One of my favorite sandwiches is a hot Cubano, piled high with juicy pork, layers of ham and melty Swiss cheese. These same ingredients are amazing turned into a macaroni salad. -Marina Castle Kelley, Canyon Country, California

2 cups uncooked elbow macaroni
1 cup mayonnaise
2 teaspoons sugar
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded Swiss cheese
1 cup cubed cooked pork
1 cup cubed fully cooked ham
1/2 cup chopped sweet pickles
1/2 cup chopped onion

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely., For dressing, in a small bowl, combine mayonnaise, sugar, mustard, salt and pepper. In a large bowl, combine cheese, pork, ham, pickles and onion. Add dressing; gently to coat. Refrigerate until serving.

4 cups uncooked elbow macaroni (16 oz)
1 cup diced cooked ham
1 cup sliced celery
1/2 cup chopped green onions
1/4 cup sweet pickle relish
1 jar (2 oz) diced pimientos, drained
4 hard-cooked eggs, chopped
1 cup salad dressing or mayonnaise
2 tablespoons yellow mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook and drain macaroni as directed on package. Rinse with cold water to cool; drain well.
  • In large bowl, mix cooked macaroni, ham, celery, onions, pickle relish and pimientos.
  • In small bowl, mix all dressing ingredients until well blended. Add to salad; mix well. Gently stir in hard-cooked eggs. Serve immediately, or cover and refrigerate until serving time.

This salad is from Sonia Uvezian's "The Book of Salads". It looks delicious, although I've not tried it and am posting it for ZWT3.

8 ounces elbow macaroni
4 hard-boiled eggs
1/2 teaspoon dry mustard
1 teaspoon salt
1/3 cup mayonnaise
2/3 cup sour cream
1 tablespoon pimiento, chopped
1 cup ham, Danish boiled, finely chopped
2 tablespoons fresh parsley or 2 tablespoons fresh dill, finely chopped

Steps:

  • Cook the macaroni al dente as directed on the package. Drain well and set aside to cool.
  • In a salad bowl mash the yolks of two of the eggs, reserving the egg whites for another use.
  • Add the mustard and salt to the yolks.
  • Gradually mix in the mayonnaise, the fold in the sour cream.
  • Add the pimiento, ham and cooled macaroni, toss gently but thoroughly.
  • Taste and adjust the seasoning.
  • Cover and chill at least one hour.
  • Slice the remaining 2 eggs into rounds.
  • Place the eggs rounds decoratively on the top of the salad and sprinkle with the parsley or dill.

½ cup cubed Cheddar cheese

3 herring fillets, pickled, cut into 1/2 inch pieces
4 scallions, white part only, coarsely chopped
4 fresh mushrooms, thinly sliced
2 tablespoons wine vinegar

1 teaspoon salt
2 teaspoons curry powder
1 cup sour cream

Steps:

  • Cook the pasta al dente, according to package directions, rinse and cool.
  • Peel, halve lengthwise and seed cucumber, slice into 1/2 inch pieces.
  • Put pasta, cucumber, herring, scallions, and mushrooms into a serving bowl.
  • In a small bowl combine the vinegar, oil and salt, pour over salad ingredients and mix gently.

10 pounds macaroni
3 tablespoons vegetable oil
salt
6 onions, chopped
3 green bell pepper, chopped
2 carrots, chopped
12 eggs
½ pound cooked ham, diced
3 cloves garlic, crushed
1 cup olive oil
2 cups mayonnaise
3 tablespoons balsamic vinegar
salt and pepper to taste

Steps:

  • Bring a very large pot of lightly salted water with oil to a boil. Add macaroni and cook for about 30 minutes or until al dente; drain.
  • Place eggs in a large saucepan and cover with cold water. Over medium heat, bring water to a boil. Lower heat and simmer for 12 to 17 minutes. Immediately remove from heat and plunge in cold water. Remove from water, peel and chop.
  • In a large bowl mix together: onion, bell pepper, carrots, chopped eggs and ham. In another bowl mix together garlic, olive oil, mayonnaise, balsamic vinegar, salt and pepper.
  • Stir together: vegetable and egg mixture, mayonnaise mixture and cooked macaroni.
