1 ½ cups ricotta cheese
2 eggs
1 teaspoon vanilla extract
½ cup white sugar
1 ½ cups milk
2 tablespoons cornstarch
1 recipe pastry for a 9 inch single crust pie
½ teaspoon ground cinnamon

Steps:

  • Dissolve cornstarch in 1/2 cup milk.
  • Combine cornstarch and milk with ricotta, remaining 1 cup milk, eggs, vanilla, and sugar. Mix until well blended. Pour filling into unbaked pie shell.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until a knife inserted into center comes out clean. Sprinkle top with cinnamon, and cool.

Pizza Rustica (Easter Pie Recipe) is a savory pie typically served the day after Easter, or Pasquetta, in Italy. My version is filled with sausage, prosciutto cotto, swiss chard, cheese and eggs to create a satisfying, rustic pizza rustica that is perfect for brunch or take along on a picnic!

2 1/2 cups all-purpose flour
1 tsp salt
1 tsp baking powder
1 cup cold unsalted butter (cubed)
1 large egg
500 grams mild Italian sausage (without the casing)
300 grams swiss chard (1/2 bunch, stems removed)
1 tbsp. olive oil
1 clove garlic (finely minced )
100 grams prosciutto cotto ((about 3 slices))
475 grams whole milk ricotta (drained if very watery)
1 cup mozzarella cheese (shredded)
1 cup provolone cheese (shredded)
5 tbsp Parmigiano/Pecorino Romano cheeses (grated (or only 1 of 2 if you prefer))
4 large eggs
pepper (to taste )
1 large egg (for brushing on the crust )

Steps:

  • Combine flour, salt and baking powder in the bowl of your food processor. Add cubed butter and pulse until the mixture resembles a course meal. Add the egg and blend until combined.
  • With the motor running begin adding a tbsp of ice cold water at a time until a dough is formed and wraps itself around the blade. I added 5 tbsps of water to my dough. Remove the dough from the food processor, shape into a disc. Cover with plastic wrap and refrigerate for an hour.

This experiment grew out of a neighbor's gift of excess ricotta from cooking for our block party. The tomato and extra spice adds a nice kick to the custard. I'd also like to play with the spice mixture when I make this again. I think you could eliminate the heat and add a bunch of dried or fresh herbs. This could also be made in a pie or quiche crust, but I like the simplicity and ease of cleanup of baking in the skillet. This is also a good recipe to double - bake one in the skillet and put the other filling in a pie shell and freeze.

1 medium onion, chopped
3 garlic cloves, chopped
1/4 teaspoon salt
1 (10 ounce) package frozen chopped spinach, thawed
1/3 cup sun-dried tomato, chopped
1 teaspoon chili powder
1/2 teaspoon red pepper flakes
1 teaspoon ground black pepper
2 tablespoons tomato paste
8 ounces mozzarella cheese, grated
3/4 cup parmesan cheese, grated
4 large eggs
2 cups ricotta cheese

Steps:

  • Preheat the oven to 350.
  • In a large cast iron skillet on medium heat, cook the onions, garlic and salt until they begin to caramelize. Meanwhile, mix the mozzarella, half the Parmesan, the ricotta and the eggs in a mixing bowl.
  • To the skillet, add the spinach, sun dried tomatoes, the tomato paste and the spices. Cook until the liquid from the spinach is dried out.
  • Add the spinach mixture to the cheese mixture and combine well. Put it back into the skillet, smooth the top and top with the remaining Parmesan.
  • Bake for around 40 minutes. The top should be crispy and golden brown.
  • Allow 10 minutes rest before cutting and serving.

1/2 cup chopped onion
2 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 can (14-1/2 ounces) Mexican diced tomatoes, drained
3/4 cup reduced-fat ricotta cheese
1/4 cup shredded part-skim mozzarella cheese
3 tablespoons minced fresh cilantro, divided
4 whole wheat tortillas (8 inches)
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400°. In a large skillet, cook and crumble beef with onion and garlic over medium heat until no longer pink, 4-6 minutes. Stir in spices and tomatoes. Bring to a boil; remove from heat. In a small bowl, mix ricotta cheese, mozzarella cheese and 2 tablespoons cilantro., Place 1 tortilla in a 9-in. round baking pan coated with cooking spray. 1 pound bulk Italian sausage
6 large eggs
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
4 cups shredded part-skim mozzarella cheese
3/4 cup ricotta cheese
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 pastry for double-crust pie (10 inches)
1 tablespoon water

Steps:

  • In a skillet, cook sausage over medium heat until no longer pink; drain. Separate one egg and set the yolk aside. , In a bowl, beat the egg white and remaining eggs. Add spinach, mozzarella cheese, ricotta cheese, salt, garlic powder, pepper and sausage; mix well., Line a 10-in. pie plate with bottom pastry. Add filling. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry. , If desired, cut out holly leaf and berry shapes from pastry scraps; place on top crust. Beat water and remaining egg yolk; brush over top., Bake at 375° for 50-60 minutes or until crust is golden brown and filling is bubbly. Let stand for 10 minutes before cutting.

You will love this, it's really a tasty meal. I have made this many times in the fall and winter season, but it is still good on cool rainy days too, and is very easy to put together. Make certain that you have a large oven-proof skillet for this recipe, as the whole thing is baked in the skillet. Try not to overbake the cornbread topping.

2 -3 fresh minced garlic cloves
1 small green bell pepper, chopped
1/2-3/4 lb lean ground beef

1 teaspoon cumin
1/2 teaspoon sugar
3/4 cup water
1 (14 ounce) can pinto beans, drained
1 (14 ounce) can stewed tomatoes
1 (5 1/2 ounce) can tomato paste
1 (4 ounce) can chopped green chilies, drained
1/2 cup flour
1/2 cup yellow cornmeal
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup buttermilk
1 egg white, s, ightly beaten

Steps:

  • To make the chili: cook onion, garlic and green pepper with the ground beef in a large oven-proof skillet over medium heat until meat is browned and crumbly; drain VERY well.
  • Add in all remaining ingredients (except the topping ingredients); mix well and bring to a boil.
  • Cover and reduce heat to medium-low and simmer for 15 minutes, stirring occasionally.
  • Remove the skillet with the ground beef mixture from heat; set aside.
  • To make the corn bread topping: combine dry ingredients in a bowl.
  • In another small bowl, combine the egg white and buttermilk; add to the dry ingredients, stirring until moistened.
  • Spoon evenly over the gound beef mixture in the skillet.
  • Set oven to 400 degrees.
  • Bake for about 13-14 minutes, or until a toothpick inserted in the middle comes out clean.
  • Delicious!

1 tablespoon vanilla extract
1/2 teaspoon cinnamon
1/2 cup diced candied fruit
1/2 cup semisweet chocolate chips

Steps:

  • To make the pie crust: Into a bowl, sift the flour, sugar, baking powder, and salt. Add the shortening and blend until the mixture resembles coarse crumbs. In a bowl, whisk together the egg and 2 tablespoons of the ice water. Add the egg mixture to the flour mixture and toss to combine, adding more water, if necessary, to form a dough. Chill the dough, wrapped in plastic, until firm.
  • On a lightly floured surface, roll out the dough into a circle 1/8-inch thick and fit it into a 9-inch pie pan. Crimp the edge, prick the bottom, and chill while making the filling.
  • Preheat the oven to 350 degrees. In a large bowl with an electric mixer, beat the ricotta with the sugar until smooth. Add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla and cinnamon. Stir in the candied fruit and chocolate chips. Pour the filling into the pie shell.
  • Bake the pie for 45 minutes, or until just set. Let cool and chill.
