GRANDMA'S PORK CHOPS IN MUSHROOM GRAVY
This is my Grandma's recipe that she gave me when I got married. Pork chops are baked then served with a rich mushroom sauce. It takes a little bit of work, but is great for a special dinner - my husband loves it!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Melt the butter in a large skillet over medium heat. Add garlic, and saute until fragrant. Season pork chops with salt and pepper, then fry them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a baking pan or Dutch oven.
- Pour the mushrooms into the skillet with the pork drippings and garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, then pour over the pork chops in the baking pan. Cover with a lid, or aluminum foil.
- Bake for 45 minutes in the preheated oven, then remove the lid or foil, and continue to bake for another 15 minutes. Remove the chops from the pan to a serving platter, and place the dish on the stove over medium heat. Stir together the cornstarch and water. When the juices in the pan come to a boil, slowly stir in the cornstarch mixture and cook until thickened, about 2 minutes. Spoon sauce over the chops, and serve.

My mom used to make these for our family all the time. They are my favorite and are wonderful served with white rice.

Steps:
- In a large skillet, add the 2 tbs. of olive oil to coat the bottom of the pan and heat to medium high heat.
- Season both sides of the pork chops with your salt, pepper, seasoning salt, and garlic powder.
- Brown both sides of the pork chops in the skillet. About 5 minutes.
- Remove the porkchops from the skillet and add the can of soup and the milk. Mix it in good an be sure you scrape all the goodies off the bottom.
- After mixing this together good in the skillet return the pork chops and simmer on low for about 30 minute.
- Once the porkchops are done, the mushroom soup is a wonderful gravy to serve over the pork chops and the white rice if you choose to fix it as a side.

SMOTHERED MUSHROOM GRAVY PORK CHOPS
This is originally from the Patty LaBelle cookbook slightly tweeked. Excellent comfort food and the gravy it makes is delicious on mashed potatoes.

Steps:
- Heat 1 TBSP oil over medium high heat.
- Season pork chops with salt and pepper to taste.
- Brown meat in hot oil, about four minutes per side. Remove meat and set aside.
- Add the remaining TBSP oil.
- Add onion, celery, green pepper and garlic. Don't worry about the garlic, it loses its power in the cooking. Cook stiring often for about three minutes or until the onions get translucent.
- Add mushrooms and cook, stirring often for about 8 minutes. (they should start to brown).
- Mix flour and Thyme and add to pan. Stir well till it gets thick.
- Add Milk and Broth and bring to a simmer.
- Return pork chops and any juices to skillet.
- Reduce heat to medium low, stirring occasionally, for 30 to 45 minutes.
- Stir in hot sauce before serving.

- Use a skillet that is large enough to arrange pork chops in a single layer. Heat large skillet over medium high heat. Add 2 tablespoons olive oil to coat bottom of hot skillet.
- Use paper towel to pat pork chops dry, season with salt and pepper, and arrange in hot skillet in single layer. Cook until brown on first side, flip and brown on second side. Remove pork chops to a plate.
- Add remaining tablespoon of oil to skillet, add onions and mushrooms. As liquid is released, use spatula to loosen browned bits from bottom of pan. Stir occasionally until onions & mushrooms are soft. Sprinkle flour, garlic, and oregano over onion/mushroom mixture, stir and continue to cook for 1 minute. Stir in chicken broth, thyme, and bay leaf. Add browned pork chops back in along with any drippings. Bring to boil, reduce heat to low, and simmer 30-40 minute until pork is tender (a paring knife can be easily inserted with little resistence).
- Remove pork chops to platter and cover with foil. If sauce in skillet is too thin, increase heat to medium-high and cook uncovered, stirring frequently, until sauce thickens into gravy consistency, 5-10 minute If sauce is too thick, stir in additional chicken broth or water. Remove bay leaf and stir in parsley. Add salt to taste, if needed.
- Spoon gravy over pork chops. Extra gravy may be served in a bowl on the side. (Recipe makes almost 3 cups gravy.).
- Serve with egg noodles or mashed potatoes.

- Season the pork chops with salt and pepper; sprinkle all over with 1 1/2 tablespoons flour. Heat 1/2 tablespoon olive oil in a large nonstick skillet over medium-high heat. Working in 2 batches, add the chops and cook until golden and just cooked through, 3 to 4 minutes per side, adding 1/2 tablespoon olive oil to the skillet between batches. Transfer the chops to a plate and keep warm.
- Heat the remaining 1/2 tablespoon olive oil in the same skillet; add the mushrooms, garlic, scallion whites and a pinch of salt and cook, without stirring, until the mushrooms begin to brown, about 3 minutes. Sprinkle in the remaining 1/2 tablespoon flour and cook, stirring occasionally, until the mushrooms are soft, about 3 more minutes. Stir in the chicken broth and sour cream, bring to a simmer and cook until the gravy thickens, about 1 more minute.
- Divide the pork chops among plates. Drizzle any juices from the pork into the gravy; stir in the scallion greens and parsley. Season with salt and pepper; spoon over the pork. Serve with cornbread.

- In a large skillet, brown pork chops in 2 tablespoons butter for 2-3 minutes on each side. Remove and keep warm. , Toss mushrooms with lemon juice. - Preheat oven to 350 degrees F (175 degrees C).
- Heat a small amount of oil in a large skillet, add chops and brown on both sides. When chops are almost done, sprinkle marjoram on both sides.
- Stir together half the can of soup, water, salt and pepper. Pour into a foil-lined 9x13 inch baking pan.
- Put the onions and then the browned chops on top of the soup mixture. Spoon the remaining soup over the top of chops so they are covered. Cover with foil and bake for 40 minutes. Take off foil and bake another 20 minutes. Let stand 5 minutes before serving.

I was trying to figure out what way I could fix the pork chops and then I thought about using the mushroom soup and adding onions and mushroom pieces into the dish and then I just put them into the oven and let them bake a little bit and then I served them with mashed potatoes and whatever else I was wanting to add to the side dishes. - Brown your pork chops in a skillet.
- Peel and slice the onion thinly.
- Preheat oven to 350°F.

- Heat 1 tablespoon olive oil in a large skillet over medium heat. Sprinkle pork chops with garlic salt and black pepper. Fry pork chops in the hot oil until browned, 5 to 8 minutes per side. Transfer chops to a plate.

- In a large resealable plastic bag, combine the first four ingredients; set aside 3 tablespoons. - In a medium sized skillet over medium high heat add the olive oil. Salt and pepper the pork chops and add to the sauce pan. Cook on each side for 4-5 minutes on each side until cooked through and golden. Remove and set aside on a plate.
- Add the mushrooms and sauté for 2-3 minutes or until tender. Set aside on plate with pork chops.
- Add 4 Tablespoons butter and flour to skillet and whisk until it turns brown. Slowly stir in beef broth and heavy cream. Add Worcestershire sauce and dijon mustard and bring to a simmer until sauce starts to thicken. Salt and pepper to taste.
- Add the pork chops and mushrooms back to the skillet and let simmer for a couple of minutes. Serve over mashed potatoes if desired.
