Pomegranate Guacamole is a spicy, creamy, fresh as can be guacamole that is likely to turn your idea of what guacamole is supposed to be upside down.

Number Of Ingredients 9

4 tablespoons fresh tomatoes, diced small
2 tablespoons red onion, finely chopped
2 tablespoons fresh cilantro, chopped small
2 tablespoons fresh jalapeno, minced
2 key limes, juiced (about 1 1/2 tablespoons)
2 large avocados, cut into bite-size chunks (about 2 cups worth)
1/4 - 1/2 teaspoon kosher salt, adjust to taste
1/4 - 1/2 teaspoon freshly ground black pepper, adjust to taste
2 tablespoons fresh pomegranate seeds (a.k.a. pomegranate arils)

Steps:

  • Combine the tomatoes, onion, cilantro, jalapeno, lime juice, and avocado in a medium-size mixing bowl. Use a potato masher or a fork to smash the avocado, feel free to leave a few smaller chunks in the mix.
  • Sprinkle with 1/4 teaspoon each of salt and pepper. Stir to combine. Taste and add additional salt and pepper to taste. Add the pomegranate seeds.
  • Serve with tortilla chips or crackers. Store the guacamole in an airtight container in the refrigerator for up to 2 days. Enjoy!

3 ripe avacados
1 c tomatoes, diced
1 1/8 c red onion, diced
1 clove garlic, minced
1/2 c cilantro, fresh, rough chopped
2-3 Tbsp lime juice, fresh
2 oz feta cheese, crumbled
kosher salt and freshly ground black pepper to taste

Steps:

  • 1. Remove avocado skin and stone and place in a bowl. Mash avocados.
  • 2. Add small diced tomato, onion, garlic and cilantro. Season with salt and gently mix until all nicely incorporated.
  • 3. Add Feta Cheese and gently mix again. Reserve some of the Feta Cheese to sprinkle on top.
  • 4. Serve with your favorite chips! Super easy and delicious, don't you think??!!

1/2 small white onion, finely chopped
1 serrano chile, finely diced
3 ripe avocados
1/4 cup finely chopped fresh cilantro
1 1/4 teaspoons kosher salt
Juice of 2 limes
1 large clove garlic, minced
Seeds from 1/2 medium pomegranate (about 1/2 cup)

Steps:

  • In a medium bowl add the onion and the chile. Split the avocados in half and remove the pits. Scoop the avocados into the bowl along with the cilantro, salt, lime juice and garlic. Mash everything together, and then fold in the pomegranate seeds.

  • To ensure that the onion flavor doesn’t overpower the guacamole, rinse the chopped onion under running water (I used a fine mesh colander). Pat the onion dry with a paper towel.
  • Add the onion, chopped cilantro and jalapeño to the bowl and mix well. Gently stir in 1/2 of the pomegranate arils. For extra presentation points, transfer the guacamole to an appropriately sized serving bowl now. Sprinkle remaining pomegranate arils over guacamole, along with some additional chopped cilantro and totally optional feta, if you’d like. Serve immediately.
