Number Of Ingredients 5

2 small apples, divided
10 whole cloves
1 bottle (48 ounces) unsweetened apple juice
4 cans (6 ounces each) unsweetened pineapple juice
2 cinnamon sticks (3 inches)

Steps:

  • Core and cut one apple into 10 slices. Insert one clove into each slice. In a Dutch oven, combine juices. Add apple slices and cinnamon sticks. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until flavors are blended. , Discard apple slices and cinnamon sticks. Core and cut remaining apple into 12 slices. Ladle cider into mugs; garnish with apple slices. Serve warm.

Do not peel pineapple; wash thoroughly; core; cut the flesh and skin into chunks.

1 large ripe pineapple (about 3 pounds)
2 quarts water
1 cup light-brown sugar
4 whole cloves
2 cinnamon sticks (about 4 inches each)
1 cup light beer
12 packets sugar substitute

Steps:

  • Do not peel pineapple; wash thoroughly; core; cut the flesh and skin into chunks.
  • Place into a large covered jar (like a pickle jar); add water, sugar, cloves, and cinnamon.
  • Cap jar; store in warm place for 48 hours; uncap; stir.
  • Add beer; allow tepache to continue to ferment for 24 hours more.
  • Strain liquid; discard fruit; add sugar substitute.
  • Chill.
  • Serve cold over cracked ice.

1 medium navel orange, cut into 1/2-inch slices
50 to 60 whole cloves
6 cups apple cider or juice
1 cinnamon stick (4 inches)
2-1/4 cups unsweetened pineapple juice
1/4 cup honey
3 tablespoons lemon juice
1 teaspoon grated lemon zest
1/4 teaspoon ground nutmeg
Additional cinnamon sticks, optional

Steps:

  • Cut orange slices in half. Using a wooden toothpick, poke holes in the peel of each orange slice at 1/2-in. intervals. Insert a clove into each hole; set aside., In a large saucepan, bring apple juice and cinnamon stick to a boil. Reduce heat; cover and simmer for 5 minutes. Stir in the pineapple juice, honey, lemon juice, zest and nutmeg; return to a boil. Reduce heat; cover and simmer for 5 minute. , Discard cinnamon stick. Garnish with orange slices. Serve warm with additional cinnamon sticks for stirrers if desired.

1 pineapple
1/2 cup raisins
5 cups sugar
2 teaspoons dry yeast
1 1/2 gallons warm water (7 litres)

Steps:

  • Discard pineapple stalk.
  • Wash unskinned pineapple well and chop up with skin and all.
  • Place all ingredients into a large container with a lid and stir to mix well. Cover and leave where it can be undisturbed.
  • The fermentation will start immediately. Stir twice a day over the next 72 hours. Don't worry - it is supposed to smell like fermented fruit! By the third day this smell will subside to a lovely beery, cidery smell.
  • Strain through a sieve or cheesecloth and bottle.

½ teaspoon onion powder
½ teaspoon oregano
⅛ teaspoon freshly ground black pepper
⅓ cup extra-virgin olive oil

Steps:

  • Combine apple cider vinegar, lemon juice, honey, mustard, salt, garlic powder, onion powder, oregano, and pepper in a small jar. Place lid on tightly and shake until ingredients are well combined. Pour in olive oil, and shake jar again to combine.
  • Use immediately or keep extra stored in the fridge. Shake jar again before using.
