1 can (8 ounces) crushed pineapple
1/2 cup shortening
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1-1/2 cups confectioners' sugar

Steps:

  • Drain pineapple, reserving 3 tablespoons juice. Set pineapple aside; set juice aside for frosting. In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg. Add pineapple and vanilla; mix well. Combine the flour, baking powder, baking soda and salt; stir into the creamed mixture. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 325° for 17-20 minutes or until golden brown. Remove to wire racks to cool., For frosting, in a small bowl, combine confectioners' sugar with enough of the reserved pineapple juice to achieve a smooth spreading consistency. Frost cooled cookies.

1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 (8 ounce) can crushed pineapple

1/2 c crisco or shortening
1 c brown sugar, firmly packed
1 large egg
1 tsp vanilla extract
1 can(s) (8 ounces) crushed pineapple

1 1/2 tsp baking powder
1/4 tsp baking soda
1 pinch salt
OPTIONAL FROSTING:
2 c powdered sugar
1 Tbsp soft butter
just enough water to make a thin frosting

  • 1. Preheat the oven to 325 degrees. Grease cookie sheets. In a large bowl, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, then stir in the vanilla and pineapple. In a separate bowl, combine the flour, baking powder, baking soda and salt. Gradually stir the flour mixture into the creamed mixture. Drop by rounded spoon fulls onto the prepared cookie sheets.
  • 2. Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. OPTIONAL FROSTING: Stir together ingredients adding water slowly until a thin frosting is achieved. Spread over cooled cookies.

Spread 1/4 cup preserves down the center of each rectangle. Starting at a long side, fold dough over filling; fold other side over top. Pinch to seal seams and edges. 1 ½ cups confectioners' sugar
¼ cup orange juice
2 teaspoons orange zest

  • Cream brown sugar, white sugar, shortening, and salt. Stir in egg.
  • Sift together 2 cups flour, baking soda and baking powder. Stir into sugar mixture and mix well. Add pineapple, chopped nuts (optional) and vanilla. Mix well.
  • Drop by teaspoonfuls on greased cookie sheet. Bake at 350 degrees F (180 degrees C) for 8 - 10 minutes. Frost when cooled.
  • To Make Frosting: Mix confectioners' sugar, orange juice, and grated orange rind. Mix together until smooth and drizzle on cooled cookies.
