POWDERED SUGAR DONUT CAKE



Powdered Sugar Donut Cake image

Heavy on the butter and topped with powdered sugar, this cake has all the flavors of your favorite cake donut in a convenient square shape.

3/4 cup [150 g] granulated sugar
2 large eggs
1 cup [220 g] sour cream
1/2 cup [113 g or 1 stick] unsalted butter (melted)
1 1/4 teaspoons freshly grated nutmeg
1 teaspoon pure vanilla extract
3/4 teaspoon kosher salt
1 1/2 cups [190 g] all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 tablespoon unsalted butter (melted)
3 tablespoons confectioners' sugar

Steps:

  • Position an oven rack to the center of your oven and preheat the oven to 35oF [180C]. Butter or coat an 8-inch square baking pan with nonstick spray. Line the pan with a strip of parchment paper that hangs over two of the edges.
  • In a large bowl, whisk the granulated sugar and eggs until pale and foamy, about 1 minute. Add the sour cream, butter, nutmeg, vanilla, and salt. Whisk until smooth and emulsified.
  • Add the flour, baking powder, and baking soda. Whisk until well-combined and smooth.
  • Pour the batter into the pan and bake the cake until puffed and golden, and a skewer inserted into the center comes out clean, 25 to 35 minutes. Set the pan on a rack to cool for about 15 minutes. Then use the parchment paper to lift the cake out of the pan and set it on to the rack to cool almost completely.
  • While the cake is just warm to the touch, brush the top with the melted butter and dust with the confectioners' sugar. you should have a nice thick layer of confectioners' sugar - more than you think might be necessary. (Store the cake, covered, at room temperature for up to three days. The cake will absorb the sugar on top, so it might need a fresh dusting of confectioners' sugar after the second day.)

2 quarts canola oil
2 cups all-purpose flour plus additional for rolling
1 1/2 cups cake flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons kosher salt
1/4 teaspoon nutmeg
1 envelope (1/4 ounce) active dry yeast
1/3 cup full-fat sour cream
1 large egg plus 3 egg yolks, lightly beaten
3/4 cup buttermilk, room temperature
2 teaspoons vanilla
1 to 1 1/2 cups confectioners' sugar

Steps:

  • Get ready: Pour the oil into a large saucepan (5 to 6 quart capacity). Prepare a baking sheet fitted with kitchen towels and a slotted spoon to remove and place the doughnuts as they emerge from the hot oil.
  • Mix the dry ingredients: in a large bowl, sift together the all-purpose flour, cake flour, sugar, baking powder, baking soda, salt and nutmeg. With your hand, make a hole in the center of the dry ingredients and pour the yeast in the center.
  • Make the dough: Place the sour cream in a heatproof bowl and warm gently over a pot of simmering water, like a makeshift double boiler, 2-3 minutes. When warmed, remove the bowl from the heat. Pour the sour cream directly over the yeast and allow the sour cream and yeast to sit 2-3 minutes. Gently mix with a rubber spatula then add your eggs, buttermilk, and vanilla. Gently stir until combined.
  • Cut the doughnuts: Sift a generous layer of flour onto 2 baking sheets. Flour a clean flat surface and turn the dough out. It will be sticky. Sift more flour on top of the dough, flour your hands and pat the dough until about 3/4 inch thick. Dip the cutter in flour so it won't stick. Cut a round and gently transfer to the floured baking sheets. Flour the cutter between each doughnut. Cut the rounds close together to avoid making too many scraps. Gather the scraps and roll into a ball.
  • Finish: Dip the smaller cutter in flour and cut a round out of the center of each doughnut to make the "hole". Save the small dough holes. Let the doughnuts rest 8-10 minutes.
  • Heat the oil: In a large, heavy-bottomed pot, heat the canola oil over medium low heat. Use a thermometer to monitor the temperature until the oil reaches 350F.
  • Fry and eat: Use a slotted spoon to submerge 5 doughnuts in a single layer in the hot oil. Fry until the bottoms are browned, 3-4 minutes. Use a slotted spoon to carefully turn each doughnut on their second side and fry an additional 3-4 minutes until browned. Remove and drain on the sheet fitted with kitchen towels. Repeat with the remaining doughnuts. Take care to allow the oil to reheat between batches. Flatten and cut the scraps for a few additional doughnuts. Fry the doughnuts holes as well. Cool for at least 15 minutes then toss in the powdered sugar.

2 tablespoons shortening
2 eggs
Rainbow Doughnut Icing

Steps:

  • In deep fryer or 3-quart saucepan, heat 3 to 4 inches oil to 375°F.
  • In large bowl, beat 1 1/2 cups of the flour and the remaining ingredients except Rainbow Doughnut Icing with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in remaining flour.
  • On generously floured surface, roll dough lightly to coat. Gently roll to 3/8-inch thickness. Cut dough with floured 2 1/2-inch doughnut cutter.
  • Fry doughnuts in oil, 2 to 3 at a time, turning as they rise to the surface. Fry 2 to 3 minutes or until golden brown on both sides. Remove from oil with slotted spoon; drain on paper towels. Cool slightly and frost with doughnut icing.

This powdered sugar doughnut cake is an easy little snack cake that takes its cue from everybody's favorite childhood doughnut. The cakey texture, the perfect nutmeg flavor, and the thick layer of powdered sugar ~ it's all there, and it's delish!

3/4 cup granulated sugar
2 large eggs
1 cup sour cream
1/2 cup butter, melted
1 tsp vanilla extract
1 1/2 tsp freshly grated nutmeg
3/4 tsp salt
1 1/2 tsp baking powder
1/4 tsp baking soda
1 1/2 cups all purpose flour
1 Tbsp butter, melted
3 Tbsp confectioner's sugar

Steps:

  • Preheat oven to 350F Spray an 8x8 baking pan and line with a sheet of parchment paper with long ends. This will allow you to remove the cake for neater slicing. Note: you can use a 9x9 pan but check the cake at 20 minutes.
  • In a mixing bowl whisk or beat the sugar and eggs until pale and foamy.
  • Whisk in the sour cream, butter, vanilla, and nutmeg. Beat until everything is well incorporated and the mixture is smooth.
  • Fold in the salt, baking powder, and baking soda until evenly incorporated, then fold in the flour, mixing just until no dry flour remains. Don't over mix at this point.
  • Turn the batter into your prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out without wet batter. Moist crumbs are fine, and you want to be sure not to over bake this cake or it will be dry. Note: check the cake on the early end, especially if your oven runs hot.
  • Let the cake cool for 15 minutes, then lift it out using the parchment paper, to a cooling rack to cool further.
  • When the cake is still a bit warm to the touch, brush the top with the melted butter and immediately sift the powdered sugar over the surface. You will want a nice thick layer of sugar, so I sift several layers until I'm satisfied.
  • Store the cake on the counter, covered with foil.
