PLUM SAUCE RECIPE USING DRIED PLUMS



Plum Sauce Recipe Using Dried Plums image

Learn how to make a plum sauce with this easy recipe. Using dried plums gives this sauce an especially rich flavor.

1 1/2 cups prunes
1/2 to 1 cup water
1/3 cup red onion (chopped)
1/4 cup soy sauce
1/4 cup honey
3 tablespoons rice vinegar (or apple cider vinegar)
3 cloves garlic (chopped)
1 tablespoon white wine
1 tablespoon ginger (fresh grated)
Optional: 1 teaspoon finely chopped fresh chile pepper
1 small pinch star anise (or cloves; less than 1/8 teaspoon)

Steps:

  • Gather the ingredients.
  • Combine all of the ingredients in a medium size pot. Start out with the smaller (1/2 cup) amount of water. Bring the ingredients to a boil over high heat. Reduce the heat and simmer, stirring occasionally, for 20 minutes.
  • Add additional water only if the sauce starts to stick to the bottom of the pot. Dried plums that were dehydrated at home tend to be drier than their commercial cousins and may require the extra water.
  • Turn off the heat and let the ingredients cool for 10 minutes. Transfer them to a blender or food processor and puree the sauce until smooth. (Alternatively, leave the sauce in the pot and, after the cooling off period, puree it with an immersion blender.)
  • Store the plum sauce in the refrigerator for up to three weeks, or process it in a boiling water bath so that it can be stored in sealed jars at room temperature for a year or more.
  • To can the plum sauce, return it to the pot over medium heat and bring to a boil. Immediately turn off the heat and spoon the sauce into clean quarter or half-pint canning jars. It is not necessary to sterilize the jars for this recipe. Leave 1/2-inch of headspace between the surface of the food and the rims of the jars.
  • Press down on the center of the sauce with the back of a spoon to release any air bubbles. Wipe the rims of the jars clean with a moist paper or cloth towel (any sauce stuck there could prevent the lids from sealing.) Process the jars of plum sauce in a boiling water bath for 10 minutes (adjust the canning time if you live at a high altitude .)

  • In a blender or food processor, combine pineapple, juice, salted plums, brown sugar, vinegar, preserves, and garlic and process until smooth. Transfer to a small saucepan, and add the crushed red chile peppers. Bring mixture to a boil, reduce the heat, and simmer for 5 minutes, stirring constantly. Remove from heat and use as a dipping sauce for Egg Rolls.

Steps:

  • Quarter the apples and plums, but leave their skins on; core the apples and remove the plum pits. Place the fruit in a 6-to-10-cup rice cooker. Add the apple juice, sugar, cinnamon sticks and butter. Cover and cook on the porridge cycle, or program for 50 minutes.
  • Discard the cinnamon sticks. Stir and mash the fruit with a potato masher to make a chunky sauce. Serve warm or at room temperature.

1/2 cup rice vinegar or 1/2 cup cider vinegar
1 teaspoon coriander, Ground
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1/4 teaspoon clove

Steps:

  • In large heavy saucepan, bring plums, onions, water, ginger and garlic to boil over medium heat; cover, reduce heat to low and simmer, stirring occasionally, until plums and onions are very tender, about 30 minutes.
  • Press through food mill or sieve and return to clean pan; stir in sugar, vinegar, coriander, salt, cinnamon, pepper and cloves.
  • Bring to boil, stirring; reduce heat to low and simmer until mixture reaches consistency of applesauce, about 45 minutes.
  • Fill and seal jars; process in boiling water bath for 30 minutes.

1 small onion, quartered
1 garlic clove, peeled
3-1/2 cups sugar
2 cups cider vinegar

1 teaspoon ground cinnamon
1 teaspoon crushed red pepper flakes
1/2 teaspoon ground cloves

  • In a blender or food processor, process the plums, onion and garlic in batches until smooth. Transfer to a Dutch oven. Stir in the remaining ingredients. Bring to a boil.
