PROSCIUTTO-WRAPPED PORK TENDERLOIN, PEACH CHUTNEY AND ASPARAGUS



Prosciutto-Wrapped Pork Tenderloin, Peach Chutney and Asparagus image

Kosher salt
One 1-pound pork tenderloin
4 thin slices prosciutto
Olive oil
Two 1/4-inch-thick slices pancetta, diced
1/2 shallot, minced
Kosher salt
1/4 cup bourbon
2 tablespoons brown sugar
2 tablespoons rice wine vinegar
1 tablespoon whole-grain mustard
2 peaches, peeled, pitted and cut into 1/2-inch dice
1 stick cinnamon
Thyme bundle
Olive oil, if needed
1 bunch asparagus, stems removed and discarded

Steps:

  • For the pork: Preheat the oven to 400 degrees F. Sprinkle salt on the pork, then wrap the pork in the prosciutto and secure with toothpicks. Coat a large saute pan with oil and heat over high heat. Sear the pork on all sides, then transfer to a quarter sheet tray and roast for 8 to 10 minutes, turning the pork halfway through cooking. Reserve the saute pan with the drippings for a later use.
  • For the chutney: Heat a large, straight-sided saute pan over medium heat. Add the pancetta and cook to render the fat. Add in the shallots and season with salt, and cook until soft and aromatic, 6 minutes. Add in the bourbon, brown sugar, vinegar, mustard, peaches, cinnamon, thyme bundle and some salt, and stir to combine. Bring to a boil and then reduce to a simmer. Simmer, stirring the peaches frequently until the liquid evaporates and the peaches are a chutney-like consistency, 10 minutes. Check to make sure the peaches are cooked through. Remove and discard the thyme bundle and cinnamon stick. Blend with an immersion blender if needed to achieve the correct consistency.
  • For the asparagus: Return the reserved saute pan to the stove, add some oil if needed. Add the asparagus to the pan and saute until tender.
  • Slice the tenderloin on the bias and serve with the peach chutney and asparagus.

3 tablespoons cider vinegar
2 tablespoons light brown sugar
1 tablespoon unsalted butter
1 1-inch piece peeled fresh ginger, cut into coins
1 teaspoon Madras curry powder
1 cinnamon stick
Kosher salt
Pinch crushed red pepper
3 pears, peeled, cored, and cut in large dice
2 tablespoons dried cranberries
2 tablespoons chopped fresh cilantro
8 thin bone-in pork chops, each about 4 ounces
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil

Steps:

  • For chutney: In medium microwave-safe bowl, stir together shallot, vinegar, brown sugar, butter, ginger, curry powder, cinnamon stick, 1/4 teaspoon salt, and red pepper. Cover and seal with plastic wrap and heat in microwave oven on HIGH for 1 minute. Carefully remove plastic wrap and stir in pears and cranberries. Re-cover and microwave for 10 minutes more. Carefully poke holes in plastic wrap to release steam and set aside.
  • For pork chops: Heat a large skillet over medium-high heat. Pat pork chops dry and season with salt and pepper to taste. Add 1 tablespoon oil to pan and heat until shimmering. Lay 4 chops in pan and sear until golden on one side, about 3 minutes. Turn and cook 1 more minute. Remove from pan; set aside and keep warm. Repeat with remaining oil and chops. Add chutney to pan and, scrape up any brown bits from bottom using a wooden spoon. Simmer until slightly thickened. Stir in cilantro. Serve chops with chutney.

2 large onions, chopped
1 tablespoon vegetable oil
3 large peaches, peeled and cubed
1/2 cup packed brown sugar
1/4 cup sugar
1/4 cup raisins
1 tablespoon molasses
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground allspice
8 tablespoons vinegar, divided
2 tablespoons lemon juice

Steps:

  • In a large skillet, saute onions in oil until tender. Add peaches; cook and stir for 3 minutes. Add sugars, raisins, molasses, salt, pepper, allspice and 5 tablespoons of vinegar; bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes, stirring occasionally. Remove from the heat; stir in lemon juice and remaining vinegar. Serve at room temperature with ham, pork or poultry. Store in the refrigerator for up to 3 weeks.

2 tablespoons spicy brown mustard
PEACH CHUTNEY:
1/4 cup peach preserves
3 tablespoons finely chopped onion
2 tablespoons red wine vinegar
1 small garlic clove, minced
1/4 teaspoon mustard seed
1/8 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon ground cinnamon
Dash cayenne pepper
Dash ground cloves
SANDWICHES:
1/4 cup fat-free mayonnaise
4 onion rolls, split and toasted
4 lettuce leaves

Steps:

  • Brush pork with mustard; place on a rack in a shallow roasting pan. Bake at 425° for 35-40 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing. , Meanwhile, for chutney, in a small saucepan, combine the preserves, onion, vinegar, garlic and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 7-8 minutes or until thickened. Set aside to cool., Spread mayonnaise over roll bottoms. Layer with lettuce, pork slices and chutney. Replace tops.

1/2 cup peach preserves
1 tablespoon cider vinegar
2 teaspoons chopped chives
1/2 cup chopped celery
1 garlic clove, minced
1 tablespoon vegetable oil
1/2 cup chopped mango
1/4 cup dark seedless raisins
1 tablespoon chopped parsley
2 pork tenderloin (3/4 pound each)

Steps:

  • In small bowl, blend mustard, preserves, vinegar and chives.
  • Set aside 1/3 cup mixture for glazing pork tenderloins.
  • In small saucepan, over medium-high heat, saute celery and garlic in oil until tender.
  • Stir in remaining mustard mixture; cook 2 minutes.
  • Remove from heat; cool slightly.
  • Stir in mango, raisins and parsley; set aside.
  • Place tenderloins on rack in roasting pan.
  • Roast pork at 450F for 10 minutes.
  • Reduce to 350F and bake 30 to 35 minutes or until done.
  • Brush pork with reserved mustard mixture during last 15 minutes of roasting.
  • Slice pork and serve with mango chutney.
