppy seed rolls or other rolls shaped like hamburger rolls

Steps:

  • Chop whole onion.
  • Heat small nonstick pan until it is hot. Reduce heat to medium high, add oil and onion and saute until onion is soft and beginning to brown.
  • Cut the salmon into about four strips, and poach in white wine until the salmon is cooked to medium doneness, just a few minutes. Discard liquid, and place salmon in medium bowl. Mash with fork.
  • Grate rind of orange. Wash and chop dill, and add rind and dill to salmon with orange juice, bread crumbs, corn and sauteed onion. Stir well.
  • Thoroughly mix in egg whites, salt and pepper, and shape salmon mixture into four patties.
  • Spray medium nonstick pan with pan spray, and when pan is medium hot, add patties and brown well, about 2 minutes a side.
  • Cut rolls in half, and place a patty on each half.

Nonstick vegetable cooking spray
1/2 cup chopped scallions, white and green parts only
1/2 cup freshly squeezed lemon juice
1 pound skinless wild salmon fillets, bones removed, cut into 1-inch pieces
1 large egg, lightly beaten
2 tablespoons chopped fresh dill
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
4 English muffins, toasted
Sliced Vidalia onion, for serving (optional)
Sweet red pepper relish, for serving (optional)
Wasabi mayonnaise, for serving (optional)
Ketchup, for serving (optional)

Steps:

  • Spray a medium nonstick skillet with cooking spray and place over medium heat. Add the scallions and cook until translucent, about 2 minutes. Increase heat to medium-high. Add the lemon juice and cook until almost all liquid evaporates, about 4 minutes. Transfer to a bowl to cool.
  • Place salmon in a food processor and pulse until coarsely ground. Add to scallions. Mix in the egg, dill, salt, and pepper. Form into 4 equal patties.

  • Drain and flake the salmon. Be careful to get out as many of the little bones as possible.
  • In a bowl, add all ingredients together, except for the oil. Mix up until you are able to form patties out of the mixture.
  • Make 6 equal-size patties of the mixture and set aside.
  • Heat a non-stick skillet sprayed with vegetable spray (Pam, etc.) and cook salmon patties in the skillet for four minutes each side until browned.
