PINSEC (FRIED WONTON)
This is from The Philippine Cookbook. They are just a little bit different than the Chinese variety. My family really likes these. I'm including the sauce recipe but I don't use it. I buy the Chinese plum sauce. Note: Cook time and prep time are estimates. Wontons should be cooked in hot oil until golden brown.

Steps:
- Combine all ingredients except wonton wrapper and blend very well. Wrap about 1/2 teaspoons of filling in each wonton wrapper by folding one side to form a triangle. Seal with a few drops of water; set aside. Deep fry and drain on paper towel. Serve with plum sauce.
- Plum Sauce:.
- Combine all ingredients and blend very well. Place in a saucepan and bring to a boil.

- In a large bowl, combine pork, shrimp, Chinese sausage, kinchay, garlic, ginger, soy sauce, salt, pepper and egg until well-distributed.
- Separate wrappers into individual sheets and lay flat on a working board in a diamond shape. Spoon a teaspoon of meat mixture on middle of wrapper, moisten sides with water and fold diagonally into a triangle shape. Press edges to completely seal.
- In a heavy-bottomed wide pan, heat about 2-inches deep of oil. Add prepared dumplingsin batches and deep-fry, turning once or twice, for about 3 to 5 minutes or until meat is fully cooked and wrappers golden and crisp.
- With a slotted spoon, remove from pan and drain on a wire rack set over a baking sheet. Serve hot with sweet and sour sauce
