A pressure canner
Rubber gloves (if handling hot peppers)
Hot or sweet peppers (one pound of peppers will yield approximately one pint)
Clean canning jars & lids
Salt (optional)

Steps:

  • FOR HOT PEPPERS:
  • **WARNING** If you are handling hot or even mild chili peppers, wear rubber gloves! I've burned my hands even with the milder peppers like poblanos. It hurts and is easily preventable with gloves.
  • Select only fresh, firm peppers for canning, as limp ones will yield less than desirable results. Wash the peppers, then place in a single layer on a baking sheet and broil for 5-10 minutes to blister the skins. Flip over once to ensure they char on both sides. (It's important to blister them as evenly as you can, otherwise it's very difficult to get the skins to come off.)
  • Remove the charred peppers and place into a Ziploc bag and seal tightly. Allow them to sit for 10 minutes, then remove the peppers from the bag and rub off as much of the peel/skin as possible.
  • Cut the tops off and scrape out the seeds. Cut the peeled peppers in half or quarters, or you may can smaller ones whole.
  • Pack pepper pieces into clean pint or half pint jars. Add 1/2 teaspoon of salt to the pint jars or 1/4 teaspoon of salt to the half-pint jars. Fill with boiling water, leaving 1″ headspace.
  • Affix lids and rings, then process in a pressure canner for 35 minutes. Use 10 pounds of pressure if you are at 0-1000 feet altitude, and 15 pounds of pressure if you are at 1000-10,000 feet altitude.
  • FOR SWEET/BELL PEPPERS:
  • The skins of bell peppers or sweet peppers are more tender, so they generally do not need to be blistered and peeled (thank goodness).
  • Simple quarter or roughly chop bell peppers and cover them with water in a pot.
  • Boil for 3 minutes, then transfer to pint or half-pint jars. Add 1/4 teaspoon of salt to each jar (if desired), then ladle more boiling water to fill the jar, leaving 1″ of headspace.
  • Affix lids and rings, then process in a pressure canner for 35 minutes. Use 10 pounds of pressure if you are at 0-1000 feet altitude, and 15 pounds of pressure if you are at 1000-10,000 feet altitude.
  • Use your canned peppers in soups, stews, and skillet meals. They will be good for a year in storage, and are still edible after that, although their quality will start to degrade over time.

Make your own hot pepper slices to top pizza, burgers or sandwiches. To increase the heat of your peppers, do not remove the inner membranes from the peppers.

6 cups sliced (any variety)
3 1/2 cups vinegar
2 cups water
2 Tbsp pickling or sea salt
2 Tbsp sugar
2 cloves garlic (quartered)

Steps:

  • Wash and stem hot peppers.
  • Remove seeds and inner membranes if you'd like to take some of the heat out of the peppers, otherwise leave them in.
  • Slice peppers into even 1/4 inch thick slices. Wear gloves to keep your fingers from stinging.
  • Fill large pot or canner with water so that jars are covered by 1" of water.
  • Check jars for cracks, wash with warm soapy water, rinse well and place in canner.
  • Heat jars in canner (no need to sterilize).
  • Mix vinegar, water, salt and sugar in a non-reactive saucepan.
  • Boil for 1 minute.
  • Place 1/4 clove of garlic in each jar and pack with pepper rings.
  • Pour hot vinegar brine over peppers.
  • Remove air bubbles and push peppers underneath pickling liquid as much as possible, leaving a 1/2 inch headspace.
  • Wipe rim with clean cloth, seal with hot sealing lid, tighten screw band on top finger tight and process in hot water bath for 10 minutes.

1 lb sweet or hot banana peppers
3 cups cider vinegar, (5%)
2 cups water
3 tsp. pickling salt
3 cloves garlic
3 Tbsp. mustard seed, optional
1 1/2 Tbsp. celery seed , optional

Steps:

  • Sterilize canning jars and keep warm. Prepare hot water bath.
  • Using gloves, wash and cut off the stems of the peppers. Slice into 1/8-1/4 inch slices.
  • Place vinegar, water, and pickling salt in a medium sauce pan and heat until boiling.
  • Fill each jar with 1/2 clove of garlic, 1 1/2 tsp. mustard seed (optional) and 3/4 tsp. celery seed (optional). Then add the pepper slices, making sure to leave 1/2" of headspace at the top of the jar.
  • Ladle the hot liquid into the jars filling to cover the peppers, maintaining the 1/2" of headspace. Use a plastic utensil to remove any air bubbles, adding more liquid as needed.
  • Add lid and finger tighten the ring. Process in hot water bath that is already close to boiling for 10 minutes for half pints or pint jars. * Adjust for altitude as necessary.
  • Remove and let cool for 24 hours. Check to make sure the jar is sealed prior to storing. If jars did not seal (the lid bounces up and down), place in refrigerator and use within 2 weeks.

Canning plain peppers at home allows you to preserve peppers right on the pantry shelf for quick weeknight meals.

salt (optional, 1/2 tsp per pint)

Steps:

  • Wash peppers before beginning.
  • Roast peppers on all sides to blister the skin, using either a grill, stovetop burner or oven broiler for 8-10 minutes. A grill outdoors is my preferred method.
  • After roasting, place peppers on a tray under a damp towel for about 15 minutes. This will help the skins slip.
  • Remove the towel and slip the skins of the peppers. Be sure to use gloves for hot peppers. Working under running water in the sink helps the skins slip easier.
  • Use a sharp paring knife to cut around the stem of each pepper and remove the stem, seed and core of each pepper. For hot peppers, simply cut off the top of each pepper and then remove the seeds. (Again, gloves are important here for hot peppers!)
  • Pack the peppers into prepared canning jars, either as whole peppers, slices or dices. For whole peppers, smash the pepper flat before sliding it into the jar (3-4 whole peppers per pint). Be sure to leave 1 inch headspace.
  • Prepare a pressure canner according to the manufacturers instructions. This usually means adding 2-3 inches of water to the bottom of the canner and bringing it up to a simmer with the bottom trivet in place.
  • Bring a kettle of water to a boil on the stove and fill jars with boiling water, maintaining 1 inch headspace. De-bubble jars, adjust headspace, wipe rims and seal with 2 part canning lids to finger tight. Load into a preheated pressure canner.
  • Place the lid on the pressure canner, but do not start bringing it up to pressure. Allow steam to vent for 10 minutes before adding the canning weight and bringing the canner up to pressure (see notes for pressure).
  • Once at pressure, process jars for 35 minutes. Canning in pints or half pints is acceptable, but don't use quarts or larger jars. Be sure to maintain pressure for the entire process time, and if the canner drops below pressure, re-start the timer.
  • Once the jars have processed at pressure for 35 minutes, turn off the heat and allow the canner to cool completely before removing the jars. (Don't ever attempt to rapid cool a pressure canner.)
  • When cool, remove the jars and check seals. Store any unsealed jars in the refrigerator for immediate use. Properly processed and sealed jars should maintain quality on the pantry shelf for 12-18 months.

Steps:

  • Heat the water, vinegar, sugar, and turmeric till boiling. In the meantime sterilize jars and add 1/2 garlic clove to each pint. Pack jars with pepper rings. Top with salt and olive oil. Then add vinegar mixture to 1/4th inch of top of jar. Make sure to get rid of air bubbles. Wipe rim of jar clean before adding lid and ring. Put in water bath for 10 minutes.

How to Make Hot Pepper Rings image

Hot pepper rings are a popular addition to foods from sandwiches to pizza. These pepper rings are sliced up and canned in a pickling solution, giving them a distinct vinegar flavor that many people enjoy. If you want to store hot peppers from your garden or just want to avoid the chemical ingredients in manufactured hot pepper rings, you can make your own hot pepper rings at home. You will need 8 pint canning jars.

2 1/2-3 lbs jalapenos, banana pepper or 2 1/2-3 lbs other preferred pepper
7 cups white vinegar
7 cups cold water
4 teaspoons salt

Steps:

  • Wash jars, lid tops and rings with dishwashing soap and hot water. Rinse and let them air dry while you prepare the peppers.
  • Step 2.
  • Put on rubber gloves and rinse peppers with warm water. Cut off the top stems and discard.
  • Step 3.
  • Slice horizontally across the peppers to make rings of your preferred thickness. Scrape out the seeds with your knife if you don't want peppers that are very hot.
  • Step 4.
  • Place the large pot on the stove. Pour in 7 cups white vinegar and 7 cups cold water, and stir to combine. Turn heat on "High" and cook until the mixture begins to boil, then turn off the heat.
  • Step 5.
  • Put another large pot on the stove as the vinegar and water are boiling. Lay your pint jars, lid tops and rings in the pot, cover them with cold water and heat on "High" until boiling to disinfect them.
  • Step 6.
  • Reduce heat to "Low" after the jars have been boiled. Put on oven mitts and remove the jars from the pot.
  • Step 7.
  • Divide the peppers evenly among the 8 1-pint jars, along with 1/2 teaspoon of salt per jar. Cover the peppers with the hot vinegar and water, distributing evenly.
  • Step 8.
  • Place lid tops and rings on the openings of the jars, then press rings down to firmly secure. Heat the pot of water in which the jars were boiled, refilling with additional water if needed to cover the jars.
  • Step 9.
  • Wait until the water begins to boil, then gently place the jars in the pot, letting them boil for 10 minutes so the lid tops and rings on the jar tightly seal. Turn off the heat, remove the jars of peppers with oven mitts, and store them in a cool, dry place.

2 1/2-3 lbs banana peppers (this is an estimate)
4 teaspoons salt (you will use 1/2 tsp. per jar)
4 teaspoons alum
7 cups water (estimate)

Steps:

  • 1.Prepare jars. I chose to just wash my jars in hot soapy water. I turned my oven on to 175 to put the jars in to keep them warm after washing.
  • 2.Wash whole banana peppers to remove any dirt. Remove tops from peppers and cut peppers into rings. I cut my rings sort of thick, but you can cut them as thick or thin as you want. Also, de-seed if you choose to de-seed your banana peppers.
  • 3.In a large pot, combine 7 cups of water and 7 cups of white vinegar. Heat on high until boiling.
  • 4.At the same time, in a small pot, place jar lids and boil.
  • 5.Once the jars and lids are boiling, turn on low heat.
  • 6.Add 1 clove of garlic to empty jar, then pack banana pepper rings tightly into the jar. Add 1/2 teaspoons salt and 1/2 teaspoons alum to the peppers. Pour hot vinegar-water mixture over the peppers. Immediately put on lid and ring to seal.
  • 7.Repeat with remaining peppers and jars.
  • Once the jars start to cool, they will seal.
