1/2 lb. (0.2 kg) ground pork, chicken or turkey
1/4 lb. (0.1 kg) shrimp, chopped into small pieces
1/2 teaspoon soy sauce or fish sauce
1/2 teaspoon sesame oil
3 dashes ground white pepper
1 pack store-bought wonton wrappers
water, for sealing
vegetable oil, for deep frying

Steps:

  • In a bowl, mix the ground pork, shrimp, soy sauce, sesame oil and white pepper together. Stir to combine well to form a sticky filling.
  • To wrap the wontons, lay a piece of the wonton wrapper on your palm and add 1/2 tablespoon of the filling in the middle of the wrapper. (Use 1 teaspoon filling if you are a beginner.) Dip your index finger into the sealing water and trace it on the outer edges of the wonton wrapper.
  • You can wrap the wontons three ways. To make a triangle, just fold it up to form a triangle. Pinch the edges to seal tight. To make them into the pretty shape (far left in the above picture), just pull the two corners of the triangle down so one overlaps the other, pinch and seal with water. To make them into Hong Kong style wonton (far right in the above picture), please watch my video at the top of this post.
  • Heat up some oil for deep-frying. Once the oil is fully heated, deep fry the wontons until golden brown. Drain the excess oil with paper towels. Serve hot with Chinese sweet and sour sauce or Thai sweet chili sauce.

½ pound boneless pork loin, coarsely chopped
2 ounces peeled shrimp, finely chopped
1 teaspoon brown sugar
1 tablespoon Chinese rice wine
1 tablespoon light soy sauce
1 teaspoon finely chopped green onion
1 teaspoon chopped fresh ginger root
24 (3.5 inch square) wonton wrappers
3 cups chicken stock
⅛ cup finely chopped green onion

Steps:

  • In a large bowl, combine pork, shrimp, sugar, wine, soy sauce, 1 teaspoon chopped green onion and ginger. Blend well, and let stand for 25 to 30 minutes.
  • Place about one teaspoon of the filling at the center of each wonton skin. Moisten all 4 edges of wonton wrapper with water, then pull the top corner down to the bottom, folding the wrapper over the filling to make a triangle. Press edges firmly to make a seal. Bring left and right corners together above the filling. Overlap the tips of these corners, moisten with water and press together. Continue until all wrappers are used.
  • FOR SOUP: Bring the chicken stock to a rolling boil. Drop wontons in, and cook for 5 minutes. Garnish with chopped green onion, and serve.

I love soups, and one of my favorites is wonton soup. This version was printed in Saveur magazine. In China this dish is considered a snack rather than one course of a meal. If you have a choice, try to find a good quality, thinner, wonton wrapper at your Asian food market. The steps look long, but I've broken them down in many simple steps for clarity.

8 cups chicken stock (or canned broth)
3 scallions, left whole
2 inches fresh ginger, peeled and sliced into thin coins
kosher salt, to taste
2 tablespoons chicken stock (or canned broth)
2 1/4 teaspoons cornstarch
1 tablespoon minced scallion
1 inch fresh ginger, peeled and minced
1/4 lb ground pork
1 tablespoon soy sauce
1 tablespoon dry sherry
1 teaspoon sesame oil
1 pinch sugar
20 wonton wrappers (3 1/2 inch squares)
1 cup fresh spinach leaves, torn into large pieces and packed in cup

Steps:

  • Soup Base:.
  • Place ingredients for soup base into a large soup pot and bring to a boil over medium heat.
  • Once boiling, reduce heat to low, cover and simmer for 10 minutes to combine flavors.
  • Remove broth from heat and set aside.
  • Wontons:.
  • Place 2 tbsp chicken stock and cornstarch into a large mixing bowl and stir to combine.
  • Add minced scallions, minced ginger, pork, soy sauce, dry sherry, sesame oil, and sugar, and stir well.
  • Fill a cup with water and set it nearby.
  • Place a wrapper in front of you so that it looks like a diamond.
  • Dip your finger in the water and moisten all 4 edges of the wrapper.
  • Place about 1 tsp of the meat mixture in the center of the wrapper and fold in half over the filling to make a triangle.
  • Press firmly along the sides to seal it and remove any excess trapped air.
  • Moisten the left and right corners of the triangle and pinch them together.
  • Place stuffed wonton on a wax paper lined baking sheet and cover lightly with a kitchen towel.
  • Repeat until all wontons are made.
  • Soup:.
  • Bring reserved broth to a boil, cover and reduce heat to medium low.
  • Add wontons to simmering broth.
  • Stir occasionally until wonton filling is firm and cooked through - about 5 minutes.
  • Stir in spinach leaves and cook for 30 seconds until they wilt.
  • Serve hot.

1 (one-inch) piece of fresh ginger, peeled and minced, or 1/4 teaspoon ground ginger
10-12 mini wontons (or more if desired)
1 teaspoon olive oil
green onions for garnish (optional)

Steps:

  • Heat a medium or large stock pot on the stove over medium heat.
  • Add 1 teaspoon of olive oil and the minced ginger. Cook for about one minute. If using powdered ginger, add to the oil and cook for about fifteen seconds.
  • Pour in the chicken broth and turn the heat to high. Bring the broth to a boil.
  • Once the broth is boiling, add the frozen wontons. Let the broth return to a boil and cook the wontons for 1-2 minutes. (If using regular-sized wontons rather than mini wontons, your cook time may be longer).
  • Ladle into bowls and serve with a sprinkling of chopped green onions if desired.

SIMPLE WONTON SOUP



Simple Wonton Soup image

This simple wonton soup recipe is so delicious and easy to follow. The wontons can be frozen, boiled and added to stock to make wonton soup any time of day.

10 oz. baby bok choy or similar green vegetable
8 oz. ground pork ((225g))
2 1/2 tablespoons sesame oil
1/8 teaspoon white pepper
1 tablespoon soy sauce
½ teaspoon salt
2 tablespoons Shaoxing wine
1 package wonton wrappers
6 cups chicken stock ((about 1.5 liters))
1 scallion ((chopped))

Steps:

  • Start by thoroughly washing the vegetables. Bring a large pot of water to a boil and blanch the vegetables just until wilted, about 60-90 seconds. Drain and rinse in cold water.
  • Grab a good clump of veg and carefully squeeze out as much water as you can. Very finely chop the vegetables (you can also speed up the process by throwing them in the food processor). Repeat until all the vegetables are chopped.
  • In a medium bowl, add the finely chopped vegetables, ground pork, 2 1/2 tablespoons sesame oil, pinch of white pepper, 1 tablespoon soy sauce, 1/2 teaspoon salt, and 1-2 tablespoons Shaoxing wine. Mix very thoroughly until the mixture is totally emulsified-almost like a paste.
  • Now it's time to assemble! Fill a small bowl with water. Grab a wrapper and use your finger to moisten the edges of the wrapper. Add a little over a teaspoon of filling to the middle. Fold the wrapper in half and press the two sides together so you get a firm seal.
  • Hold the bottom two corners of the little rectangle you just made (the side where the filling is) and bring the two corners together. You can use a bit of water to make sure they stick. And that's it!
  • At this point, you can cook (boil) and taste a couple of wontons and adjust the seasoning of your filling to taste--you can always add a little more Shaoxing wine, soy sauce, sesame oil, salt, and/or white pepper to your liking.
  • Once you're happy with the flavor of the filling, keep assembling until all the filling is gone. Place the wontons on a baking sheet or plate lined with parchment paper, and make sure they are not touching (this will prevent sticking).
  • If you'd like to freeze your wontons right away, you can cover the wontons with plastic wrap, put the baking sheet/plate into the freezer, and transfer them to freezer bags once they're frozen. They'll keep for a couple of months in the freezer, and be ready for wonton soup whenever you want it.
  • To make the soup, heat your chicken stock to a simmer and add 2-3 teaspoons sesame oil and white pepper and salt to taste.
  • Bring a separate pot of water to a boil. Carefully add the wontons one at a time to the pot. Pick up the pot and use a swirling, twisting motion to keep the pot moving and prevent the wontons from sticking to the bottom. If they do stick, don't worry, They should come free once they're cooked. Once they're floating, boil them for another 1-2 minutes. Take care not to overcook them - mushy wontons are a sin! Remove the wontons with a slotted spoon and put them in bowls.
  • Pour the soup over the wontons and garnish with scallions. Serve!

3 1/2 ounces / 100 g fatty pork mince
3 spring onions , chopped finely
2 thin slice ginger , roughly chopped
25 to 30 sheets of wonton wrappers
Flour (for spreading on the plate in case of the wonton sticking to the plate or stick together)
Seasonings:
1 teaspoon salt
2 tablespoon light soy sauce
1 teaspoon of rice wine
1/4 teaspoon ground white pepper
1/4 teaspoon white sesame oil or blended sesame oil

Steps:

  • Gather the ingredients.
  • Process half of the shrimp and all the pork, ginger and seasonings in a food processor .
  • Roughly chop the remaining shrimp and transfer to a medium bowl. Add the spring onions and the mixture from the processor to the bowl. Fold together to combine.
  • Put 1 teaspoon of filling onto the center of the wonton wrapper and use your fingers to gently close the wrapper tightly. You can brush a little bit of water onto the edges to help the wrappers seal and stay closed. Sprinkle a thin layer of flour on a large plate. Place the wontons on the plate as you finish forming them.

4 cups low sodium chicken broth
1 1/4 lbs boneless chicken breasts
1/4 cup carrot, julienned
1/4 cup tofu (the soft kind)
1/4 cup scallion, chopped
3 garlic cloves, minced
1 tablespoon gingerroot, minced and peeled
1 tablespoon hoisin sauce
12 wonton skins
1 tablespoon tamari or 1 tablespoon soy sauce
1 star anise
1 slice fresh ginger
1/4 cup bok choy, leaves shredded
1/4 cup leek, rinsed and julienned (white part only)

Steps:

  • In a large saucepan, bring the broth to a boil and then add the chicken. Reduce heat and simmer covered for 8-10 minutes or when chicken is cooked through. Strain, reserving broth. When chicken is cool enough, shred chicken into thin 1-inch strips.
  • Meanwhile, in a separate saucepan, add enough water to cover carrots and bring to a boil, add carrots and simmer covered until carrots are tender (2 minutes). Drain in a colander and rinse under cold water to stop the cooking. Set aside.
  • To prepare wonton filing, combine chicken, tofu, scallions, garlic, minced ginger and hoisin sauce in a small bowl, mashing mixture together with a fork.
  • Drop 1 tablespoon of filling onto center of wonton skin. Brush edges with water, then fold wonton into a triangle, pressing on the filling to remove trapped air and then press edges to seal. Bring together the two points of the triangle and then twist and press the points together. Repeat with remaining filling and wonton skins - making 12 wontons.
  • In a saucepan combine the reserved broth (I would use the one I cooked the chicken in), the tamari (or soy sauce), star anise and ginger slice and bring it to a boil. Reduce heat and simmer, covered for 20 minutes. Remove the star anise and ginger and discard.
  • Meanwhile cook the wontons in a large pot of simmering water until the wontons rise to the surface (3-5 minutes). Drain and Set aside cooked wontons.
  • To the broth add the bok choy, leek and carrots - bring to a simmer, then remove pan from heat. Add wontons to broth and then serve soup in bowls.

1 small carrots (- julienned)
1 cup fresh mung bean sprouts
a bunch pak choi (- base cut)

Steps:

  • Combine ground pork, shrimp, green onions, soy sauce, sesame oil, salt and pepper in a bowl. Mix well using a fork or your hands until thoroughly mixed.
  • Arrange wonton wrappers on a clean surface and fill each with about half spoonful of filling in the center. Wet the sides of the wrapper with water and close depending on the shape you prefer. (see photo on post). Try to rid of air pockets while sealing the wontons.
  • In a big pot, bring broth to a rolling boil. Drop the wontons carefully, about 4-5 pieces at a time and let them cook for about 3-5 minutes or when the wontons float to the top, that usually means they're done.
  • Transfer the cooked wontons on soup bowls. Add the carrots and bean sprouts to the broth and season with salt and pepper. Let it cook for 3 minutes then add the pak choi and green onions then turn off the heat.
  • Pour hot soup over cooked wontons on the soup bowls and serve.

1 1/2 cups sliced shiitake mushrooms
4 baby bok choy (halved lengthwise and halved)
1 tablespoon soy sauce
1 teaspoon sesame oil
scallions (sliced green parts only for garnish)

Steps:

  • Bring chicken broth to a boil in a large pot.
  • Smash the sliced ginger with the side of a knife to bring out the flavor and add to the pot with the garlic, cover and cook 5 minutes.
  • Add the bok choy and partially cook 5 minutes, then add the frozen wontons and mushroom, simmer for 2 to 3 minutes, until the wontons are heated through and bok choy is tender and wilted.
  • Stir in soy sauce and sesame oil.
  • Divide soup in four bowls. Garnish with fresh scallions.

400 g shrimp, ,whole piece, soak with one teaspoon of salt and 1/2 teaspoon of baking soda
1/2 stalk leek, , chopped, optional 韭黄, or substitute with scallion
1 teaspoon flounder powder
1 teaspoon dry shrimps, , pound into powder
1 teaspoon ground white pepper
1 tablespoon cornstarch
1/3 egg
2 teaspoons salt
10 g sugar
4 teaspoons light soy sauce
1 packet wonton wrapper
750 g pork bone
30 g dry flounder
150 g shrimp shells, cleaned
20 g dry shrimps
30 g ginger, sliced
2 stalk scallions
4 teaspoons salt
1 teaspoon ground white pepper
2 liters water

Steps:

  • Remove the shrimp shell and deveined.
  • Add a teaspoon of salt and 1/2 teaspoon of baking soda to the shrimps, soak for 15 minutes.
  • Clean the shrimps under running water until the water becomes clear.
  • Drain off the excess water and keep it dry by leaving it on a piece of kitchen paper.
  • Mince the pork coarsely.
  • Combine all the ingredients until it becomes sticky. Keep it refrigerated for fifteen minutes before wrapping the wonton.
  • Place the filling at the center of the wonton skin. Fold the two opposite corners of the skin together. Squeeze the wonton very lightly to let the skin adhere to the filling, leaving part of the wonton skin hanging freely.
  • Blanch the pork bone in boiling water for five minutes. Removed and scrub clean.

1 pound ground pork
1/2 cup Chopped Green Scallions (sliced)
2 tablespoons Minced Ginger (grated)
4 cloves Garlic (crushed)
1 tablespoon Soy Sauce
1 tablespoon Rice Vinegar
1 tablespoon Cornstarch
2 teaspoons Sesame Oil
1/2 teaspoon Sugar Or Other Sweetener Equivalent
1 teaspoon Kosher Salt
48 wonton wrappers

Steps:

  • Mix all ingredients except the wonton wrappers together and let rest for a few minutes for the flavors to meld.
  • Place 1 teaspoon of the meat mixture on each wrapper and shape into a triangle.
  • Press firmly on the sides of the triangle to seal, and then press around the meat filling to seal inside.
  • Cover with damp paper towel and form all 48 wontons using all the wrappers in this fashion.
  • When you're ready to cook the wontons, put 2 cups of water into a pan and place 6-8 wontons in at a time.
  • When the water comes to a boil, add 1 cup of water to it and let it come to a boil.
  • Add another cup of water and let this come to a boil. Once this second cup of water boils, the wonts are ready. Take them out very gently with a strainer and serve hot with some good quality soy sauce.

1/2 cup of dried wood ear mushroom ( , soaked in clean water around 10 minutes firstly)
1 small head broccoli ( , cut into small pieces)
1/4 box of fresh tofu
1 tsp. salt
1 tbsp. sesame oil
1/4 tsp. white pepper
40 wonton wrappers
1 tbsp. chopped scallion
1/2 tsp. minced garlic
1/2 tsp. salt
1/2 tbsp. light soy sauce
1 tsp. sesame oil
1 small piece of dried nori

Steps:

  • Finely cut the mushrooms, crown broccoli and tofu into small pieces and place in a large bowl.
  • Add oil, salt and pepper. Mix well.
  • Prepare wonton and wrap wonton one by one. Heat a large pot of water to a boiling and cook the wontons for 3-4 minutes over medium fire.
  • Add light soy sauce, dried nori, spring onions, garlic and sesame oil. Scoop around 1 cup of the water for cooking the wontons. Transfer wontons in individual serving bowls.
  • Garnish some chopped green onions and serve hot.
