Sneak extra vegetables into your child's day (and yours too!) with this easy one-skillet pasta recipe. Finely chop mushrooms to resemble the texture of ground beef and stir them into a classic meat sauce for an extra-healthy twist on a dinnertime favorite.

1 tablespoon extra-virgin olive oil
1 pound 90%-lean ground beef
8 ounces mushrooms, finely chopped or pulsed in a food processor
½ cup diced onion
1 (15 ounce) can no-salt-added tomato sauce
1 cup water
1 tablespoon Worcestershire sauce
1 teaspoon Italian seasoning
¾ teaspoon salt
½ teaspoon garlic powder
8 ounces whole-wheat rotini or fusilli
½ cup shredded extra-sharp Cheddar cheese
¼ cup Chopped fresh basil for garnish

Steps:

  • Heat oil in a large skillet over medium heat. Add beef, mushrooms and onion and cook, stirring, until the beef is no longer pink and the mushroom liquid is mostly evaporated, 8 to 10 minutes.
  • Stir in tomato sauce, water, Worcestershire, Italian seasoning, salt and garlic powder.
  • Add pasta. Bring to a boil.
  • Cover, reduce heat and cook, stirring once or twice, until the pasta is tender and most of the liquid is absorbed, 16 to 18 minutes.
  • Sprinkle the pasta with cheese, cover and cook until the cheese is melted, 2 to 3 minutes more.
  • Garnish with basil, if desired.

8oz Mueller'su00ae Egg Noodles, any width
2 tablespoons oil
3 pounds boneless beef bottom round roast
3 cups beef broth
1 cup chopped onion
2 cloves garlic, minced
1 bay leaf
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 large onion, cut into 1/2-inch wedges
1 pound carrots, cut into 2-inch pieces
1/4 cup water
1/4 cup corn starch

Steps:

  • 1 Cook and drain noodles according to package directions; set aside.
  • 2 Heat oil in a 5-quart Dutch oven over medium-high heat. Add beef & brown on all sides. Add beef broth, chopped onion, garlic, bay leaf, thyme, salt, and pepper. Bring to boil. Reduce heat, cover and simmer for 2 hours.
  • 3 Add carrots and onion wedges, simmer 30 minutes or until beef and carrots are tender.
  • 4 Remove roast from Dutch oven, cover and set aside. Remove bay leaf from gravy in Dutch oven and discard.
  • 5 In a small bowl, stir together corn starch and water until smooth. Stir corn starch mixture into beef broth and vegetable mixture in the Dutch oven to make a gravy. Bring contents to a boil over medium heat, stirring constantly. Boil 1 minute.
  • 6 Toss cooked noodles with 2 cups gravy. Cut beef into bite-size portions.
  • 7 Serve noodles topped with beef, vegetables, and remaining gravy.

2 -2 1/2 lbs beef chuck roast
1 tablespoon cooking oil
2 medium carrots, corasely chopped
2 celery ribs, sliced
1 medium onion, sliced
1 teaspoon bottled minced garlic
1 tablespoon quick-cooking tapioca
1 (14 1/2 ounce) can Italian-style stewed tomatoes
1 (6 ounce) can Italian-style tomato paste
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
1 (12 ounce) package dried medium noodles

Steps:

  • Trim fat from roast. Cut roast, if necessary, to fit into a 3 1/2 - 4 quart Crockery Pot. Heat oil in a large skillet. Cook roast in hot oil until brown on all sides. Drain off fat.
  • Meanwhile, place carrots, onion, and garlic, in cooker. Sprinkle tapioca over vegetables. Place roast on top of vegetables.
  • Combine the undrained tomatoes, the tomato paste , brown sugar, salt, pepper, and bay leaf in a medium bowl. Pour over roast.
  • Cover and cook on low for 10-12 hours (high 4-5 hours). Discard bay leaf. Skim off fat.
  • Cook noodles according to package directions. Serve mear and vegetables with noodles.

1 boneless beef chuck roast (3 to 4 pounds)
1/2 cup chopped onion
2 tablespoons canola oil
3 cups water, divided
1 cup all-purpose flour
1/2 teaspoon salt
1 egg
2 tablespoons milk
1 can (14 ounces) beef broth
Pepper to taste

Steps:

  • In a Dutch oven, brown roast and onion in oil. Add 1 cup water. Cover and bake at 325° for 2-1/2 to 3 hours or until the meat is tender. , Meanwhile, for noodles, combine flour and salt in a bowl; make a well in the center. Beat egg and milk; pour into well. Stir to form a stiff dough. Turn onto a well-floured surface; roll into a 15x12-in. rectangle. Cut into 1/8-in. strips. Cover and refrigerate until ready to cook. , Remove roast and keep warm; add broth and remaining water to pan. Bring to a boil; add noodles. Cook for 8-10 minutes or until tender. ½ pound baby carrots, cut into horizontal quarters
¾ cup chopped onion
2 stalks celery, chopped
2 cups shredded leftover pot roast
2 cups boiling water
½ cup milk
1 (4 ounce) package scalloped potatoes (such as Idahoan®)

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease an 8x8-inch baking dish.
  • Melt 1/2 tablespoon butter in a skillet. Add carrots, onion, and celery; cook until tender, 5 to 8 minutes. Add pot roast.
  • Mix boiling water and 1 tablespoon butter in a bowl until butter is melted. Mix in milk, potatoes and the envelope of sauce mix from the box. Add pot roast mixture and stir until combined. Pour into the prepared baking dish.
  • Bake in the preheated oven until potatoes are fork-tender, 30 to 40 minutes. Remove from the oven and let sauce thicken for 5 minutes before serving.

2 cloves garlic, minced
1/2 teaspoon dry mustard
1/2 teaspoon ground ginger
2 teaspoons salt
1 teaspoon freshly ground black pepper
1/4 cup soy sauce
1/4 cup vegetable oil
1 onion, finely chopped
2 tomatoes, chopped
12 ounces beer, preferably stout
4 potatoes, chopped
2 carrots, sliced

Steps:

  • Bring the meat to room temperature, rinse thoroughly, and pat dry with a paper towel. Combine the garlic, mustard, ginger, salt, black pepper, and soy sauce. Spread the mixture on the meat and set aside to marinate, refrigerated, for 1 hour.
  • Heat the oil in a large Dutch oven over medium heat. Add the meat and cook until browned on all sides, being careful not to burn it. Add the onion and cook until it wilts and darkens, about 5 minutes. Add the tomatoes and cook, stirring, for 2 minutes. Add the beer.
