- In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.

- Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

- Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
- In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
- Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
CRISP EVERYDAY WAFFLES RECIPE

- Heat a waffle iron to medium-high heat. If you're planning to serve the waffles all at once, place a metal rack in a rimmed baking sheet and place in the oven. Heat the oven to 200 degrees.
- Whisk the flour, sugar, baking powder and salt in a large bowl. Place the butter in a large liquid measuring cup if you have one or another bowl if not. Microwave in 20-second increments until melted. Whisk in the oil until emulsified and smooth, then whisk in the milk and eggs until very smooth.
- Make a well in the center of the dry ingredients and add the wet ingredients all at once. Fold gently with a silicone spatula just until no traces of flour remain; it's fine for the batter to be lumpy.
- Scoop the batter into the center of the heated waffle iron, adjusting the amount to your machine, then close the iron and cook until golden brown and crisp. Eat immediately or transfer to the prepared pan in the oven to keep crisp and hot.
EVERYDAY WAFFLES
Light and tender inside with crispy golden outer edges, my kids often requested these waffles for "brupper." That is what they'd call it when I'd serve them breakfast food for supper! This well-loved recipe is a classic from Better Homes and Gardens New Cookbook (1976)

- Beat egg whites with an electric hand-mixer until stiff; set aside.
- Combine wet ingredients and beat lightly; combine flour, baking powder, and salt, and stir into wet ingredients.
- Fold in egg whites (without overmixing) so that a few fluffs of egg white remain visible.
- Bake until done in a hot waffle iron that has been very lightly sprayed with no-stick cooking spray.
- NOTE: Any leftover waffles freeze well - Just spread them out on a cookie sheet to IQF (individual quick freeze) each waffle, then store them stacked in a bread bag in the freezer - Remove one or two waffles at a time to pop in the toaster for a a great quick breakfast!

EASY MORNING WAFFLES

- In a large bowl, combine the flour, brown sugar, baking powder, salt and cinnamon. In a small bowl, whisk the egg yolks, milk, oil and vanilla; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle maker according to manufacturer's directions until golden brown., In a microwave, melt the butter, honey and cinnamon; stir until smooth. Serve waffles with syrup. Freeze option: Arrange waffles in a single layer on sheet pans. Freeze overnight or until frozen. Transfer to a freezer container. Pour remaining syrup into a freezer container. Freeze up to 2 months. To use, reheat waffles in a toaster. Microwave syrup until heated through, and serve with waffles.

- In a large mixing bowl, whisk together all dry ingredients.
- Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.
- Beat whites until moderately stiff; set aside.

WAFFLES

Freeze leftovers, if you have any, in Ziplock bags and serve them during the week. You can pop them in the toaster to reheat (use a light setting) and they come out nearly as well as freshly made, maybe even slightly crunchier. For a lighter, fluffier waffle, separate the eggs and proceed with step 2 using the egg yolks. Beat the whites until stiff, then fold into the batter. For whole-grain waffles, use 1 1/3 cup all-purpose flour and 2/3 cup whole-wheat flour. You can also substitute brown sugar for the granulated.
