ORIGINAL LAUER-KRAUT BURGERS

Original Lauer-Kraut Burgers image

Provided by Food Network

Time 2h10m

Yield 4 to 6 servings

Number Of Ingredients 14

1 3/4 pounds 80/20 ground chuck
1 1/2 yellow onions, chopped into 1/4-inch pieces
2 teaspoons freshly ground black pepper
1 medium head green cabbage, chopped into 1/4-inch pieces
1/2 cup Lauer Kraut (you may substitute bagged sauerkraut, not canned)
Salt
2 tablespoons active dry yeast
1 tablespoon sugar
3/4 cup powdered milk
8 cups all-purpose flour, plus more for dusting
2 teaspoons salt
3/4 cup shortening
3 eggs
1 teaspoon vegetable oil

Steps:

  • For the burger filling: Brown the ground chuck in a large skillet over medium heat, crumbling the meat pretty finely as it browns. Add the chopped onions and 1 teaspoon of the pepper. Cook the onion down a little, 3 to 5 minutes. Add the chopped cabbage, sauerkraut, remaining 1 teaspoon pepper and 1 teaspoon salt. Let the mixture cook, 10 to 15 minutes, depending on how done you like the cabbage. Strain and let cool.
  • For the dough: Put the yeast and sugar in a 4-cup measuring cup and add warm water to the 1-cup mark. Stir together and let sit until the yeast rises to twice its original size. Put the powdered milk in another 4-cup measuring cup and add water to the 2-cup mark. Stir together. In a large mixing bowl, add the flour, salt and shortening. Cut the shortening into the flour by hand. Next, make a well in the flour and add the eggs, yeast mixture and the powdered milk mixture to the flour. Work it all together until the dough comes away from the bowl (you may need a touch more flour or water). Oil the dough slightly on each side, cover and let rise, for 10 minutes. Pinch and let rise another 15 minutes.
  • To assemble the Lauer-Kraut burgers: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Lightly flour a work surface and put the dough on the flour. Begin to roll the dough as close to a rectangle as you can, roughly 24-by-30 inches. Once the dough is rolled out, cut the dough into squares, roughly 6-by-6 inches. Take a square of dough and roll it out a little bigger, roughly 8-by-8 inches. Turn the re-rolled square over and add a full cup of filling mixture into the middle of the dough. Bring the opposite corners of the square together, and then bring the other 2 opposite corners together. You should have all 4 corners drawn together. Pinch down the 4 seams of the dough. Once you pinch all the seams, push down slightly on the kraut burger. This will release extra air and help you find any place you missed sealing the kraut burger. Turn the sealed pocket over and place it on the prepared baking sheet. Repeat with the remaining ingredients. Bake for 15 to 20 minutes.

PORK BURGERS WITH SAUERKRAUT & GRUYèRE RECIPE - (4.6/5)

Pork Burgers with Sauerkraut & Gruyère Recipe - (4.6/5) image

Provided by Deli1

Number Of Ingredients 8

1/2 pound bacon, about 9 slices
1 pound ground pork
1 teaspoon caraway seeds, lightly crushed
1/2 teaspoon nutmeg, freshly grated
4 slices Gruyère
1 cup sauerkraut, rinsed and drained
Dijon mustard to taste
8 slices seeded or marble rye bread, toasted

Steps:

  • Cook the bacon in a 12-inch skillet over medium heat, turning occasionally with tongs, until crisp, 6 to 8 minutes. Remove the skillet from the heat. Transfer the bacon to a cutting board with a slotted spoon, let cool slightly, and chop into small pieces. Drain all but 2 tablespoons of the fat from the skillet. In a large bowl, thoroughly mix the bacon, ground pork, caraway seeds, and nutmeg with your hands. Form into four 1/2-inch-thick patties. Return the skillet to medium heat. When the bacon fat is hot, add the burgers and cook for 6 minutes. Flip the burgers, cover the skillet, and continue to cook until an instant-read thermometer inserted into a burger registers 160°F for well done, about 5 minutes more. Turn off the heat, top each with a slice of the cheese, cover, and let sit until the cheese has melted, about 1 minute. Meanwhile, heat the sauerkraut in a small saucepan over medium heat until warm. Build burgers on toasted rye bread, top with sauerkraut, and serve.

Time 3h52m

Yield 12

Number Of Ingredients 8

¼ cup bacon grease
2 large onions, chopped
2 (32 ounce) packages sauerkraut, drained and rinsed
2 apples - peeled, cored, and chopped
1 (16 ounce) can chicken broth
½ cup brown sugar
¾ teaspoon mustard powder
1 (3 pound) bone-in pork loin roast

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat bacon grease in a large skillet over medium heat. Add onions; cook and stir until onions are translucent, about 5 minutes.
  • Arrange sauerkraut and apples in a large roasting pan. Top with cooked onions and remaining bacon grease.
  • Mix chicken broth, brown sugar, and mustard powder together in a microwave-safe bowl. Microwave on high until sugar dissolves and broth is heated through, about 2 minutes. Stir and pour over sauerkraut mixture, mixing to combine.
  • Cut several deep slits in the top of the pork loin and place in the center of the sauerkraut mixture. Cover roasting pan with aluminum foil.
  • Roast pork in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 250 degrees F (121 degrees C). Continue roasting pork until tender and pulls apart easily, 2 to 3 hours. Remove from oven and cool until easily handled, about 15 minutes.
  • Discard pork bones, shred pork using 2 forks and return to pan with sauerkraut mixture. Stir well to combine.

Provided by Michael Symon : Food Network

Categories     main-dish

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 15

2 tablespoons unsalted butter
1 yellow onion, diced
1 head green cabbage, diced
Kosher salt
1 quart apple cider
1 12-ounce can or bottle IPA
1 tablespoon red pepper flakes
1 tablespoon coriander seeds
1 cup sauerkraut, pureed

2 pounds garlic sausage or kielbasa
1 bunch parsley leaves, roughly chopped or torn
1/4 cup hot mustard
Freshly cracked black pepper

Steps:

  • Melt the butter in a large Dutch oven over medium-high heat. Stir in the cider, beer, red pepper flakes, coriander, pureed sauerkraut and ham hock. Bring to a simmer and cook for 30 minutes to let the flavors meld.
  • Nestle the pork and sausage in the Dutch oven and continue to simmer for 45 minutes, until all of the meat is cooked through and tender. After 45 minutes, remove the ham hock, pork and sausage to a cutting board. Slice all of the meat and add it back into the pot. Mix in the parsley and mustard and additional salt and pepper, if needed.

PORK AND SAUERKRAUT

Pork and Sauerkraut image

Eating sauerkraut on New Year's is an old Pennsylvania Dutch tradition, said to bring good luck. The traditional meal consists of pork and sauerkraut served together, with sauerkraut representing luck and the pig representing rooting into the New Year. It's a feel-good and flavorsome ritual and it may be just what you need to start the New Year. Serve with mashed potatoes or dumplings.
