2 tablespoons butter or 2 tablespoons margarine
1/4 cup shallot, chopped
2 cups dry champagne
2 cups whipping cream
salt and pepper
2 tablespoons olive oil
1 cup pine nuts
1 cup packed fresh basil
salt and pepper
4 (8 ounce) salmon steaks
2 tablespoons olive oil
salt and pepper
1/2 cup chives or 1/2 cup green onion, chopped

Steps:

  • TO PREPARE THE SAUCE:.
  • Melt the butter in a heavy skillet over medium heat. Stir in the shallots.
  • Saute for 3 minutes. Increase heat to high. Stir in the Champagne. Boil for 10 minutes or until the liquid is reduced to 1/2 cup. Add the cream; mix well.
  • Cook for 8 minutes or until thickened and of sauce consistency, stirring constantly. Remove from heat. Season with salt and pepper.
  • May cover and store in the refrigerator at this point for 1 day.
  • TO PREPARE THE BASIL-PINE NUT MIXTURE:.
  • Process the olive oil, pine nuts and basil in a food processor until finely chopped. Season with salt and pepper.
  • TO PREPARE THE SALMON:.
  • Brush the steaks with the olive oil; sprinkle with salt and pepper. Arrange on a rack in a broiler pan.
  • Broil for 3 minutes on each side or until the salmon flakes easily.
  • TO ASSEMBLE:.
  • Sprinkle the salmon with the basil-pine nut mixture, pressing gently to adhere.
  • Bring the sauce to a simmer. Stir in the chives or green onions. Spoon the sauce onto plates; top with the salmon.

2 garlic cloves, minced
1 teaspoon kosher salt, divided
1 tablespoon extra virgin olive oil
1 1/2 lbs salmon fillets, whole (about 1.5 lbs)
1/3 cup fresh basil, thinly sliced plus
1/4 cup fresh basil, thinly sliced
2 medium tomatoes, thinly sliced
1/4 teaspoon ground pepper

Steps:

  • Preheat grill to medium.
  • Mash minced garlic and 3/4 t salt in a small bowl to form a paste, stir in oil.
  • Check the salmon for pin bones and remove if necessary. Measure out a piece of heavy-duty foil (or use a double layer of regular foil) large enough for the salmon fillet. Coat the foil with cooking spray.
  • Place the salmon skin-side down on the foil and spread the garlic mixture over it. Sprinkle with 1/3 C basil. Overlap tomato slices on top and sprinkle with the remaining salt and the pepper.
  • Transfer the salmon on the foil to the grill. Grill until the fish flakes easily, 10-12 minutes. Use two large spatulas to slide the salmon from the foil to a serving platter.
  • Serve the salmon sprinkled with the remaining 1/4 C basil.

Out of my many salmon recipes, this one is my favorite. A nice light cream basil sauce with a hint of white wine, complements this fish nicely.

2 lbs salmon fillets
1 1/2 tablespoons unsalted butter
3 shallots, peeled and minced
1 garlic clove, peeled and minced
1 1/2 cups chopped fresh basil
1/4 cup chopped fresh parsley
3/4 cup dry white wine
1/3 cup light cream
1 tablespoon fresh lemon juice
1/4 teaspoon fresh ground white pepper
1/4 teaspoon salt (to taste)

Steps:

  • Cut the salmon into 6 equal serving pieces, wash and pat dry on.
  • paper towels. Melt the butter in a large skillet over medium-high heat. Sear the salmon on each side for about 2 to3 minutes, keeping the center slightly rare since the fish will continue to cook after it is taken from the pan.
  • Remove the fish from the pan with a slotted spatula and keep warm. Reduce the heat to low and add the shollots and garlic to the pan.
  • Saute, stirring frquently, for 5 minutes.
  • Add the basil, parsley, wine, cream, lemon juice, pepper and salt to the pan and cook over medium heat, stirring frequently until the mixture is reduced by half. Taste for seasoning, adding pepper and salt as needed.
  • To serve, reheat the fish slightly in the sauce and then serve the sauce around the salmon fillets.

4 thick salmon steaks
2 tablespoons olive oil
2 tablespoons flour
1 teaspoon salt
1 teaspoon black pepper
1 1/2 cups fresh basil
1 tablespoon fresh lemon juice
6 tablespoons olive oil

Steps:

  • Hot and fast is the best way to cook fish on the grill.
  • Start with a hot fire and let it die down.
  • Clean the grate and wipe it with the olive oil.
  • Dust the salmon with the flour and salt and pepper.
  • Lay the fish on the grill and dont touch it for the first 5 mins.
  • Turn the fish over and grill for a furthur 3 mins.
  • Remove from grill.
  • Fresh Basil Sauce:.
  • place the basil leaves in a food processor with the lemon juice and a little salt and pepper.
  • Blend to a paste, and then slowly pour in the olive oil and mix.
  • Serve drizzled over the grilled salmon.

Pino's Grilled Salmon with Basil Cream image

Number Of Ingredients 13

FOR THE FISH:
4 salmon fillets (each 6 to 8 ounces and 3/4 to 1 inch thick), skinned and checked over for bones
2 tablespoons olive oil
2 tablespoons lemon juice, fresh
salt and freshly ground black pepper, to taste
FOR THE SAUCE:
20 basil leaves, fresh
1/2 cup white wine, dry
2 cloves garlic
1 cup cream, heavy
1 tablespoon lemon juice, fresh
2 tablespoons butter, unsalted
salt and freshly ground black pepper, to taste

Steps:

  • 1. Preheat the grill to high.2. Rinse the salmon fillets under cold running water, then drain and blot dry with paper towels. Place the fillets on a platter and brush on both sides with the oil. Season both sides with lemon juice and salt and pepper, then set aside while you prepare the sauce.3. Combine the basil, wine, and garlic in a blender and process to a smooth purée. Transfer the purée to a small, heavy saucepan and stir in the cream. Bring to a simmer over medium heat and cook until reduced by half, about 15 minutes, stirring frequently. Whisk in the lemon juice and butter. When the butter is incorporated, remove from the heat and season with salt and pepper. Keep warm, covered.4. When ready to cook, preheat a fish or vegetable grate (if using) for 5 minutes, then oil it or the grill grate. Arrange the salmon fillets on the hot grate and grill 3 to 6 minutes. Using a long spatula, carefully turn the fillets over and grill until the fish breaks into firm flakes when pressed with a finger, 3 to 6 minutes more.5. Using the spatula, carefully transfer the fillets to serving plates or a platter. Spoon the basil sauce on top and serve.Serves 4
