Planked salmon is a method of cooking and smoking salmon that has been used for many years. Make sure to use natural (no preservatives) red cedar. The salmon is slow cooked, which produces a rich, smoky flavor. Guests enjoy the wonderful taste of this specially prepared salmon.

24x8x1 inch untreated cedar plank
6 (4 ounce) fillets salmon
½ cup extra virgin olive oil
1 large red onion, chopped
1 lemon, sliced
½ tablespoon black peppercorns, crushed

Steps:

  • Submerge untreated cedar plank in water. Soak approximately 12 hours, or overnight.
  • Preheat an outdoor grill for high heat. Place prepared plank on the grill, and sprinkle with coarse salt. Cover grill and heat plank 2 to 3 minutes, until dry. Adjust grill temperature for medium heat.
  • Rub salmon filets with olive oil. Arrange on the plank. Top salmon with red onion, lemon slices and black peppercorns.
  • Cook salmon, covered, 10 to 12 minutes, or until opaque and easily flaked with a fork.

2 cups pinot noir wine
1 medium tomatoes, peeled, seeded, and chopped
3 tablespoons balsamic vinegar
1 shallot, minced
1 garlic clove, minced
1 cup chicken stock
3 tablespoons butter, cut into 1/2-inch dice
1 1/2 lbs salmon fillets, cut into 4 portions
1 tablespoon olive oil
kosher salt
fresh ground pepper

Steps:

  • Combine the wine, tomato, vinegar, shallot and garlic in a medium saucepan. Bring to a boil over medium-high heat. Cook until reduced by half, about 20 minutes.
  • Add the stock and bring to a boil. Cook until reduced by half, about 10 minutes. Remove from the heat and whisk in the butter.
  • Brush the salmon with the oil and sprinkle with the salt and pepper. Heat a large nonstick skillet over medium heat.
  • Add the salmon and cook until browned on both sides, about 6 minutes per side.
  • Transfer to a serving dish and top with the Pinot Noir sauce.

2 cups pinot noir (optional)
1 tablespoon packed light brown sugar
2 teaspoons grated lemon zest
2 teaspoons finely chopped fresh rosemary
Kosher salt and coarsely ground pepper
1 large side of salmon (3 to 3 1/2 pounds), skin on
Chopped fresh parsley, for topping

Steps:

  • Depending on the size of your salmon, put 1 or 2 cedar grilling planks (about 15 inches each) in a large dish or roasting pan (it?s OK if they overlap). Pour in the wine, then add enough water to cover (if not using wine, just use all water). Weight the plank down with a heavy pot so it is submerged. Let soak at least 2 hours, flipping it over halfway.
  • About 30 minutes before cooking, preheat a grill to medium (if your grill has a thermometer, it should register about 375 degrees F). Combine the brown sugar, lemon zest, rosemary, 4 teaspoons salt and 2 teaspoons pepper in a small bowl. Remove any pin bones or belly fat from the salmon. Rub the salt mixture all over the flesh side of the fish. Transfer to a baking sheet, loosely cover and refrigerate 30 minutes.
  • Drain the cedar plank and arrange on the grill. Place the salmon skin-side down on the plank (if your salmon is large, you?ll need to put 2 planks side by side); cover and grill until just cooked through, 12 to 18 minutes, depending on the thickness. Transfer the plank to a board and top the salmon with parsley.

  • Preheat oven to 400°F. Heat 4 teaspoons oil in a medium saucepan over medium-high. Add mushrooms and shallots; cook, stirring often, until shallots are softened, about 3 minutes. Stir in wine, 2 tarragon sprigs, 2 thyme sprigs, and 2 fennel sprigs. Return mixture to a simmer over medium-high, and cook until wine is reduced by half, 4 to 5 minutes. Stir in stock and cream, and return to a simmer. Cook, stirring occasionally, until reduced to about 2/3 cup, 18 to 22 minutes.
  • Remove sauce from heat, and gradually whisk in 1/2 cup butter. (You may need to return saucepan to heat briefly to melt butter; do not let mixture come to a simmer or sauce will break.) Pour sauce through a fine wire-mesh strainer into a small heatproof bowl; discard solids. Stir in lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper; cover to keep warm.
  • Season tops of salmon fillets with remaining 1 1/4 teaspoons salt and remaining 1/2 teaspoon pepper. Heat 1 tablespoon oil in a large nonstick or cast-iron skillet over medium-high. Add 5 salmon fillets, flesh sides down, and sear until lightly browned, about 1 minute. Flip fillets, and sear until skin is lightly browned, about 1 minute. Transfer cooked fillets, skin sides down, to an aluminum foil–lined rimmed baking sheet, spacing fillets 1/2 inch apart. Wipe skillet clean, and repeat process with remaining 1 tablespoon oil and remaining 5 salmon fillets.
  • Top fillets with remaining 1/2 cup cubed butter, remaining 8 tarragon sprigs, remaining 8 thyme sprigs, and remaining 8 fennel sprigs. Bake in preheated oven to desired degree of doneness, 6 to 8 minutes for medium.
