Steps:
- Preheat the oven to 200 degrees F.
- Line a jelly roll pan with parchment paper. Add popcorn to a large pan, spread out in an even layer.
- Melt butter in a large non-stick skillet over medium heat. Once melted, stir in brown sugar, corn syrup, and salt until smooth.
- Bring to a boil over medium heat, stirring occasionally. As soon as the caramel starts to gently boil, boil for 2 minutes, stirring constantly.
- Remove from the heat and stir in baking soda and vanilla.
- Immediately drizzle caramel over popcorn. Toss gently with a spatula until the popcorn is evenly coated.
- Bake at 200 degrees F for 45 minutes, stirring the popcorn every 15 minutes.

- Preheat oven to 250 degrees. Pour popcorn and kettle chips into an extra large mixing bowl and set aside.
- Melt butter in a 2-quart saucepan over medium heat. Stir in brown sugar and corn syrup and bring to a boil stirring constantly.
- Allow to boil 5 minutes without stirring (mine reached 252 degrees if you're using a thermometer) then immediately remove from heat and stir in vanilla and baking soda until well combined (it will foam up and double in volume).
- Immediately (and carefully, it's hot!) drizzle mixture over popcorn and toss to evenly coat.
- Spread onto a baking sheet lined with a silicone liner and bake in preheated oven 1 hour, removing from oven and tossing every 15 minutes. If using sprinkles immediately add sprinkles once the 1 hour is up. Cool at room temperature.
- Place chocolate chips in a small mixing bowl. Heat in microwave on 50% power in 30 second increments, stirring well between intervals, until melted and smooth.
- Transfer to a small resealable bag, seal bag and cut a tiny tip from the corner and drizzle chocolate evenly over popcorn.
- Allow chocolate to set at room temperature or in refrigerator, then break popcorn into pieces. Store in an airtight container at room temperature.

- Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
- In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
- Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

POTATO CHIPS
Steps:
- Preheat the olive oil over medium-high heat in a 4-quart cast iron Dutch oven. A deep-fry thermometer clipped to the Dutch oven should reach 300 degrees F.
- While the oil heats, line a large mixing bowl with paper towels.
- On a mandoline or with a sharp knife, cut 8 to 10 slices of the potato, widthwise, to about the thickness of a dime. Carefully add the slices 1 at a time to the hot oil. Using a spider, constantly move the slices in the hot oil for 3 to 4 minutes or until golden brown and crisp. Remove the chips with the spider, allowing some of the excess oil to drain off. Move the finished chips to the lined bowl and shake to remove additional oil. Adjust the heat as necessary to maintain 300 degrees F and continue slicing and frying the potatoes in small batches. When the final batch has finished frying, sprinkle the chips with kosher salt, to taste, and shake the bowl to evenly distribute the salt. Remove the paper towels and serve.
PUFFED CARAMEL CORN
Puffed corn can be found in the potato chip aisle of your grocery store. This is a great caramel corn without hulls or unpopped kernels. Warning: you need to make a double batch of this because it doesn't last long, at least not in my house. Very addicting. Love it!

- Preheat oven to 250 degrees F (120 degrees C).
- Combine corn puffs and peanuts in a large roasting pan.
- Bring butter, brown sugar, and corn syrup to a boil in a heavy 2-quart saucepan. Cook and stir for 2 minutes. Remove from heat; stir in baking soda until mixture foams up. Pour over corn-peanut mixture and toss well using rubber spatulas.
