Here's how to make the copycat version of Taco John's Potato Ole recipe-crispy tater tots with a Mexican flare!

Steps:
- Preheat oven to 425. In a small bowl whisk together seasoning salt, paprika, cumin and pepper. Lay potatoes on a large rimmed baking sheet. Bake for 15 minutes. Remove from oven. Sprinkle with seasoning. Return to oven and cook 10 minutes more until crispy. Remove from oven and sprinkle with more seasoning. Serve immediately with extra seasoning if desired.

POTATO OLè BRAVO CASSEROLE
I came up with this idea from a Taco place we just love to eat at. With the cost of living on the rise I wanted to have this delicious treat but didn't want to spend all that money, SO, I improvised and made just one attempt to making this small fast food meal into a now :Family Favorite". This dish tastes exactly like the potato Olè bravos from Taco Johns at nearly half the cost for one person at the fast food restaurant. I can guarantee your family will love this too!

Steps:
- Deep fry in shortening potato crisps until golden crispy brown. Remove place in container lined with paper towels and sprinkle lightly with seasoned salt. Place crisps in lightly greased Casserole dish and set aside.
- Cook ground beef thoroughly. Add in 2 packages Taco seasoning and mix well. Then add 1 large 31 ounce can refried beans and mix well. Let sit on low heat until you're ready.
- Spread meat and bean mixture coveringredients potato crisps. Cover with shredded cheese and sliced black olives.
- Bake in oven for approximately 10-15 minutes then remove from oven and let stand for 5 minutes.
- Add shredded lettuce, tomatoes, sour cream and guacamole and serve. (Add your own delicious toppings)
MASHED POTATOES OLé
Sassy potatoes can be made simply with the addition of salsa and a few other flavorful ingredients.

Steps:
- Heat oven to 425°F. In 4-quart saucepan, heat water, milk and butter to boiling. Stir in 2 pouches potatoes; beat with fork until smooth. Stir in 3/4 cup of the onions.
- Spread mixture in ungreased 2-quart baking dish. Sprinkle with cheese. Spread salsa over cheese. Top with olives and remaining onions.
- Bake uncovered 3 to 5 minutes or until onions are golden. Serve with sour cream and cilantro.

EASY BREAKFAST CASSEROLE OLE
I needed to make a brunch type casserole for a crowd of 8. I also did not want to have to get up to a mess so threw this recipe together to make ahead. Very simple to put together either that morning or the night before. I have done both ways now and am glad this comes out so good. Heat is up to you for taste.

Steps:
- In large bowl , beat eggs, milk, spices, salt and pepper til frothy. Add in chopped sausage, pepper and onion and fold.
- Cut potatoes into small cubes, put into greased 9 x 13 pan (grease with some butter).
- Pour egg mixture over top of potatoes.
- Dot with 4 -8 Tbsp butter (may use more here accouting for the 8 Tbsp).
- Pour 1/2 of salsa over top, reserving remainder for topping after cooked.
- Sprinkle cheese over top.
- Cover with foil and bake in oven, 350°F for 45 minutes. Check after 45 min every 5 minutes til edges are just browned. Eggs will fluff up.
- Cool a bit before serving.
- NOTES**.
- Oven temperatures vary so check accordingly.
- If making the night before, do not put salsa or cheese on until before putting in the oven.

- In medium skillet over medium-high heat, cook beef and chili powder until beef is browned, stirring to separate meat. Pour off fat.

- Preheat oven to 475°F
- Mix seasoning, sugar and spices together.
- Slice scrubbed, unpeeled potatoes into rounds.
- Place 1/2 of the potatoes into a plastic bag.
- Spray with olive oil.
- Sprinkle half of spice mix into bag.
- Close bag and shake until potatoes are coated.
- Repeat process with other half of potatoes and spices.
- Spray 2 baking sheets with olive oil.
- Spread potato rounds out on baking sheets into a single layer.
- Bake until crisp, 30-40 minutes.
