- Cut each chicken breast into four or five strips.
- Combine the hot sauce and buttermilk in a small bowl.
- Put half of this mixture in with the chicken, reserving the other half.
- Marinate the chicken for at least 30 minutes but not more than an hour or two.
- Combine the flour, chipotle, smoked paprika, and salt.
- Beat the eggs with the other half of the buttermilk mixture.
- Drain the chicken.
- Dip it in the flour mixture.
- Dip it into the egg mixture.
- Dip back into the flour mixture.
- Repeat with all of the chicken.

- Slice chicken breasts into tender size strips.
- In a mixing bowl, whisk together buttermilk and ½ cup hot sauce.
- Add chicken and buttermilk mixture to a large Ziploc bag or storage container and refrigerate for a minimum of 1 hour, up to 2.
- Remove chicken from fridge and dry gently with paper towels, then discard the buttermilk.
- Preheat air fryer to 400 degrees F.
- In a mixing bowl, add flour, seasonings, and salt, then whisk together.
- In a separate mixing bowl, whisk together eggs and ¼ cup hot sauce.
- Dredge strips in flour mixture, then egg mixture, then flour mixture.
- Place strips in air fryer basket, leaving space between each one. Coat each one heavily with cooking oil spray.
- Cook at 400 degrees for 13 to 15 minutes or until a thermometer reads 165 degrees in the thickest part of the strip.
- Serve with your favorite dipping sauces.
