- For cocktail sauce, in a small bowl, combine the ketchup, 2 teaspoons Creole seasoning, onion, green pepper, celery and pepper sauce. In another bowl, combine cream cheese and remaining Creole seasoning., Spread or pipe cream cheese mixture onto cucumber slices. Top each with a shrimp and cocktail sauce. Sprinkle with parsley.

Steps:
- In a large bowl, mix together olive oil, lime juice, garlic, cilantro, and dill.
- Add shrimp and toss together until shrimp is coated with the marinade. Refrigerate for 5.
- Meanwhile, lay out cucumber slices onto a serving tray in a single layer.
- Place cream cheese into a plastic Ziplock bag with one corner cut. You can also use a pastry bag with frosting tip if you want to create a pretty pattern.
- Gently squeeze out about a tablespoon full of the cream cheese onto each cucumber slice.
- Top with one medium pre-marinated shrimp.

- Toast a tablespoon of sesame seeds in a dry frying pan until golden colour and aromatic
- Very finely chop about 3cm of a spring onion and combine with the mayonnaise, a small squirt of wasabe paste and a teaspoon of sesame seeds.
- Spread a thin layer of mayonnaise on each toast square
- Layer on a finely sliced piece of cucumber
- Place a prawn on each canape, and sprinkle with a few sesame seeds.
- Roll up quite tightly (but without damaging) a single leaf of coriander, place the stem end in the centre of the prawn and allow to uravel so that it remains standing upright.
- Arrange several canapes on a plate and serve.

Steps:
- Mix the prawns, lemon zest and juice, poppy seeds and oil in a bowl, and leave to marinate for 10-20 mins while you prepare the cucumber.
- Peel 20 strips from the cucumber, running the peeler down the full length. Stop and turn the cucumber when the peelings get a bit too seedy.
- Thread each cucumber strip onto a small wooden skewer, bending back and forth to create ruffles. Add a prawn to each and put in the fridge to chill until the party.

- Slice the cucumber into ten discs, each about 1/4in thick.
- Mix together the cream cheese, chili sauce, scallion, lemon juice and two-thirds of the peanuts. Spoon the mixture on top of the cucumber discs (to make them look neater, scoop the mixture between two teaspoons to give a nice shape).
- Sit a shrimp on top of each cucumber disc. Sprinkle over the remaining chopped peanuts and arrange on a serving plate.
