PITTSBURGH SALAD
A hearty salad that originated in Pittsburgh, it's unique spin on the leafy dish features grilled chicken or steak and a heaping helping of crispy French fries.

Steps:
- Cook the french fries according to package directions, making sure to double, triple, quadruple the amount for the number of desired salads.
- Place the desired amount of lettuce into a large, shallow bowl or onto a large plate. Add a handful of tomatoes. Place your grilled chicken, or steak, on top in the center.
- After cooking, let the fries cool so that they're warm but no longer actually hot. Spread the fries out over the assembled salad.
- Sprinkle with the desired amount of cheese, we usually use 1/4 cup per salad. Drizzle with ranch dressing.
- Repeat as many times as necessary for the number of salads required.

- Microwave SMART ONES as directed on package.
- Meanwhile, mix yogurt and dressing mix until blended.
- Toss lettuce with cucumbers and tomatoes in medium bowl. Cut SMART ONES into 1/2-inch pieces; spoon over salad. Drizzle with yogurt mixture.

- For the dressing: In a small bowl, whisk together the vinegar, mustard salt and pepper. Next, slowly drizzle in the oil until smooth and emulsified.
- For the salad: Peel and clean the exterior of the lettuce head, then from top to bottom, slice and quarter the lettuce. Next, over medium-high heat, add grapeseed oil to a saute pan and allow to warm. Sprinkle both sides of each medallion with the salt and pepper, and then add the medallions to the pan. Allow the medallion to cook, in batches if needed, for 2 to 3 minutes on the first side, and then flip and repeat the process. After cooking the second side, remove and allow the medallions to rest. To build the salad, lay the lettuce on plate, and then add the tomato, onion, blue cheese and 2 ounces of dressing and serve.
STEAK 'N' FRIES SALAD
I lived in Pittsburgh for 5 years and never would have thought I'd ever see French fries in a salad. You will probably only see this recipe in Pittsburgh restaurants which makes it special and unique! It's very delicious. Add your favorite dressing.

- Rub sirloin steaks with vegetable oil and season with salt and pepper. Let the steaks warm at room temperature for 30 minutes.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet with cooking spray.
- Spread French fries onto the prepared baking sheet.
- Bake French fries in the preheated oven until slightly browned, about 15 minutes.
- While the fries bake, cook steaks on preheated grill until beginning to firm and are hot and slightly pink in the center, 6 to 8 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Remove steaks to a cutting board.
- Mix romaine lettuce, cucumber, and egg together in a salad bowl. Pile French fries atop the salad mixture.
- Cut steaks into bite-size pieces and arrange atop the French fries. Sprinkle croutons and mozzarella cheese over the entire salad.

Steps:
- Make the slaw by mixing together the cabbage, 2 tablespoons of vegetable oil, the vinegar, sugar, adobo seasoning, and black pepper until thoroughly combined. Cover and refrigerate.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Cut the potatoes into 1/4-inch thick fries, and fry until they float and are golden brown, 4 to 5 minutes. Set the fries aside.
- Preheat oven to 225 degrees F (110 degrees C).
- Place the bread on a baking sheet, and toast to a light brown in the preheated oven, 3 to 5 minutes. Remove half the bread slices. Place 1/4 of the pastrami on the remaining 4 bread slices, and top with provolone cheese. Return to the oven until the pastrami is hot and the cheese is melted, about 5 more minutes.
- To assemble, top the melted cheese of each sandwich with French fries, cole slaw, 2 tomato slices, and the top pieces of bread.
