PINEAPPLE JUICE COCKTAILS: MARGARITA & MORE!
Here's one of the best pineapple juice cocktails...the pineapple margarita! This winning combination of pineapple, tequila and lime is a slam dunk.

Steps:
- Cut a notch in a lime wedge, then run the lime around the rim of a glass. Dip the edge of the rim into a plate of salt (or for a festive look, use Margarita Salt).
- Place all ingredients in a cocktail shaker and fill it with ice. Shake until cold. Strain the margarita into the glass with the salted rim. Fill the glass with ice and serve.
SOUR PINEAPPLE TIKI COCKTAIL
Steps:
- Add the grapefruit juice, maraschino cherry juice, pineapple chunks and li hing powder, if using, to a blender. Blend on high until smooth.
- Divide the juice among 8 to 10 large glasses and add ice. Divide the seltzer among the glasses. Float with 2 ounces of dark rum if desired. Top with a wedge of pineapple and a maraschino cherry if using.
GRAPEFRUIT PINEAPPLE BELLINI
Steps:
- Fill each champagne flute with 4 ounces of champagne followed by 1 ounce of pink grapefruit juice and 1 ounce of pineapple juice. Garnish each flute with a grapefruit twist.
