PANETTONE FRENCH TOAST

Panettone French Toast image

Provided by Giada De Laurentiis

Time 30m

Yield 6 servings

Number Of Ingredients 12

1 cup water
1 cup packed dark brown sugar
2 tablespoons whipping cream
1/2 teaspoon ground cinnamon
1 (1.1 pound; 500 gram) loaf panettone bread, baking paper removed
6 large eggs
3/4 cup whipping cream
3/4 cup whole milk
1/4 cup sugar
2 tablespoons unsalted butter
1/2 cup mascarpone cheese
Powdered sugar, for dusting

Steps:

  • To make the syrup: Combine 1 cup of water and brown sugar in a heavy medium saucepan. Bring to a boil over high heat, stirring until the sugar dissolves. Boil until the syrup reduces to 1 cup, about 10 minutes. Remove from the heat and whisk in the cream and cinnamon. Keep the syrup warm. (The syrup can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm before serving.)
  • Meanwhile, prepare the French toast: Preheat the oven to 200 degrees F. Trim the bottom crust of the panettone. Starting at the bottom end of the panettone, cut it crosswise into 6 (3/4-inch thick) round slices (reserve the top piece for toast!). In a large bowl, whisk the eggs until well blended. Add the cream, milk, and sugar and whisk until well mixed. Melt 1 tablespoon of butter on a large nonstick griddle over medium heat. Dip 3 slices of panettone into the custard, turning to allow both sides to absorb the custard. Grill the soaked panettone slices until they are golden brown and firm to the touch, about 4 minutes per side. Transfer the French toast to a baking sheet and keep them warm in the oven. Repeat with the remaining butter, panettone slices, and custard.
  • Transfer the French toast to plates. Dollop the mascarpone atop each. Lightly dust with the powdered sugar. Drizzle the cinnamon syrup over and around the French toast and serve immediately.

PORTUGUESE STYLE SARDINE PASTA

Portuguese Style Sardine Pasta image

A simple and delicious sardine pasta recipe that anyone can make at home. Based on local ingredients and tinned sardines, this is a quick recipe anyone can enjoy!

Provided by Annie

Categories     Dinner

Number Of Ingredients 14

2 tbs Olive Oil
½ red pepper
1 medium red onion
3 cloves of garlic
½ cup of Olives
1 cup (18 small) cherry tomatoes
2 tbs tomato paste
½ red chilli pepper
1 tin of sardines
Basil leaves
200 grams of dried Spaghetti
Black Pepper
Lemon Zest
½ cup of white wine/lemon juice

Steps:

  • Place a big frying pan over a medium heat, add the olive oil and a drizzle of the sardine oil. When hot, add the bell pepper and cook until slightly soft. Add the red onion and garlic and sauté for a further 2-3 minutes.
  • Add the red onion and garlic and sauté for a further 2-3 minutes.
  • Add the olives and let everything slowly fry until it reaches a softer texture.
  • Move your ingredients to one side of the frying pan and if necessary add another splash of olive oil and lightly fry your cherry tomatoes and basil leaves.
  • Once the skin of the tomatoes start wrinkling, combine it with the rest of the pan, and add our chilli pepper and the sardines, breaking it into smaller pieces.
  • Add zests of one lemon and a splash of white wine or lemon juice to deglaze the pan and bring all those flavours together. Let it sizzle for another couple of minutes.
  • While you wait, bring a large pot of salted water to a boil. The recommended proportion is around 1lt of water per 100 grams of pasta.
  • Once the pasta water is boiling, begin cooking your spaghetti. Following the recommended instructions. For "al dente" pasta, remove from the water a minute early to taste.
  • Add the tomato paste and half of a cup of the pasta water into your sauce. Reduce the heat and let it simmer for 3-5 minutes. The starch from the pasta water will help our sauce to bond with the spaghetti. Try the sauce and check if you need to adjust the salt or add another splash of pasta water.
  • Drain the pasta and add it immediately into the saucepan and gently combine everything.
  • Serve the finished sardine pasta into two pasta bowls and add some freshly grated black pepper and parmesan cheese on top!

PANETTONE FRENCH TOAST

Panettone French Toast image

Provided by Giada De Laurentiis

Time 28m

Yield 4 to 6 servings

Number Of Ingredients 12

1 cup water
1 packed cup brown sugar
2 tablespoons whipping cream
1/2 teaspoon ground cinnamon
1 (1-pound) panettone, paper removed
6 large eggs
3/4 cup heavy whipping cream
3/4 cup whole milk
1/4 cup sugar
2 tablespoons unsalted butter, divided
1/2 cup mascarpone cheese
Serving suggestion: powdered sugar and assorted fresh berries.

Steps:

  • For the syrup: In a medium saucepan, bring the water and sugar to a boil over high heat, stirring until the sugar dissolves. Boil until the syrup reduces to 1 cup, about 10 minutes. Remove the pan from the heat and whisk in the cream and cinnamon. Keep the syrup warm over low heat until ready to serve. (The syrup can be made 1 day ahead. Cool, then cover and refrigerate. Reheat before serving).
  • For the French toast: Preheat the oven to 200 degrees F. Preheat a nonstick griddle or large nonstick saute pan over medium heat.
  • Using a serrated knife, remove the top from the panettone. Cut the bottom of the panettone in half crosswise. Cut each half into 4 equal pieces. In a large bowl, whisk together the eggs, cream, milk, and sugar until smooth. Melt 1 tablespoon of butter on the griddle. Working in batches, dip slices of panettone into the custard, turning to allow both sides to absorb the custard. Cook the soaked panettone slices until golden brown and firm to the touch, about 4 minutes per side. Transfer the French toast to a baking sheet and keep warm in the oven. Repeat with remaining 1 tablespoon butter and panettone slices.
  • Transfer the French toast to plates. Drizzle the cinnamon syrup over the French toast and place a dollop of mascarpone on top. Lightly dust with powdered sugar and serve with fresh berries.

Feel free to cut your panettone smaller before cooking if it is hard to manipulate. Serve warm with maple syrup, whipped cream, or any other topping.

Panettone French Toast Casserole image

Got leftover panettone? Lucky you! The traditional Italian Christmas bread makes an excellent base for a breakfast casserole. All it needs is a soak in spiced custard and a turn in the oven.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 2h40m

Number Of Ingredients 8

1 1/4 pounds panettone, halved horizontally, then cut into 3/4-inch thick slices

2 cups whole milk
1 teaspoon pure vanilla extract
1 teaspoon kosher salt
1/4 teaspoon ground cinnamon

SPANISH FRENCH TOAST

Spanish French Toast image

There is French toast, and then there are torrijas, the Spanish version. The origins of both are undoubtedly the same: yet another way to make good use of bread that's no longer fresh. Though torrijas, like French toast, can be served at breakfast, they can also be a knockout dessert.

Provided by Mark Bittman

Categories     breakfast, easy, quick, main course

Time 20m

Yield 2 servings

Number Of Ingredients 8

Olive oil as needed
2 cups milk
Pinch salt
1/2 cup sugar
2 eggs
2 large, very thick slices eggy bread, like brioche or challah, preferably stale, cut in half, or 4 smaller slices
Cinnamon sugar
Warmed maple syrup or honey, optional

Steps:

  • Pour olive oil to a depth of 1/2 inch in a broad, deep skillet over medium-high heat; bring it to a temperature of about 350 degrees. When ready, a small cube of bread dropped into oil will sink to bottom, then immediately rise to top.
  • Meanwhile, whisk together the milk, salt and sugar in a broad bowl. In a separate bowl, beat eggs. When oil is ready, soak a piece of bread in milk, then dip in egg. Shake off excess liquid, then transfer to oil. Stand back, as it will spatter. Repeat with remaining bread.
  • Cook about a minute on each side, turning carefully; bread should be very crisp on edges. When done, transfer to a plate, sprinkle with cinnamon sugar and serve immediately, with honey or maple syrup if you like.
