JILL'S BASIC POTATO TART
Steps:
- Preheat Oven: 350 degrees F.
- Line a 10 to 12-inch tart pan with your favorite pastry shell. Lightly brush or spread the Dijon mustard on the shell. Sprinkle 1/2 cup Swiss cheese over the mustard. Peel the potatoes and cut them into large chunks. Boil potatoes in lightly salted water until tender. Drain the potatoes and then transfer to a large mixing bowl. Mash the potatoes. In a large saute pan melt the butter with the oil. Dice onions and saute in butter/oil mixture. Add the onion to the mashed potatoes. Add 1 cup of ricotta cheese, eggs and the remaining 1 cup of grated Swiss cheese to the potato/onion mixture. Add salt and pepper. Spoon mixture into the pastry shell. Bake for 45 minutes or until lightly brown on top.
POTATO SAUSAGE TART
I made this twice and did a couple variations so far. I loved it that much I had to make it again with different ingredients. I skipped the pie shell, and I used some instant Idaho mashed potatoes because they were fast and easy. I put the potatoes on the bottom and topped with the sausage and the rest but skipped the melted butter on top. Phenomenal. A new breakfast favorite. Steps:
- Bake the tart shell at 450 degrees for 7 minutes. Set aside. Reduce the oven temperature to 350 degrees.
- Remove the casing from the sausage. Crumble the sausage into a skillet. Cook until cooked through and drain on paper towels.
- Combine the cottage cheese and eggs in a blender or food processor container. Process until blended. Pour into a large bowl. Beat in the potatoes, sour cream, oregano, salt, and pepper.
- Place the sausage in the tart shell. Spoon in the potato mixture over the sausage. Brush the top with butter. Sprinkle with the cheese.
- Bake for 50 to 60 minutes or until heated through.
- Just before serving, arrange the tomato halves cut side down down around the outer edge of the tart.
