- In a large nonstick skillet, cook the turkey, celery, onions and pepper over medium heat until meat is no longer pink; drain., Stir in the ketchup, tomato sauce, flour, sugar, vinegar and mustard. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until heated through. Spoon 2/3 cup turkey mixture onto each bun., Or, cool turkey mixture and freeze in freezer containers for up to 3 months., To use frozen turkey mixture: Thaw in the refrigerator; place in a saucepan and heat through. This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

- Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.

CROCK POT SLOPPY JOES FOR A CROWD
I made these for a potluck at work and they were a definite hit! One thing I didn't put in the recipe: instead of using 1 bell pepper, I usually use 1/2 cup of tri-pepper mix. It's just red, yellow and green bell peppers, already diced. Publix sells it in their produce section. It's a real time saver!

SLOPPY JOES
This is my adaptation of my mom's yummy sloppy joe recipe. I like to toast the buns, as they hold together a little better when they are toasty. I usually make a double batch, which gives us enough for dinner with leftovers for lunch. Times are estimated. Tip: my DH loves to add a slice of cheddar cheese before placing the bun top on. They are pretty tasty that way!

- Add onions and garlic and cook until onions are transparent.
