2 lbs. ground pork
2 eggs
2 Tbl. Nutritional Yeast
1 Tbl. Italian seasoning
1 1/2 tsp. sea salt
½ tsp. red chili flakes
½ cup parmesan, shredded
½ cup pepperoni, diced, small
¾ cup bread crumbs, or crushed saltine crackers
1 scoop (1/4 cup) bone broth protein powder, optional
½ cup ricotta cheese
1/4 cup extra virgin olive oil
1 (28 oz.+) jar marinara sauce

Steps:

  • In a large bowl, add the ground pork and eggs. Blend together with your hands.
  • Add the nutritional yeast, Italian seasoning, salt and red chili flakes. Work into the meat.
  • Separately add the parmesan, peperoni, bread crumbs, protein powder and ricotta cheese. After adding each blend well.
  • Roll into small meatballs. Place on a parchment paper lined cookie sheet. Drizzle meatballs with olive oil.
  • Bake in a preheated 400 oven about 16 to 19 minutes. If you want to brown the meatballs, turn to broil for about 5 minutes. Meatballs should be about 12-18" from the broiler. This is totally optional.
  • Remove the meatballs and place in the warm marinara sauce on the stovetop.
  • Turn heat to medium low and let the meatballs simmer in the sauce for about 30 minutes. Ready to serve.

1 recipe Italian-American Meatballs in Red Sauce , prepared through step 5, including sauce
5 tablespoons (75ml) extra-virgin olive oil, divided
1 medium bunch fresh basil leaves, divided
1 recipe New York-Style Pizza Dough , divided into 3 balls, proofed, and ready to stretch and top
1 pound grated full-fat dry mozzarella cheese (450g; about 4 cups)
Kosher salt
1 1/2 ounces (45g) finely grated Pecorino Romano or Parmesan cheese

Steps:

  • Set aside 1/2 cup meatball mixture. Form remaining mixture into small balls, roughly 3/4 inch in diameter. Set aside on a plate in the refrigerator.
  • Place a Baking Steel on the top rack of the oven directly under the broiler and preheat oven to its highest possible temperature.
  • Heat 2 tablespoons (30ml) oil in a medium saucepan over high heat until shimmering. Add reserved meatball mixture and cook, breaking mixture up with a spoon, until lightly browned, about 3 minutes. Add sauce and half of basil, stir to combine, and bring to a simmer.
  • Add meatballs, dropping them into the simmering sauce one at a time. Cook, without moving, until meatballs are starting to set, about 2 minutes. Carefully turn meatballs in sauce and continue to cook, stirring gently and occasionally, until meatballs are fully cooked, about 3 more minutes.
  • Using a slotted spoon, transfer meatballs to a bowl or plate, taking along as little sauce as possible. Discard cooked basil.
  • Turn a single dough ball out onto a lightly floured surface. Gently press out dough into a rough 8-inch circle, leaving the outer 1 inch higher than the rest. Gently stretch dough by draping over knuckles, forming a 12- to 14-inch circle about 1/4 inch thick. Transfer to a pizza peel.
  • Switch broiler on high. Spread approximately 2/3 cup sauce evenly over surface of crust, leaving a 1/2- to 1-inch border. Evenly spread one-third of cheese over sauce. Add one-third of meatballs. Drizzle with 1 tablespoon (15ml) olive oil and sprinkle with remaining basil leaves and salt. Slide pizza onto Baking Steel and bake until cheese is melted, with some browned spots, and crust is golden brown and puffed, 3 to 5 minutes. Transfer to a cutting board, sprinkle with 1/2 ounce Romano or Parmesan cheese, slice, and serve immediately.
  • Repeat steps 6 and 7 with remaining 2 dough balls, remaining sauce, cheese, meatballs, basil leaves, oil, salt, and Romano or Parmesan.

Steps:

  • Preheat oven to 350 degrees. Line a flat baking sheet with parchment paper.
  • In a large bowl add ground beef, onion powder, egg, bread crumbs, garlic, Worcestershire, salt, pepper, couple dashes of Italian seasoning. Mix thoroughly. Shape into 1-inch balls. Push in to the mixture a cube of cheese. Reshape the meatball. Place on lined baking sheet. Do this until all of the meatballs have been formed.
  • Bake in the oven until browned, about 15 to 20 minutes. If the cheese cube that was used is too big it will melt out of the meatball.
  • In a slow cooker, on medium heat add the tomato sauce, crushed tomatoes, Italian seasonings (to taste) onion, and garlic. Keep hot while the meatballs cook. Add the meatballs once they are done cooking. Serve with toothpicks. The sauce can be heated on stove top.

1 pound ground sirloin
1/2 pound ground pork
1/2 pound ground veal
1 3/4 cups dry seasoned bread crumbs
1/2 cup freshly ground Italian Pecorino cheese (2 ounces)
1/2 cup freshly ground Italian Parmesan cheese (2 ounces), plus extra for serving
2 garlic cloves, minced
2 tablespoons chopped fresh parsley leaves
Kosher salt and freshly ground black pepper
2 extra-large eggs, lightly beaten
3/4 cup dry red wine, such as Chianti
1/4 cup good olive oil
2 (32-ounce) jars good marinara sauce, such as Rao's
Creamy Parmesan Polenta (recipe follows) or cooked spaghetti, for serving
4 cups chicken stock, preferably homemade
2 teaspoons minced garlic (2 cloves)
1 cup yellow cornmeal, preferably stone-ground
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan cheese, plus extra for serving
1/2 cup creme fraiche
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Preheat the oven to 400 degrees F. Line two sheet pans with parchment paper.
  • Place the sirloin, pork, and veal in a large mixing bowl and lightly break up the meats with a fork and your fingertips. Add the bread crumbs, Pecorino, Parmesan, garlic, parsley, 2 teaspoons salt, and 1/2 teaspoon black pepper. Add the eggs, wine, and 3/4 cup water and combine lightly but thoroughly.
  • Measure out 2-ounce portions of the mixture (I use a rounded 1 3/4-inch ice cream scoop) and roll each lightly into a ball. Place one inch apart on the prepared sheet pans. Brush the meatballs with the olive oil.
  • Bake the meatballs for 25 to 30 minutes, until lightly browned. Pour the marinara into a large pot and bring to a simmer. Carefully add the meatballs and simmer for 10 minutes, until heated through.
  • To serve with polenta, spoon a puddle of creamy Parmesan polenta on one side of each dinner plate. Spoon 1 or 2 meatballs plus a puddle of tomato sauce on the other side, allowing them to combine in the center of the plate. To serve with spaghetti, distribute among shallow pasta bowls. Spoon the meatballs and sauce onto the pasta. Sprinkle with extra Parmesan and serve hot.
  • Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.

1 teaspoon Worcestershire sauce

Italian seasoning (marjoram, thyme, rosemary, savory, sage, oregano, and basil)
8 ounces mozzarella cheese, cut into 1/4-inch cubes
2 or 3 (15-ounce) cans tomato sauce
1 (15-ounce) can crushed tomatoes
Italian seasoning, to taste
1 chopped medium onion
1 1/2 teaspoons fresh chopped garlic

Steps:

  • Preheat oven to 350 degrees. Line a flat baking sheet with parchment paper. Square pizzas are great for anyone who doesn't have a pizza stone: We are going to stretch the dough over a greased baking sheet, then let the dough rise again before topping it with homemade meatballs and a roasted pepper honey.

1 large red bell pepper
1/2 cup honey
2 tablespoons extra-virgin olive oil
1/2 teaspoon crushed red pepper flakes, optional
Kosher salt
2 teaspoons olive oil, plus more for drizzling
One 18-ounce ball pizza dough, at room temperature
1/2 cup marinara sauce, at room temperature
3 to 4 ounces low-moisture mozzarella, sliced
6 medium fully cooked and cooled meatballs, recipe follows
8 leaves fresh basil, roughly torn
5 tablespoons finely grated Pecorino Romano
1 tablespoon Sicilian (or regular dried) oregano
4 to 5 slices white bread (about 5 ounces), torn into small chunks
1/2 cup whole milk
Kosher salt and freshly ground black pepper
4 ounces ground beef
4 ounces ground pork
4 ounces ground veal
2 to 4 ounces freshly grated pecorino
3 cloves garlic, grated
1 large egg
1/2 bunch fresh parsley, chopped (about 1/2 cup)
1/4 cup olive oil

Steps:

  • Preheat the oven to 500 degrees F.
  • For the pizza: Grease the bottom of a 13-by-9-inch rimmed baking sheet with the oil. Use your fingers to spread and stretch the dough super thin to fill the baking sheet. Cover with a clean towel or plastic wrap and let sit at room temperature until the dough is slightly puffed, about 1 hour.
  • For the roasted pepper honey: Place the pepper over an open flame over high heat. Roast, using tongs to turn on all sides, until completely black, 2 to 3 minutes per side. Transfer the pepper to a paper bag (or to a large bowl covered with plastic), fold the bag closed and steam, about 10 minutes. Transfer the pepper to a cutting board, cut in half and scrape out and discard the seeds. Turn the pepper over and use a kitchen towel to wipe the charred skin from the outside (do not rinse). Add the pepper, honey, oil, crushed red pepper flakes if using and salt to taste to a blender and blend until smooth. Set aside or keep in a glass jar with a lid in the refrigerator up to 2 weeks. Makes about 1 cup.
  • Gently spread the tomato sauce on top of the dough, then top with the mozzarella. Break the meatballs into small pieces and layer on top of the pizza. Sprinkle with half the basil and drizzle with olive oil. Top with half the pecorino and the oregano.
  • Bake until crisped and browned, 4 to 5 minutes. Remove the baking sheet from the oven and place it on the stove over medium heat to gently fry the bottom of the pizza until crisp, 1 to 2 minutes. Sprinkle with the remaining basil and drizzle with about 1 tablespoon of the roasted pepper honey and additional olive oil. Sprinkle with the remaining pecorino, slice the hot pizza and serve immediately.
  • Combine the bread, milk and pepper to taste in a large bowl and mix with your hands until a paste forms. Add the beef, pork, veal, pecorino, garlic, egg, parsley and a pinch each salt and pepper, then use your hands to gently combine.
  • Heat 2 tablespoons of the oil in a large skillet over medium heat. Scoop about six 1-inch chunks of the meatball mixture into the skillet and cook, turning occasionally, until all sides are browned, 6 to 7 minutes total. Use a slotted spoon to transfer the meatballs to a kitchen towel or plate and let cool completely, about 1 hour.
  • Repeat with the remaining oil and meatball mixture or freeze: Arrange the remaining uncooked meatballs in a single layer on a baking sheet and freeze until solid. Transfer the frozen uncooked meatballs to a freezer bag or freezer-safe container and store up to 2 months. Makes 20 meatballs.

A very easy recipe from "Taste of Home". Each meatball is stuffed with a cube of mozarella cheese. Kids love these! I usually brown them the day before I serve them and put on low in the crockpot for several hours with the pizza sauce.

2 cups Italian seasoned breadcrumbs
1 cup milk
1/4 cup dried onion flakes
2 teaspoons garlic salt
1/4 teaspoon pepper
1 (8 ounce) package mozzarella cheese
1/3 cup flour
1/4 cup cooking oil
2 (28 ounce) jars pizza sauce

Steps:

  • In a bowl, combine first 6 ingredients just until mixed.
  • Shape into 48 small balls.
  • Cut cheese into 48 cubes 1/2 inch each.
  • Push cheese cube in center of each meatball, making sure cheese is covered completely.
  • Roll lightly in flour.
  • In a large skillet, cook in oil till browned; drain.
  • Add pizza sauce-bring to a boil.
  • Reduce heat, cover and simmer for 25-30 minutes or until meat is no longer pink.

MAMA IULIUCCI'S FAMOUS MEAT-A-BALLS (ITALIAN MEATBALLS)

Here it is, my mom's FAMOUS Meatball recipe! This is THEE most requested of her for anything, anywhere! Whenever there is a shower, birthday, christening, etc., someone is asking for 150 to 200 of her famous meatballs. :) Of course, she always says yes! She is not one for "exact" measurements (a little of this, a dash of that), so I tried the best I could to adapt her recipe. Of course, these are best served with My Mama Iuliucci's "Don't Skip a Step" Spaghetti Sauce recipe #26947, but I have used jazzed-up jarred sauce and they are still great. However, meat-a-balls like these deserve a homemade sauce, in my humble opinion!

2 lbs lean ground beef
8 -10 slices white bread, broken into small 1/2 inch pieces (or you can use rolls or any stale bread you have and want to use up)
2 eggs, slightly beaten
1/2 teaspoon garlic powder (or to taste)
1 teaspoon italian seasoning (or to taste)
2 teaspoons parsley flakes (or to taste)
1/4-1/2 cup grated parmesan cheese (or Locatelli)
1 -2 teaspoon salt
1/4-1/2 teaspoon black pepper
olive oil (for frying) or vegetable oil (for frying)

Steps:

  • Mix all ingredients gently in a large bowl until well combined.
  • Roll meatballs 1 1/2- 1 3/4" in diameter.
  • Heat about 1/4" of oil over medium heat in a large frying pan.
  • Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.
  • Drop meatballs in your favorite sauce (I highly recommend My Mama Iuliucci's"Don't Skip a Step" Spaghetti Sauce recipe#26947) and let simmer for awhile to flavor sauce or just serve with your favorite pasta and sauce.
  • Tip: You can also bake or broil these if the frying part is too much of a hassle-- I use my broiler pan if I bake them, so the fat drips down and away from the meatballs.
