POLYNESIAN SAUSAGE SUPPER

- In a large skillet, cook the sausage, onion and green pepper until the vegetables are tender., Add the tomatoes, broth, brown sugar, garlic powder and pepper. Drain pineapple, reserving juice. Stir pineapple into sausage mixture. Bring to a boil; cook, uncovered, for 5 minutes., Combine cornstarch and reserved pineapple juice until smooth; gradually add to sausage mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.

HAWAIIAN LOCO MOCO (HEARTY BREAKFAST)
Loco Moco is Hawaii's original homemade fast food and can be found at just about any fast food joint, roadside diner, mom and pop restaurant or lunch wagon in the Islands. There are many different versions of Loco Moco but they have 4 basic ingredients. Rice, a beef patty, sunny-side up egg and gravy. This is for 1 serving so you might want to share - it's a HUGE dish! The cooking time varies depending on if you have to make the rice or gravy from scratch. Enjoy!

- Mix ground beef, 1 egg and onion in a bowl. Grill or cook in a frying pan, until cooked through.

POLYNESIAN BURGERS
Steps:
- Preheat grill to medium-high heat.
- Grate 1 teaspoon zest each from an orange, lemon and lime, and add to a medium saucepan. Juice oranges, lemons and limes into saucepan, reserving 2 tablespoons juice in a small bowl. Add sugar. Stir to combine, adding more sugar to taste, if necessary. Bring to boil. Whisk cornstarch with reserved juice until smooth. Whisk into saucepan, and simmer until mixture is thickened. Set aside.
- Form beef into 6 patties. Season with salt and pepper.
- Grill burgers, along with pineapple, bell peppers and onion slices. Grill burgers, turning once, until cooked to desired doneness, about 5 minutes per side. Cook pineapple, peppers and onions, turning once, until both sides have distinct grill marks and peppers and onions have softened slightly, about 3 to 5 minutes per side.
- To build burgers, place 1 onion slice on the bottom half of bun, followed by burger, pineapple, and peppers. Drizzle with sauce. Place a thin slice of star fruit on top. Serve any additional onion, pineapple, peppers or starfruit on the side as garnish.
HAWAIIAN BACON & PINEAPPLE BREAKFAST BAKE

- In a large bowl, whisk eggs, milk, Worcestershire sauce and mustard until blended. Stir in cheeses, bacon, ham and pineapple. Gently stir in cubed rolls. Transfer to a greased 13x9-in. baking dish. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, uncovered, 35-45 minutes or until golden brown and a knife inserted in the center comes out clean, sprinkling with onions halfway through baking. Let stand 5-10 minutes before cutting.

'OHANA BREAKFAST BREAD
Adapted from a delicious bread served at Disney's Polynesian Resort. Ohana means "family". The pineapple and coconut give it a truly tropical taste! I have found using the food processor makes the dough fool-proof, and I mix my yeast mixture in a large Pyrex measure so it is easier to pour into the processor.

Steps:
- Pineapple/Coconut Procedure.
- Combine drained pineapple and coconut in bowl.
- Combine 1 cup sugar and cornstarch in separate bowl and mix well.
- Add sugar and cornstarch mixture with pineapple/coconut mixture and mix well.
- Refrigerate for 1 hour.
- Bread Procedure.
- Mix water, 1 tbsp sugar (from 1/3 cup), and yeast in small bowl. Let proof for 5 minutes.
- Add egg yolk to yeast mixture.
- Put flour in food processor with bread blade.
- Add salt, butter, and remainder of sugar and process until incorporated.
- While processor is running, slowly add yeast mixture through shoot in top of processor. Process until a soft ball forms and then run processor for about 2 min longer.
- Transfer dough to bowl coated with cooking spray, cover with plastic wrap sprayed with cooking spray and let rise in warm area until it doubles in size. (about 1 hour).
- Roll dough out onto floured surface until it is a 2" thick rectangle.
- Spread the pineapple/coconut mixture over top of dough.
- Fold dough onto itself and cut into pieces with pizza cutter.
- Place pieces into greased 9 x 13 pan to cover.
- Cover pan with plastic wrap coated with cooking spray and let rise in warm place--about 1/2 way up pan.
- Bake at 325°F for 20-25 minutes or until golden brown.
- Let cool, cut and serve.
