MANGO-LIME ICE
Pastry chef Jennifer Jones of Topolobampo in Chicago shared this recipe as part of a [Cinco de Mayo feature on Mexican desserts](/articlesguides/holidays/cincodemayo/mexican-desserts). Jones encourages you to use different fruits in this refreshing dessert, but recommends sticking to ones that are sweet but have acidity. Raspberries are a perfect example.

- In the bowl of a food processor, combine the mangoes, orange zest, sugar, lime juice, and 1 cup water. Process until the mixture is smooth. Pour through a fine-mesh sieve set over a large bowl then press gently on and discard any solids (there will be about 3 cups syrup). Transfer to a freezer-safe dish, cover with plastic, and freeze until the mixture is firm 2 inches in from the sides, about 2 hours. Scrape into a food processor and process until the mixture is slushy. Repeat the freezing and processing 2 more times, then freeze for at least 1 hour before serving. DO AHEAD: The ice can be made ahead and stored in the freezer, well wrapped, up to 2 weeks.
MANGO LIME ICE
This is a refreshingly sweet and tangy ice. It's easy to make as well.

- Peel mangoes using a vegetable peeler; carefully cut the flesh away from each mango's pit, and roughly chop the flesh. Add the chopped mangoes, lime zest, and lime juice to the jar of a blender.
- Add the sugar and 1/4 cup cold water, and puree until the mixture is smooth. Pour the blended mixture into four serving glasses, and place in freezer for 1 hour.
NO-CHURN MANGO-COCONUT-LIME ICE CREAM

- Whisk the mango pulp, condensed milk, lime zest and juice, confectioners' sugar and coconut extract in a large bowl until smooth; set aside.
- Scoop the solids off the top of the can of coconut cream into a separate large bowl. (Discard the liquid; if any liquid has risen to the top, pour it off before scooping out the solids.) Break the solid coconut cream into small chunks, then add the heavy cream and beat with a mixer on medium-high speed until stiff peaks form, 1 to 2 minutes. (There may be a few small chunks of coconut cream.)
- Fold about half of the whipped cream into the mango mixture with a rubber spatula until combined, then fold in the remaining whipped cream until no white streaks remain.
- Spoon the mixture into a freezer-safe 9-by-5-inch loaf pan or 2-quart baking dish. Cover with plastic wrap and freeze until firm and scoopable, at least 6 hours or overnight. Let soften about 20 minutes at room temperature before scooping.
MANGO LASSI ICE
I set out to make something more like a sherbet, a mango lassi ice. I calculated the amount of sweetening needed for the right texture and flavor in a blend of buttermilk and mango. As a general rule, the sugar in fruit ice should be 15 to 20 percent of the weight of the fruit. This time, I used honey instead of sugar. The result is a creamy, tangy sherbet.

- Combine all ingredients in a blender and purée until completely smooth. Transfer to a bowl or container and chill overnight in refrigerator.
- Chill a 1-quart container in the freezer while you spin the ice. Remove bowl from refrigerator and blend the mango purée again for 1 to 2 minutes in a blender or with an immersion blender. Add to ice cream maker and spin for about 25 minutes. Transfer to chilled container and freeze for 2 hours or longer to pack.
- Once frozen solid, allow to soften in refrigerator for 30 minutes before serving.

MANGO WITH LIME SUGAR
An interesting combo of hot, sweer and sour that's simple to prepare and a perfect way to end a meal.

- Arrange the mango slices on a serving platter. Put the chillies and a little of the sugar in a mortar and pound to break up the chilli. Add the rest of the sugar, and the zest, and pound to incorporate until the sugar becomes speckled green.
- Sprinkle the sugar over the mango slices and let guests help themselves, with scoops of vanilla ice cream.

- Combine first 3 ingredients in heavy small saucepan. Stir over medium heat until sugar dissolves and mixture boils. Cool syrup slightly.
- Puree mangoes, syrup and lime juice in processor until smooth. Transfer mixture to pie plate. Freeze, stirring occasionally until slushy, about 2 hours. Continue freezing until firm. Let stand 10 minutes at room temperature. Break up into chunks. Return mixture to processor and process until smooth. Serve.
EASY MANGO ICE
Use up over-ripe mangoes with this deliciously refreshing and palate-cleansing fruit ice

- Peel the mango and slice off the flesh. Put into the food processor along with the rest of the ingredients and blend. Pour onto a large shallow tray and freeze overnight (if it is frozen in a deep container it can go a bit too solid).

- To prepare filling:.
- Combine nectar and next 5 ingredients (nectar through eggs) in a large saucepan, stirring with a whisk.
- Bring to a boil over medium heat, stirring constantly. Cook 1 minute, stirring constantly.
- Remove from heat, stir in butter and 2 teaspoons rind.
- Spoon mango mixture into a bowl; place bowl in a large ice-filled bowl for 10 minutes or until mango mixture comes to room temperature, stirring occasionally.
- Remove bowl from ice; spoon mango mixture into prepared crust.
- Cover and chill 8 hours or until firm.
- To prepare meringue:.
- Place egg whites and salt in a large bowl.
- Beat with a mixer at high speed until soft peaks form.
- Combine 1/2 cup sugar and water in a saucepan; bring to boil.
- Cook, without stirring, until candy thermometer registers 238 degrees.
- Pour hot sugar syrup in a thin stream over egg whites, beating at high speed until stiff peaks form.
- Spread meringue over filling; garnish with rind, if desired.

LIME-MANGO SORBET
When making sorbet be sure all ingredients are perfectly chilled before putting them in the ice cream maker. You can leave out the rum, if you like.

Steps:
- Peel off lime zest using a vegetable peeler to create long strands.
- Combine confectioners' sugar, water, and lime zest in a saucepan and bring to a boil. Boil for 5 minutes. Remove from heat and let cool to room temperature, about 30 minutes. Refrigerate simple syrup until completely cold, about 1 hour. Remove and discard lime zest and stir in rum.
- Place mango in a blender; blend until pureed. Chill in the refrigerator.
- Combine mango puree and chilled simple syrup in an ice cream maker and freeze according to manufacturer's instructions until it reaches soft-serve consistency, about 20 minutes. Transfer sorbet to an airtight container and freeze until firm, about 2 hours.
