MINI PIZZA BITES RECIPE BY TASTY

Steps:
- Preheat oven to 425°F (220°C)
- In a large bowl mix marinara sauce, parmesan cheese, pepper, salt, and oregano.
- Lightly oil a 12-cup muffin tin or coat with nonstick spray.
- Lay tortilla on a flat surface. Using an empty can, cut 3-4 medium circles, pressing firmly enough in a rocking motion to cut through the tortilla.
- Fit tortilla circle into each of 12 muffin cup.
- Scoop 1 tablespoon pizza sauce into each muffin cup.
- Sprinkle with mozzarella cheese.
- Top with mini pepperonis.
- Place into oven and bake for 10-12 minutes, or until cheese has melted.
- Serve immediately.
- Enjoy!

EASY CAKE POPS
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Beat cake mix, water, eggs, and vegetable oil together in a bowl using an electric mixer on low speed for 30 seconds; increase speed to medium and beat until batter is smooth, about 2 minutes more. Pour batter into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool cake completely, at least 1 hour.
- Crumble cake into a large bowl and mix in cream cheese. Roll cake mixture into about 40 to 50 quarter-size balls. Insert a lollipop stick into each cake ball and arrange on a baking sheet; refrigerate until chilled, at least 30 minutes.
- Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes.
- Dip each cake ball into melted chocolate until coated. Arrange cake pops on a baking sheet to dry.

Steps:
- Preheat oven to 400º.
- Spray 3 9-inch pie pans with cooking spray.
- On lightly floured surface, roll out one pizza crust and pat into 12x8 rectangle.
- Cut into 24 squares.
- Place one pepperoni slice and one cube of cheese on each dough square. Wrap dough around, pressing to seal.
- Place in pans, seamside down.
- Repeat with remaining dough, pepperoni and cheese.
- Mix together oil and Italian seasoning. Drizzle or brush over rolls.
- Top with grated parmesan.
- Bake at 400º for 16-20 minutes or until golden brown.
- Serve with warmed pizza or marinara sauce.
- To Freeze: Flash freeze on a cookie sheet until frozen solid, label and place in a ziplock bag.
- To Reheat: Microwave approximately 30 seconds or more to heat through.

Steps:
- In a large bowl, combine flour, 1/4 teaspoon salt, yeast, and 1/2 cup water. Stir until blended; dough will be shaggy and rough. Let dough rest in a warm place (about 72 degrees) until doubled in volume, about 3 hours.
- Turn dough out onto a lightly floured work surface and cover with a clean, damp kitchen towel. Let stand until doubled in size, 30 minutes to 1 hour.
- Place a pizza stone on the lowest rack of oven and preheat to 550 degrees for 25 minutes.
- Flatten dough into a disk that is thicker in the center than at the edges. Using your fingers, gently pull on the edges of the dough to form a 6- to 8-inch circle; dough should still be thicker in the center. Drape dough over both hands, and using your knuckles, work dough out from the center into a 12-inch circle.
- Carefully transfer dough to hot pizza stone. Working quickly, top dough with cheeses, pepper, garlic, and spinach; season with salt. Bake pizza until spinach is wilted and slightly browned, about 10 minutes.
- Using a pizza peel, remove pizza from oven and drizzle over olive oil; serve immediately.
PIZZA POPS
These are great to have ready in the freezer for school lunches or snacks. I got this recipe from my church cookbook and have made it several times. I bake mine in the oven instead of deep frying.

Steps:
- Sift together flour, baking powder and salt.
- Cut in the shortening and add milk slowly, stirring constantly to form a soft dough.
- Turn dough out onto a lightly floured surface and knead lightly.
- Roll out to 1/4 inch thick and cut into 4 inch circles.
- Place circles on a plate and cover with a damp cloth.
- In a medium bowl mix tomato sauce, pepperoni, onions and mushrooms.
- Mix well.
- Stir in cheese and oregano until well combined.
- Place 2 T filling in the center of each circle, fold dough over to make a half circle.
- Press the edges tog with fingers.
- Pinch edges with a fork to completely seal.
- Deep fry in hot oil or bake at 400 degF for 15 minutes on well greased cookie sheet.

- Preheat the oven to 425°F (220°C).
- In a blender, combine the eggs, egg whites, milk, and tomato paste. Blend until smooth. Add the oregano, garlic powder, salt, 2 tablespoons of melted butter, and flour and blend on high speed for 2-3 minutes, until completely smooth. Transfer the batter to a liquid measuring cup with a pour spout and let rest at room temperature for 20 minutes.
- Meanwhile, place the popover pan in the oven to preheat.
- After resting, fold ¼ cup (30 g) Parmesan and ¼ cup (35 g) chopped pepperoni into the popover batter.
- Remove the popover pan from the oven and brush ¼ teaspoon melted butter in each cup, then fill ¾ of the way full with batter. Sprinkle with the remaining pepperoni and remaining 1½ tablespoons Parmesan cheese.
- Bake the popovers for 25-30 minutes, or until they appear puffed and dry (do not open the oven door to check).
- Garnish the popovers with basil and serve immediately with warm marinara sauce alongside.
