CHEF JOHN'S POURABLE PIZZA

Chef John's Pourable Pizza image

Besides being kind of fun to make, this pourable pizza method doesn't require kneading or rolling/stretching/spinning. So it's an easy way to achieve a really thin-crust pizza. Plus you get that crispy, near-charred bottom you usually get only from a pizza oven.

Provided by Chef John

Categories     Main Dish Recipes     Pizza Recipes

Time 1h40m

Yield 4

Number Of Ingredients 8

3 cups all-purpose flour
1 (.25 ounce) package active dry yeast (2 1/4 teaspoons)
1 teaspoon kosher salt
1 ½ teaspoons honey
1 tablespoon olive oil, plus more to oil pan
2 cups warm water (105 degrees F/41 degrees C)
Pizza sauce
Favorite pizza toppings

Steps:

  • Place flour in mixing bowl with dry yeast, salt, honey, olive oil, and warm water. Whisk together for about 5 minutes. This will be a very thin batter-like dough. Cover and let rise 1 1/2 hours. Dough should be bubbly. Stir with a ladle to eliminate the bubbles.
  • Generously oil a cast-iron skillet with olive oil off heat. Pour batter in a squeeze bottle or zip-top bag with a bottom corner snipped. Slowly pour the batter into the skillet starting from the center of the pan and working in circles toward the edge. Try to avoid mixing batter with the oil. If small bubbles of oil appear on the surface, use the tip of a paring knife to gently stir them into the dough.
  • Place pan over medium-high heat. Wait for the dough to form bubbles over the entire top surface and the crust starts to dry out a bit. Flip over and continue cooking one side and the next. The bubbly side should be dry and achieve a golden brown color; the bottom should be well browned, about 4 to 5 minutes total per side. Doneness times will depend on how thickly the batter was poured. Remove from heat.
  • Spread with pizza sauce and top with your favorite pizza toppings: mozzarella cheese, grated Parmigiano-Reggiano cheese, pepperoni, etc. Try to avoid topping too heavily.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place pizza under broiler until toppings are cooked, 3 to 4 minutes.

SCHOOL CAFETERIA POURABLE PIZZA CRUST

School Cafeteria Pourable Pizza Crust image

Pourable Pizza Crust from a quantity 1988 USDA school cafeteria recipe. Made in a half-sheet pan (13" x 18" x 1") . The recipe makes a nice, soft bread like crust. This is the pizza crust that's been served at schools for the past 25 years. This recipe would be really good for something like a kids birthday party. The dough has the consestency of very thick pancake batter. You pour it into a sheet pan, with the help of a rubber spatula. I like it because it saves all the rolling and fussing with normal pizza dough.

BUFFALO CHICKEN PIZZA RECIPE BY TASTY

Buffalo Chicken Pizza Recipe by Tasty image

Here's what you need: pizza dough, unsalted butter, chicken breasts, salt and pepper, unsalted butter, Frank's Red Hot® Sauce, white vinegar, worcestershire sauce, red cayenne pepper, garlic powder, all purpose flour, mozzarella cheese, blue cheese crumbles, ranch dressing

Provided by Nicholas Fasano

Categories     Lunch

Time 30m

Yield 1 pizza

Number Of Ingredients 14

1 lb pizza dough
2 tablespoons unsalted butter
2 chicken breasts, cut into bite-sized pieces
salt and pepper
3 tablespoons unsalted butter
½ cup Frank's Red Hot® Sauce
2 tablespoons white vinegar
1 teaspoon worcestershire sauce
½ teaspoon red cayenne pepper
1 teaspoon garlic powder
1 tablespoon all purpose flour
½ cup mozzarella cheese, shredded
2 oz blue cheese crumbles
ranch dressing, for serving

Steps:

  • Rub raw chicken with salt and pepper - set aside.
  • Melt 2 tbsp butter in a saute pan over medium-high heat. Add chicken and cook until the chicken is almost cooked through. It will finish cooking in the oven. Then, remove chicken from the pan and place in a bowl.
  • In the same pan, melt 3 tbsp of butter over medium heat. Whisk in Frank's pepper sauce, white wine vinegar, and Worcestershire sauce. Add red cayenne pepper, garlic powder, salt, and pepper. Bring the mixture to a slow boil and cook for 5 minutes.
  • Pour the buffalo sauce over the cooked chicken and mix until the chicken is covered. If the sauce is too thin, add in 1 tbsp all-purpose flour and mix thoroughly.
  • Preheat the oven to 500°F with a baking stone or a heavy baking sheet inside the oven.
  • Stretch the pizza dough into a 14" thin disk. Place the dough on a lightly floured pizza peel or an upside-down baking sheet.
  • Working quickly so that the dough does not adhere to the peel, top the dough with a thin layer of mozzarella cheese, then add the buffalo chicken and blue cheese crumbles, and finally top with the remaining mozzarella cheese. In addition, you can drizzle some hot sauce on the top.
  • Transfer the pizza to the baking stone (or baking sheet) and cook until the crust is golden brown, about 8-10 minutes. Remove from the oven and top with blue cheese or ranch dressing.
  • Enjoy!
