Steps:
- Se sazona el pollo con sal y pimienta y se pone a cocer en una sartén.
- Junto con las papas, se agrega el puré de tomate y el ketchup y se deja cociendo a vapor, revisando que no se pegue.
- Luego volteando los muslos para que se doren por los dos lados y cuando ya estén cocidos muy bien, embarrar cada muslo de pollo con la salsa BBQ y apagar el fuego. Se deja reposar el pollo a la barbiquiu tapado por 5 minutos.Prueba esta receta de salsa barbacoa casera fácil y rápida en lugar de comprarla ya preparada en botella.

- Place chicken in a slow cooker. Combine diced tomatoes with juice, chipotle salsa, and condensed soup in a bowl; pour over chicken. Cover and cook on Low until chicken is no longer pink in the center and the juices run clear, about 6 to 8 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Remove chicken from the sauce, shred, then return to the sauce. Simmer on Low heat for an additional 30 minutes.
- Turn slow cooker off. Stir in sour cream and season with salt.
- Divide rice between 4 plates. Serve chicken and sauce over rice and garnish with Mexican-style cheese and avocado slices.

- Place chicken thighs into a gallon-sized resealable plastic bag. Blend soy sauce, garlic, lime juice, vegetable oil, cumin, paprika, and oregano in a blender until smooth. Pour mixture over chicken, seal the bag, and refrigerate for 8 hours.
- Combine jalapeno peppers, cilantro, mayonnaise, lime juice, olive oil, garlic, salt, and pepper in a blender; pulse until sauce is smooth. Transfer sauce to a covered bowl and refrigerate until ready to serve.
