PARMESAN TATER TOTS
These Parmesan tater tots are made by tossing those nuggets of potato-ey goodness in Parmesan cheese. What's not to love?

- Prepare the tater tots in the oven according to the package instructions.
- When the tater tots come out of the oven, place about 1/4 of them in a largish bowl. (Careful! They're hot!) Sprinkle with 1 tablespoon Parmesan cheese and gently toss to swirl the tots and cheese in the bowl a few times. Dump the Parmesan tater tots into a serving dish. Repeat with the remaining ingredients and grab some napkins.

CRISPY BAKED PARMESAN TATER TOTS
Oven baked and made simply with shredded potatoes, parmesan cheese, olive oil, herbs, garlic + salt...yum!

- 1. Preheat the oven to 450° F. Grease a baking sheet with olive oil. 2. In a food processor, pulse the potatoes together until finely chopped. If you don't have a food processor, you can skip this step. 3. Add the potatoes to a large bowl. Add the olive oil, 1 cup parmesan, flour, onion powder, garlic powder, oregano, and a large pinch of salt. Mix until combined and the mixture is moistened. 4. Scoop 1 tablespoon of the potatoes out of the bowl, pack it together with your hands until it holds a ball, then form into a cylinder and place on the prepared baking sheet. Repeat with the remaining mix. Don't stress about the shape, they don't need to be perfect. Brush/mist each tot with olive oil, be generous. Transfer to the oven and bake 10-12 minutes, slide a spatula underneath the tots, then flip and bake 10 more minutes. Flip once to the uncooked side, bake 10-12 minutes, until golden and crisp. 5. In a small bowl, combine 1-2 tablespoons parmesan, the garlic, and thyme/oregano. Sprinkle the warm tots with the parmesan. Serve tots with lots of ketchup for dipping. ENJOY.

- Preheat oven to 400° F. Scrub the potatoes clean and roast until they are fork tender. Cool them rapidly by plunging them in ice water. Change the water, and repeat, until the potatoes are cool. Shred the potatoes on the large holes of a box grater. You can peel them first; I didn't. Place the other ingredients into the bowl with the grated potatoes and use a fork to fully combine everything. Line a baking sheet with parchment paper and rub it with a layer of olive oil. Preheat oven to 425° F. Using about a teaspoon of the potato mixture, form it into a cylinder about 1 inch long. Place on baking sheet and repeat until all the tots are made. Bake about 35 to 40 minutes, turning once about 20 minutes into the cooking time. Serve hot with ketchup.
PARMESAN TATERS
This recipe is a favorite of a local doctor that was printed in our town newspaper back in 1989. If made in extra small pieces, it makes a great appetizer or hors d'oeuvre. Larger sized pieces of potato make the perfect side dish tor most any entree.

- Cut potatoes into wedges or slices, depending on size desired. You may leave skins on or peel them.
- Mix flour and Parmesan cheese, salt and pepper in a plastic bag.
- Add potato pieces to bag and shake to cover all surfaces.
- Melt butter in a 9 x 13 baking pan.
- Place potatoes in baking pan.
- Bake at 350* for 60 minutes. Turn once at 30 minutes.

BROILED PARMESAN TOMATOES
Tomatoes make a lovely side for almost any protein. This easy recipe will work for Roma or Campari tomatoes. A little seasoning and grated Parmesan will complete this quick and easy dish that is on the table in minutes!

- Preheat a broiler according to manufacturer's recommendations. Line a baking sheet or small sheet pan with aluminum foil.
- Slice tomatoes in half crossways. Slice thin slices off of the round part of the tomato halves so they will sit straight on the pan.
- Place tomato halves on the prepared pan and sprinkle with salt, pepper, and Italian seasoning to taste.
- Place seasoned tomatoes under the broiler and broil about 4 minutes. Be sure to watch carefully, so they won't burn.
- Sprinkle 1 tablespoon grated Parmesan cheese on each tomato half, and return to the broiler.
- Broil until Parmesan cheese is melted and bubbly, 45 seconds to 1 minute.
- Transfer broiled tomatoes on a plate or serving platter and garnish with fresh parsley, if desired. Serve warm.
