POOR MAN'S BEER BATTER FISH

This is a SUPER EASY AND FAST not to mention CHEAP and NO MESS way to make a beer batter for your fresh fish while camping. Using only beer, your freshly caught fish, some oil for your skillet, and shake and pour buttermilk pancake mix containers found in your local supermarket. Great for camping!

1 cup beer, or as needed
1 (7 ounce) container shake and pour buttermilk pancake mix
2 pounds trout fillets
½ cup oil for frying

Steps:

  • Heat oil in a large skillet over medium heat.
  • Pour beer into the pancake mix container in place of the water it calls for. Make the batter as thick or thin as you prefer. Close the lid, give it a few shakes, and boom it's done.
  • Dip fish into the batter using a pair of tongs, or if you want to dirty a dish, pour the batter in a bowl first. If you cut your fish into smaller pieces, you can toss them into the container, close the lid and shake it a couple of times, then carefully remove the coated pieces.
  • Remove the fish from the batter using tongs, and place into the hot oil. Fry the fish until golden brown on both sides, 3 to 4 minutes per side.

This is not a low fat dish, but it is absolutely delicious considering how relatively simple it is to prepare. The slow cooking and the ingredients make the beef come out very tender and with a rich hearty flavor that melts in your mouth. In my opinion this dish is well worth every bit of the work it takes to make it.

3 lbs beef, cut to large pieces
4 -5 tablespoons flour (enough to fry beef)
6 cups onions, chopped coarsely
8 carrots, peeled and sliced coarsely
6 -8 garlic cloves, peeled and crashed
2 1/2 tablespoons sugar
2 1/2 tablespoons vinegar
salt and pepper (to taste)
4 tablespoons oil (for frying, more or less as needed)
3 (12 ounce) cans beer (light or regular)

Steps:

  • Coat beef in flour. Discard any unused flour if any.
  • Fry floured beef in skillet in medium hot oil on each side until nice and browned.
  • Remove beef and arrange it evenly across the bottom of a deep metal or glass casserole pan.
  • Reheat the skillet where there are still pan drippings after frying the beef.
  • Fry onions until transparent.
  • Remove onions and distribute over beef in casserole dish.
  • Slice raw (peeled or unpeeled) carrots and raw garlic cloves rough sliced, over top of the fried beef/ onion in the casserole dish.
  • In a mixing bowl or container, combine remaining ingredients (sugar, vinegar, salt, pepper and beer).
  • Pour beer mixture over beef and vegetables in casserole dish.
  • Bake covered with aluminum foil for 2-3 hours at on medium-low (275 or 300 degrees) until meat is very tender and the other ingredients form a thick, rich sauce around the beef. Slow cooking is what makes this recipe work.
  • The beef comes out very rich, tender and with an amazing, rich beefy flavor. It is delicious served over buttered noodles with parsley, or it can be accompanied by skillet fried potatoes or even french fries.

1 large onion, chopped
4 cloves garlic, minced
1 cup ketchup
½ cup beer
½ cup white vinegar
1 tablespoon Worcestershire sauce
4 drops liquid smoke flavoring
½ teaspoon salt
1 teaspoon ground black pepper
1 ½ teaspoons chili powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ cup brown sugar
4 pounds beef brisket
2 teaspoons cornstarch
2 tablespoons water
16 potato buns, or as needed

Steps:

  • Place the onion and garlic into a large slow cooker. Pour in the ketchup, beer, vinegar, Worcestershire sauce, and liquid smoke; set aside. Combine the salt, pepper, chili powder, paprika, oregano, and brown sugar until evenly blended. Rub the spice mixture all over the beef brisket. Place the brisket into the slow cooker. Sprinkle the remaining spice mixture over top.
  • Cover, and cook on Low until the beef is easily shredded with two forks, 10 to 12 hours.
  • Remove the beef from the slow cooker, and place into a large bowl. Ladle the fat from the remaining sauce in the slow cooker and discard. Pour about 2 cups of the sauce from the slow cooker into a saucepan. Bring to a simmer over medium heat. Dissolve the cornstarch in the water, and stir into the simmering sauce. Cook and stir 5 to 10 minutes until the sauce has thickened. Meanwhile, shred the meat into small pieces using two forks.
  • Pour the thickened sauce and remaining sauce from the slow cooker into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the sauce right in the slow cooker.
  • Stir the shredded beef and pureed sauce together in the slow cooker. Use tongs to serve the beef on the potato buns.
