This 30 Minute Dairy Free Potato Soup is so creamy and easy to make! You'll be surprised it's dairy free, gluten free, and Whole30 compliant!

2.5 lbs potatoes (russet, yellow, or gold potatoes work best, peeled and diced)
32 oz chicken stock or broth
1/2 white or yellow onion (sliced)
1 cup canned coconut milk (unsweetened)
1/4 tsp garlic powder
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp dried thyme or dried chives

Steps:

  • Add chicken stock, onion, and potatoes (peeled and diced into 1 inch cubes) to a soup pot. Bring to boiling and cook for approximately 5 - 8 minutes or until potatoes are easily pierced with a fork. Be careful to not overcook your potatoes or you'll end up decreasing the amount of chicken stock you have.
  • Once cooked, remove 1 cup of the diced potatoes from chicken stock. Set aside in a separate dish.
  • Blend the diced potatoes (excluding the 1 cup you set aside), onion, chicken stock, and 1 cup canned coconut milk until smooth.
  • Pour the blended soup back into your pot. Add the 1 cup diced potatoes you set aside earlier, salt, pepper, garlic powder, and dried thyme (or dried chives). Stir.
  • Ladle the finished soup into bowls and top with fresh chopped chives and crispy bacon.

12 oz. Bacon (chopped)
1 medium Onion (chopped)
4 cloves Garlic (chopped)
4 stalks Celery (chopped)
4 medium Carrots (chopped)
1 medium Red Pepper (chopped)
3 lbs. Gold Potatoes (chopped)
8 cups Chicken Broth
1 tbs Cornstarch
1 - 14 oz. can Coconut Milk
1/2 lb Frozen Corn
2 tbs Parsley (chopped)
Salt (to taste)
Pepper (to taste)

Steps:

  • Cut up bacon and cook in soup pot on the stove on medium until crisp.
  • Remove bacon to paper towels to drain.
  • Remove most of the fat. Leave about ¼ cup.
  • Add onions, garlic, carrots, celery and red pepper. Saute until onions translucent.
  • Add potatoes and chicken broth. Bring to a boil.
  • Cook until potatoes soft and stickable with a fork. Approx. 15 minutes.
  • Remove ⅓ - ½ of the soup and blend.
  • Add back to soup.
  • Mix cornstarch and 1/3 of the coconut milk. Add to soup.
  • Add rest of coconut milk, corn, bacon, parsley, salt and pepper.
  • Heat until thoroughly warm. Serve.

1/2 pound bacon strips, chopped
1/4 cup chopped onion
1-1/2 pounds Yukon Gold potatoes (about 5 medium), peeled and cubed
1 can (14-3/4 ounces) cream-style corn
1 can (12 ounces) evaporated milk
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1-1/2 teaspoons in pan. Add onion to drippings; cook and stir over medium-high heat until tender., Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil over high heat. Reduce heat to medium; cook, uncovered, 10-15 minutes or until tender. Drain, reserving 1 cup potato water., Add corn, milk, salt, pepper, potatoes and reserved potato water to saucepan; heat through. Stir in bacon and onion.
