2 tablespoons fresh lemon juice
1 garlic clove (grated)
½ teaspoon coarse kosher salt
¼ teaspoon ground cumin
2 tablespoons or more ice-cold water
¼ cup ketchup
½ tablespoon Worcestershire sauce
½ teaspoon Sriracha (or to taste)
½ cup mayo
1 small garlic cloves (grated)
½ tablespoon lemon juice

Steps:

  • For each dipping sauce, combine the ingredients in a medium bowl and mix well until smooth.
  • Refrigerate for at least 1 hour before serving.

Crispy, spicy chicken tenders are better than the fast food favorite. The meat is tender and juicy and the coating is perfectly crisp and spicy. Deep fryer, skillet, and air fryer instructions included. Because of the hot oil this recipe is not recommended for young cooks. Difficulty level 2/10

2 pounds boneless chicken breasts (cut into strips)
1/3 cup Louisiana style hot sauce
1/2 cup buttermilk
Peanut oil to fill a deep fryer
2/3 cup all purpose flour
2 teaspoons smoked paprika
2 teaspoons kosher salt
1 teaspoon chipotle chile powder
3 eggs

Steps:

  • Cut each chicken breast into four or five strips.
  • Combine the hot sauce and buttermilk in a small bowl.
  • Put half of this mixture in with the chicken, reserving the other half.
  • Marinate the chicken for at least 30 minutes but not more than an hour or two.
  • Combine the flour, chipotle, smoked paprika, and salt.
  • Beat the eggs with the other half of the buttermilk mixture.
  • Drain the chicken.
  • Dip it in the flour mixture.
  • Dip it into the egg mixture.
  • Dip back into the flour mixture.
  • Repeat with all of the chicken.

1 Tbl. whole grain mustard such as Maille's Old Style
1 Tbl. spicy brown mustard such as French's
2 tsp. prepared extra hot horseradish
1/4 tsp. cajun seasoning such as Slap Ya Mama
1/4 tsp. crushed red pepper
1/8 tsp. garlic powder
1/16 tsp. cayenne
2 tsp. packed dark brown sugar (or to taste)

Steps:

  • Add all ingredients into a small bowl and stir to blend well.
  • Pop into fridge and let sit a half an hour or longer to let the flavors blend and the sugar crystals fully dissolve.
  • Stir before serving.

2 pounds chicken breast, skinless and boneless
2 cups buttermilk
½ cup Louisiana style hot sauce + ¼ cup divided
3 large eggs
2 cups self-rising flour
1 tablespoon chili powder
1 tablespoon paprika
½ - 1 teaspoon cayenne pepper
1 tablespoon black pepper
1 teaspoon salt

Steps:

  • Slice chicken breasts into tender size strips.
  • In a mixing bowl, whisk together buttermilk and ½ cup hot sauce.
  • Add chicken and buttermilk mixture to a large Ziploc bag or storage container and refrigerate for a minimum of 1 hour, up to 2.
  • Remove chicken from fridge and dry gently with paper towels, then discard the buttermilk.
  • Preheat air fryer to 400 degrees F.
  • In a mixing bowl, add flour, seasonings, and salt, then whisk together.
  • In a separate mixing bowl, whisk together eggs and ¼ cup hot sauce.
  • Dredge strips in flour mixture, then egg mixture, then flour mixture.
  • Place strips in air fryer basket, leaving space between each one. Coat each one heavily with cooking oil spray.
  • Cook at 400 degrees for 13 to 15 minutes or until a thermometer reads 165 degrees in the thickest part of the strip.
  • Serve with your favorite dipping sauces.
