1 medium onion, chopped
1 green pepper, chopped
15 ounces canned pinto beans, undrained
8 ounces tomato sauce

Steps:

  • In a large skillet, fry up sausage breaking it up in small chunks as it cooks.
  • If needed, drain off excess oil off sausage, leaving 2 tablespoons in the pan with sausage.
  • Add chopped onions and peppers, and sauté until soft and tender.
  • Pour in undrained pinto beans and tomato sauce; simmer for 10 minutes.
  • Serve with cornbread if desired.

1 1/2 pounds pinto beans
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
3 thick-cut slices of bacon, cut into thirds
3 cloves garlic
2 bay leaves
1 medium onion, diced
1 red bell pepper, diced
Kosher salt and freshly ground black pepper

Steps:

  • Put the beans in a large bowl, cover with cold water and let soak overnight.
  • Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

  • Wash and pick over the beans. Cover with six cups water and soak overnight or boil two minutes; remove from the heat, cover and let stand one to two hours. Cook the bacon or salt pork until brown. Add pork to beans. Pour off all but four teaspoons fat from the skillet, add the onion and brown lightly. Add to beans. Add garlic. Mix salt, pepper, mustard, sage and sugar with enough water to form a thin mixture. Add to beans. Add enough water, if needed, to cover beans. Cover and boil gently until tender, about two hours.

3 tablespoons unsalted butter
1/4 cup olive oil
1 small yellow onion, cut into 1/4-inch dice
6 garlic cloves, minced
7 slices apple-smoked bacon, cut into 1/4-inch pieces (about 1 1/3 cups)
4 1/2 cups homemade or low-sodium store-bought chicken stock
8 fresh sage leaves, plus more, coarsely chopped, for garnish

Steps:

  • Place beans in a large bowl, and cover with water by 2 inches. Loosely cover, and soak in the refrigerator overnight.
  • Preheat oven to 375 degrees. Drain beans. Melt butter with oil in a large saucepan over medium-high heat. Reduce heat to medium, and add onion, garlic, and bacon. Cook, stirring occasionally, until bacon is translucent, 4 to 5 minutes.
  • Stir in stock, beans, and sage. Bring to a boil; cover, and transfer to the oven. Bake until beans are tender, about 1 hour 45 minutes. Season with salt and pepper, and garnish with chopped sage.

½ pound bacon
4 serrano peppers

Steps:

  • Place the beans in a large pot with enough water to cover by 3 to 4 inches, and bring to a boil. Remove from heat, and let sit 1 hour. Drain water. Pour in enough fresh water to cover beans by 3 to 4 inches, and bring to a boil. Reduce heat, cover, and simmer 1 hour.
  • Place bacon in a skillet, and cook over medium high heat until evenly brown. Crumble bacon, and transfer, along with grease, to the pot with the beans. Continue to cook beans on low heat for 30 minutes.
  • Place the whole chile peppers into the pot, and continue cooking beans 1 hour, or until tender.

A hearty, delicious vegetarian meal that gets requested frequently by my meat-eating parents! Good with chunky pasta shapes (rigatoni or the like) or just served as a stew in deep dishes with a good bread. Do not substitute dry sage for fresh - the flavor simply does not translate. The cooking time listed is the absolute minimum. The stew's flavor only improves with long slow cooking, but I often throw the meal together in under half an hour. Makes terrific leftovers hot or cold! Derived loosely from a Moosewood cookbook recipe.

2 tablespoons extra virgin olive oil
1 large yellow onion, chopped
3 garlic cloves, minced or 2 tablespoons minced garlic
1 cup carrot, chopped
2 tablespoons fresh sage, minced
28 ounces petite diced tomatoes (undrained)
2 (15 7/8 ounce) cans white beans (cannellini or great northern)
1 1/2 tablespoons fresh lemon juice

Steps:

  • Saute the onion, garlic, and carrots in the olive oil until the onions are translucent. Add in the sage, cook until aromatic.
  • Add the can of tomatoes, heat through.
  • Add the white beans, return to a simmer, and simmer as long as you like (the longer, the yummier, honestly!).
  • Just before serving, stir in the lemon juice.
  • This dish holds up well to slight modifications. I have put in a stalk of celery, diced, with the onions and carrots. I have added a little dried rosemary with the white beans. All quite tasty. For omnivores, this dish is delicious with a few shrimp sauteed in butter and garlic served on top.

2012-01-16 Place dry beans in a colander and rinse well under cold running water. Pour rinsed beans in a pot and cover with about 6 inches of cold water. Let soak overnight. Pour beans back in colander, drain, rinse again, stirring until water runs clear. Place a large pot, filled about half full of water on your stovetop.
