Swedish Meatballs with Noodles image

This recipe for Swedish meatballs with noodles was a big hit on a winter night!

Categories     Main Dish Recipes     Meatball Recipes

Time 50m

Yield 8

Number Of Ingredients 15

½ pound ground beef
½ pound ground pork
1 ½ cups Italian-seasoned bread crumbs
¾ cup milk, divided
1 large egg, slightly beaten
1 clove garlic, minced
1 ½ teaspoons salt
½ teaspoon ground black pepper
⅛ teaspoon ground allspice
2 tablespoons salted butter
3 tablespoons all-purpose flour
1 ½ cups low-sodium beef broth
1 dash Worcestershire sauce, or to taste
1 (16 ounce) package egg noodles
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C).
  • Combine ground beef, pork, bread crumbs, 1/2 cup milk, egg, garlic, salt, pepper, and allspice in a large bowl; mix until just combined. Use a rounded 1-tablespoon measure to form mixture into meatballs. Place meatballs on a baking sheet.
  • Bake in the preheated oven until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.
  • While the meatballs are baking, melt butter in a medium saucepan over medium-high heat. Add flour. Cook, whisking constantly, for about 1 minute, being careful not to burn or brown the flour. Gradually whisk in the remaining milk and broth. Bring to a boil. Reduce heat and simmer until sauce has thickened slightly, 2 to 3 minutes. Add Worcestershire sauce to taste and remove from the heat.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
  • Drain any grease from the meatballs. Add meatballs to sauce; toss gently to coat. Turn on lowest heat to warm. Add milk or water to thin sauce if too thick.
  • Drain egg noodles and serve immediately topped with sauce, meatballs, and parsley.

PORK MEATBALLS WITH GINGER AND FISH SAUCE

Pork Meatballs With Ginger and Fish Sauce image

These nuoc cham-inspired meatballs are perfect to fill lettuce cups topped with fresh basil or cilantro. (Add steamed rice for a more substantial meal.) The Ritz crackers here make for a juicier meatball, but feel free to substitute plain dry bread crumbs. To make the Ritz crumbs, place the crackers in a resealable plastic bag and lightly crush them with the back of a wooden spoon or measuring cup. For an easy dipping sauce, spike 1/4 cup mayonnaise with 2 teaspoons toasted sesame oil or soy sauce. And save any leftover meatballs: They're great simmered in chicken broth the next day. The ginger and garlic in them release their aromatics into the broth for a deeply flavorful soup base.

  • Prepare the Meatballs: Using hands, gently mix together pork, scallions, garlic, ginger, soy sauce, and rice vinegar in a medium bowl to combine. Form mixture into 20 (about 1 1/2 tablespoons each) meatballs. Heat 2 tablespoons of the canola oil in a large skillet over medium-high. Add meatballs to hot oil, and cook, turning often, until browned on all sides and cooked through, 4 to 5 minutes. Transfer to a plate lined with paper towels, and cover with aluminum foil to keep warm. Wipe skillet clean.
  • Prepare the Ramen: Bring 4 cups of water to a boil in a large saucepan over medium-high. Add ramen noodles, and cook, stirring to separate noodles, about 2 minutes. Drain noodles, reserving 3/4 cup cooking liquid. Toss cooked ramen with remaining 1/2 teaspoon canola oil; set aside.
  • Prepare the Sauce: Whisk together soy sauce, garlic, ginger, chili sauce, rice vinegar, mirin, cornstarch, and jalapeño in a small bowl until smooth. Add reserved noodle water to wiped skillet, and bring to a boil over medium-high. Whisk sauce ingredients quickly, and add to boiling liquid in skillet, whisking until combined and mixture begins to thicken in skillet. Add 1/2 cup of scallions to skillet, and reduce heat to medium. Add noodles and meatballs to skillet, giving the skillet a shake to coat noodles and meatballs in sauce. Remove from heat. Sprinkle with remaining scallions, and more chopped jalapeño as desired. Sprinkle with sesame seeds, if desired.
