3 tablespoons fresh garlic, minced (divided)
1/3 cup red wine or 1/3 cup unsalted chicken stock
2 tablespoons sugar
2 tablespoons red currant fruit spread
1/4 cup red wine vinegar
1 1/2 tablespoons lemon rind, grated
4 center-cut pork loin chops, trimmed (6-oz. each, bone-in)
1/2 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt

Steps:

  • Heat a saucepan over medium heat. Coat pan with cooking spray. Add onion and 1 tablespoons garlic; cook 4 minutes or until onion is tender. Add wine; cook 5 minutes or until liquid almost evaporates. Add sugar and fruit spread; bring to a boil. Cook 1 minute. Add vinegar; return to a boil. Cook until reduced to 1/2 cup (about 5 minutes).
  • Heat a large grill pan over medium high heat. Coat with cooking spray. Combine 2 tablespoons garlic and rind; sprinkle evenly over pork, pressing to adhere. Sprinkle evenly with pepper and salt. Add pork to pan; cook 3 minutes on each side or until desired degree of doneness. Remove from pan; let stand 5 minutes.

4 pork chops
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons vegetable oil
1 cup onion, chopped
1/2 cup ketchup
1/4 cup brown sugar
3 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1/2 cup water

Steps:

  • Salt and pepper pork chops. Place in skillet with vegetable oil. Fry on low heat until done. Remove chops.
  • Place onions in skillet and saute. Pour off any excess oil.
  • Place chops back in skillet and add remaining ingredients. Cover with lid and cook on LOW heat for approximately 15 minutes.
  • Serve pork chops with sauce on top.
  • ENJOY!

1/8 teaspoon pepper
2 medium onions, chopped
2 celery ribs, chopped
1 large green pepper, sliced
1 can (14-1/2 ounces) no-salt-added stewed tomatoes
1/2 cup ketchup
2 tablespoons cider vinegar
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon beef bouillon granules
3 tablespoons cornstarch
2 tablespoons cold water
Hot cooked rice or mashed potatoes, optional

Steps:

  • Place chops in a 3-qt. slow cooker; sprinkle with pepper. Add the onions, celery, green pepper and tomatoes. Combine the ketchup, vinegar, brown sugar, Worcestershire sauce, lemon juice and bouillon; pour over vegetables. Cover and cook on low 5-6 hours or until meat is tender. , Mix cornstarch and water until smooth; stir into liquid in slow cooker. Cover and cook on high about 30 minutes or until thickened. This is a variation of the 'Tangy Chicken' recipe here on Allrecipes.com. It's fast and easy. It makes the chops very juicy and tender. You may be put off by the lemon, but you really don't taste it that strong, it's overpowered by the Worcestershire Sauce. It seems the acid in the lemon helps make the more meat tender and helps the flavor soak in. The garlic is just a hint also, not too strong at all! Garlic powder could also be used.

½ cup Worcestershire sauce
½ cup vegetable oil

1 lb pork tenderloin
2 tablespoons olive oil
1/2 teaspoon dried parsley
1/2 teaspoon dried thyme
1/4 teaspoon rosemary
1/4 teaspoon onion salt
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt
1/8 teaspoon dried marjoram
1/8 teaspoon fresh ground black pepper
reserved pan dripping
1 tablespoon butter
1/2 cup chicken broth
1/4 cup red currant jelly, to taste
1 1/2 tablespoons balsamic vinegar
1 teaspoon orange zest
1/2 teaspoon parsley
1/4 teaspoon thyme
1/4 teaspoon rosemary
kosher salt, to taste
fresh ground black pepper, to taste

Steps:

  • Preheat oven to 400 degrees. In a small bowl, combine the parsley, thyme, rosemary, onion salt, garlic powder, oregano, marjoram, kosher salt and pepper. Massage the seasoning mixture evenly over the pork tenderloin.
  • Heat olive oil in an oven-proof skillet over medium-high heat. Sear the pork on all sides until deep brown.
  • Transfer the skillet to the oven. Roast for 30 to 40 minutes, or until a thermometer reads 140 degrees. Turn over once halfway through roasting. Remove the pork from the skillet and wrap in tin foil. Allow the pork to rest for 10 minutes.
  • Meanwhile, make the sauce. Using the same skillet, place it over medium-high heat on the stove top. Stir the butter into the pan drippings, until melted. Deglaze with the chicken broth, scraping up the brown bits from the bottom of the pan. Stir in the jelly and balsamic vinegar. Add the orange zest, parsley, thyme, rosemary and a pinch of kosher salt. Bring the sauce to a boil and continue to cook and stir occasionally for 5 minutes.
  • Slice the pork tenderloin. Pour the sauce over all.
  • Enjoy!

3/4 cup reduced-sodium soy sauce
6 garlic cloves, minced
4 teaspoons ground mustard
1-1/2 teaspoons ground ginger
1-1/2 teaspoons dried thyme
1 bone-in pork loin roast (5 pounds)
SAUCE:
2/3 cup currant jelly
1 tablespoon sherry or apple juice
1-1/2 teaspoons reduced-sodium soy sauce

Steps:

  • In a bowl, combine the first six ingredients; mix well. Pour 1-1/4 cups marinade into a 2-gal. resealable plastic bag; add the pork roast. seal bag and turn to coat; refrigerate overnight. Cover and refrigerate remaining marinade., Drain and discard marinade from roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 2-1/2 to 3 hours or until a thermometer reads 160°, basting every 30 minutes with reserved marinade. Let stand for 10 minutes before slicing. In a small saucepan, combine sauce ingredients; bring to a boil over medium heat. Serve with the pork.

1 cube beef bouillon
½ cup hot water
1 (10.75 ounce) can condensed tomato soup

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat a large lightly oiled skillet over medium-high heat. Brown pork chops on both sides.
  • Place pork chops in a casserole dish and cover with sliced onions. Dissolve bouillon cube in hot water and mix with tomato soup. Pour soup mixture over pork chops.
