I came up with this bake while on a beach trip with some friends. It turned out so well they fought for the last piece.-Faith Cromwell, San Francisco, CA

18 slices French bread baguette (about 1/2 inch thick)
1-1/2 cups half-and-half cream
1 cup white baking chips, chopped
1 package (8 ounces) cream cheese, softened
1/2 cup 2% milk
8 large eggs
1/4 cup honey
1-1/2 teaspoons almond extract
1 teaspoon ground cinnamon
TOPPING:
1/2 cup butter, melted
1/2 cup packed brown sugar
3 tablespoons honey
1 teaspoon ground cinnamon
3/4 cup pistachios, toasted and finely chopped
1/4 cup white baking chips, chopped

Steps:

  • Arrange bread in two shingled rows in a greased 13x9-in. baking dish. In a microwave-safe bowl, combine cream and baking chips. Microwave, covered, on high for 4-5 minutes or until chips are melted, stirring occasionally. In a large bowl, beat cream cheese and milk until smooth. Whisk in eggs, honey, extract and cinnamon until blended. Stir in cream mixture; pour over bread. Refrigerate, covered, several hours or overnight. , Preheat oven to 350°. Remove French toast from refrigerator while oven heats. For topping, in a small bowl, combine butter, brown sugar, honey and cinnamon. Stir in pistachios and baking chips. Sprinkle over bread slices. , Bake, covered, 40 minutes or until a knife inserted in the center comes out clean. Uncover; bake 10-15 minutes longer or until golden brown. Let stand 10 minutes before serving.

Steps:

  • Heat oven to 350°F. Spread cheese on each bread slice. Place in single layer in ungreased 15x10x1-inch pan. Sprinkle nuts over cheese.
  • Bake 10 to 12 minutes or until edges of bread are light golden.
  • Drizzle honey over top of each toast. Garnish with basil.

10 tablespoons unsalted butter, plus more for greasing
¾ cup almond flour
2 tablespoons almond flour
¾ cup all-purpose flour
1 cup confectioners' sugar
2 tablespoons confectioners' sugar
¾ cup demerara sugar
¼ cup unsweetened cocoa powder
½ teaspoon baking powder
5 large egg whites
⅓ cup chopped pistachios, or more to taste

Steps:

  • Preheat the oven to 320 degrees F (160 degrees C). Grease 12 small cake moulds well with butter.
  • Melt 10 tablespoons butter in a saucepan until it becomes golden over medium-low heat. Remove from heat and let cool.
  • Combine almond flour, all-purpose flour, confectioners' sugar, demerara sugar, cocoa powder, and baking powder in a bowl; stir together until well combined. Add unwhipped egg whites and mix until well combined. Add melted butter and pistachios. Pour batter into the prepared moulds.
  • Bake in the preheated oven until a toothpick inserted into the center of the friands comes out clean, 30 to 35 minutes. Bon appetit!

6 slices Italian bread (preferably a day old) or 6 slices French bread, cut diagonally 1-inch thick (preferably a day old)
3 ounces semisweet chocolate or 3 ounces dark chocolate
6 teaspoons unsalted pistachio nuts, chopped
3 large eggs
3/4 cup milk
2 tablespoons sugar
1 teaspoon vanilla extract
1/8 teaspoon nutmeg, ground
1/4 cup butter (1/2 stick) or 1/4 cup margarine (1/2 stick)
1/4 cup confectioners' sugar

Steps:

  • With a serrated knife, cut a pocket horizontally in each slice o f bread through the top crust. Cut the candy bar into 6 rectangles.
  • Fill each bread slice with a piece of chocolate and 1 teaspoon pistachios.
  • In a shallow dish or pie plate, whisk together the eggs, milk, sugar, vanilla, and nutmeg.
  • On a griddle or in a large skillet over medium heat, melt and spread 1 tablespoon butter.
  • Dip the filled bread slices, one at a time, into the egg mixture, turning to coat both sides and being careful not to squeeze out the chocolate filling.
  • Cook the slices, several at a time, on the hot griddle until they are browned on both sides.
  • Add more butter as needed.
  • Transfer the French toast to heated plates and dust with confectioners' sugar just before serving.

This version of a very common American breakfast, made into a casserole, using an Italian sweet bread baked for the holidays, is definitely something to be happy about! Soak your casserole overnight to achieve best results.... you want the bread to be completely saturated in the custard so that it gets light and fluffy in the oven. Covering the casserole during the last bit of baking time ensures no overbrowning. Serve with warm maple syrup.

1 (8 ounce) package cream cheese, softened
½ cup packed light brown sugar
1 teaspoon vanilla extract
¼ teaspoon kosher salt
8 large eggs
2 cups whole milk
2 cups heavy cream, divided
cooking spray
1 (26.5 ounce) loaf panettone
2 tablespoons salted butter, melted
1 tablespoon white sugar
1 (6 ounce) container fresh raspberries
½ cup toasted sliced almonds
1 tablespoon powdered sugar

Steps:

  • Place cream cheese and brown sugar in a stand mixer fitted with the paddle attachment; beat at medium speed until smooth and creamy. Beat in vanilla and salt until well incorporated. Add eggs one at a time, beating until well blended. Gradually add milk and 1 cup cream, beating at low speed, until well incorporated.
  • Lightly grease a 9x13-inch baking dish with cooking spray.
  • Cut panettone loaf into 1/2-inch-thick slices. Arrange slices in 2 or 3 rows, overlapping slightly, starting from a short end of the baking dish.
  • Pour cream cheese-egg mixture evenly over the panettone slices, gently shaking the baking dish to evenly distribute the liquid. Cover with aluminum foil and refrigerate, 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Uncover the baking dish. Brush melted butter over the casserole; sprinkle with sugar.
  • Bake in the preheated oven for 30 minutes. Rotate the baking dish 180 degrees and continue baking until the custard is set in the center, about 30 minutes more. Cover with foil during the last 10 minutes of baking to prevent overbrowning, if necessary.
  • Meanwhile, beat remaining heavy cream and powdered sugar in a medium bowl using a hand mixer on high speed until semi-firm peaks form, 2 to 3 minutes. Serve casserole warm with whipped cream, raspberries, and almonds.
